%3C/p%3E%3Cp%3EI%20had%20to%20use%20up%20my%20last%20eggplant,%20which%20was%20really%20starting%20to%20get%20oldish,%20and%20the%20last%202%20big%20portobellos%20I%20had.%20%20So%20I%20decided%20to%20make%20some%20sort%20of%20vegan%20lasagna,%20even%20though%20I%20had%20no%20%22cheese%22%20filling.%20%20I%20had%20some%20whole%20wheat%20lasagna%20noodles%20I%20bought%20a%20couple%20of%20weeks%20ago.%3C/p%3E%3Cp%3ETanya's%20Vegan%20Lasagna:%3C/p%3E%3Cp%3E(same%20ingredients%20as%20my%20Eggplant%20Parmesanless%20except%20I%20left%20out%20squash%20and%20basil)%3C/p%3E%3Cp%3Eplus%202%20large%20portobello%20caps,%20sliced%20thinly%3C/p%3E%3Cp%3Eraw%20kale(however%20much%20you%20want)%3C/p%3E%3Cp%3EPrepare%20the%20eggplant%20exactly%20as%20on%20the%20Eggplant%20Parmesanless,%20broiled%20and%20all,%20and%20set%20aside.%20%20Cook%20the%20lasagna%20noodles%20as%20the%20package%20directs.%20%20When%20cooked,%20I%20like%20to%20lay%20them%20out%20on%20kitchen%20towels%20to%20dry,%20so%20they%20don't%20stick%20together.%20%20Prepare%20your%20baking%20pan%20(9x13)%20with%20just%20a%20slight%20spray%20of%20oil.%20%20Make%20the%20same%20sauce%20as%20in%20the%20Eggplant%20Parmesanless%20and%20spread%20some%20onto%20the%20bottom%20of%20the%20pan.%20%20Layer%201/3%20of%20the%20noodles%20%20onto%20the%20sauce.%20%20Then%20layer%201/2%20the%20eggplant%20on%20top%20of%20the%20noodles,%20followed%20by%201/2%20the%20mushrooms,%20kale,%20and%20green%20peppers%20(I%20used%202%20small%20green%20peppers%20total).%20%20Add%20a%20layer%20of%20noodles,%20with%20some%20sauce%20on%20top%20of%20it.%20%20Sprinkle%20the%20nutritional%20yeast%20on%20top%20of%20the%20sauce%20and%20then%20add%20the%20other%20half%20of%20the%20vegetables.%20%20Follow%20with%20the%20last%20layer%20of%20noodles%20and%20sauce%20on%20top.%20%20Then,%20top%20with%20the%20breadcrumb%20mixture%20from%20the%20Eggplant%20Parmesanless%20(you%20can%20add%20a%20little%20more%20nutritional%20yeast%20to%20the%20breadcrumb%20mixture%20if%20you%20want).%20%20Bake%20at%20350%20for%20around%2030%20minutes%20if%20you%20like%20your%20peppers%20a%20little%20crunchy.....maybe%20a%20bit%20longer%20if%20you%20want%20softer%20peppers.%3C/p%3E%3Cp%3EIt%20made%20about%209%20servings,%20which%20were%20not%20huge.%20%20My%20husband%20and%20I%20each%20ate%201%201/2%20servings%20for%20lunch.%20I%20froze%204%20servings%20and%20put%202%20in%20the%20fridge%20for%20later.%20%20I%20think%20this%20is%20a%20good%20recipe%20for%20the%20McDougall%20plan.%20%20There's%20no%20oil%20and%20barely%20any%20fat%20and%20it's%20vegan!%3C/p%3E%3Cp%3EOk,%20I'm%20off%20to%20eat%20some%20of%20my%20brown%20rice%20that's%20waiting%20for%20me%20in%20my%20rice%20cooker!%20%20Winds%20are%20at%20about%2030%20mph%20right%20now...%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E){kind=link}
