Indulgence is a mean thing and whenever am sad or sick, I tend to gorge of these goodies. It is not good for the body, I know but it does help to liven the moment a bit and pep me up!
I am huge fan of tara root and growing up, it was made pretty frequently with a splash of tamarind. Today's recipe is another version where tararoot is boiled as usual, cut into slices and deep fried to give it a crunchy texture. Then they are tossed in few spices for a flavor kick. These taste so good that I ate half of it like a snack before it even reached the dinner table. Serve with hot rice and don't forget to add ghee or butter. With this recipe, you will view this vegetable in a whole new light and am sure will love it as much I do. Enjoy!
Tara Root | Arbi..deep fried arbi until light golden brown...Sukhi Arbi Fry | Indian Spiced Tara Root Fry
Serves 2
Make Time: 20 mins
Ingredients:
- about 6 to 8 medium sized Arbi (Taro root)
- salt to taste
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala
- 1/4 tsp turmeric
- 1/4 tsp amchoor powder
- oil for deep frying
Preparation:
1. Pressure cook tara root along with skins for 2 to 3 whistles. Peel arbi & cut into halves. Heat oil and deep fry them until light golden brown. Drain them on paper towels to remove excess oil.
2. Sprinkle salt, turmeric, red chilli powder, garam masala and amchoor powder over the deep fried arbi while they are slightly hot. Toss until they are coated evenly. Serve as side dish with rice. Optionally you can also add garlic, coriander leaves or curry leaves for additional flavor.
