.%3C/p%3E%3Cp%3EIf%20you%20are%20a%20nonvegetarian%20like%20me,%20you'll%20understand%20perfectly%20what%20I%20mean%20when%20I%20say%20it's%20difficult%20for%20people%20like%20us%20to%20follow%20a%20vegetarian%20diet%20and%20sometimes%20the%20only%20dish%20that%20makes%20the%20cooking%20and%20eating%20worth%20it%20is%20a%20pulao%20or%20biryani!%20This%20recipe%20has%20been%20adapted%20from%20the%20book%20that%20was%20a%20gift%20from%20my%20dad%20and%20which%20has%20now%20become%20my%20Go-To%20book%20for%20vegetarian%20recipes-India's%20Vegetarian%20Cooking%20by%20Monisha%20Bharadwaj.%20As%20is%20my%20habit,%20I%20don't%20usually%20follow%20the%20measurements%20to%20a%20T%20and%20in%20this%20case,%20had%20modified%20some%20of%20the%20steps%20to%20suit%20my%20time%20and%20pace%20and%20changed%20some%20of%20the%20ingredients%20to%20suit%20my%20taste.%20Do%20the%20same!%3C/p%3E%3Cp%3EWe%20had%20some%20friends%20over%20for%20lunch%20when%20I%20made%20this%20and%20everyone%20was%20of%20the%20opinion%20that%20this%20was%20a%20very%20flavorsome,%20delicious%20dish-and%20it%20wasn't%20difficult%20nor%20did%20it%20take%20too%20much%20time%20to%20make%20either%20(maximum%2060%20minutes,%20including%20chopping,%20washing,%20frying,%20and%20baking).%20As%20everybody%20was%20impatient%20and%20just%20couldn't%20wait%20to%20start%20lunch,%20I%20really%20didn't%20have%20enough%20time%20to%20take%20a%20good%20picture-so%20this%20photo%20does%20not%20do%20justice%20to%20the%20taste%20or%20aroma%20of%20this%20dish...Don't%20let%20the%20photo%20put%20you%20off%20from%20trying%20the%20recipe!%3C/p%3E%3Cp%3EIngredients%20to%20serve%206%3C/p%3E%3Cp%3EFor%20the%20bouquet%20garni%20(called%20a%20%22potli%22%20in%20Hindi,%20it%20is%20nothing%20but%20spices%20tied%20up%20in%20a%20muslin%20cloth%20and%20submerged%20in%20water%20to%20make%20it%20flavorful.%20This%20way,%20you%20don't%20have%20all%20the%20spices%20floating%20around%20in%20the%20final%20dish!)%3C/p%3E%3Cp%3EFirst%20off,%20in%20a%20saucepan,%20boil%20the%206%20cups%20of%20water%20with%20the%20bouquet%20garni%20inside%20it.%20When%20it%20comes%20to%20the%20boil,%20turn%20off%20the%20heat%20and%20cover%20and%20keep%20aside.%20This%20will%20allow%20the%20spices%20time%20to%20get%20infused%20into%20the%20water.%3C/p%3E%3Cp%3EIn%20a%20skillet,%20heat%201%20tablespoon%20ghee%20and%20fry%20the%20onions%20until%20they%20turn%20golden%20brown.%3C/p%3E%3Cp%3EAdd%20the%20ginger-garlic%20paste%20now%20and%20stir%20for%201%20to%202%20minutes.%3C/p%3E%3Cp%3EGrind%20this%20mixture%20in%20your%20blender%20till%20it%20becomes%20a%20smooth%20paste.%3C/p%3E%3Cp%3EIn%20the%20same%20skillet,%20heat%201%20tablespoon%20ghee%20and%20transfer%20the%20onion%20paste%20into%20it%20and%20fry%20over%20high%20heat%20for%202%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20tomato%20puree,%20turmeric%20powder,%20the%20garam%20masala/biriyani%20masala%20powders,%20and%20salt.%20Fry%20for%20another%202%20minutes.%3C/p%3E%3Cp%3EWash%20and%20drain%20the%20vegetables%20and%20add%20to%20the%20pan.%3C/p%3E%3Cp%3EAdd%20the%20paneer%20cubes%20also%20and%20fry%20everything%20well%20to%20combine%20with%20the%20spice%20powders.%20Cover%20and%20simmer%20for%20a%20few%20minutes%20until%20the%20ghee%20separates%20from%20the%20mixture%20(you%20will%20see%20the%20ghee/oil%20spreading%20out%20to%20the%20periphery).%20Remove%20from%20heat%20at%20this%20stage.%3C/p%3E%3Cp%3ENow%20onto%20the%20rice:%20heat%20the%20one%20teaspoon%20ghee%20in%20a%20separate%20pan%20and%20fry%20the%20rice%20over%20high%20heat.%20When%20it%20becomes%20shiny%20and%20the%20rice%20grains%20start%20popping,%20pour%20in%20the%20boiled%20aromatic%20water%20(remove%20the%20bouquet%20garni/potli).%20Add%20salt%20to%20taste%20and%20when%20it%20comes%20to%20the%20boil,%20simmer%20covered%20until%20all%20the%20water%20evaporates.%3C/p%3E%3Cp%3ETo%20assemble:%3C/p%3E%3Cp%3ENow%20take%20a%20bake-n-serve%20dish,%20layer%20the%20rice%20first,%20top%20with%20the%20vegetable%20mixture,%20then%20sprinkle%20the%20coriander%20and%20mint%20leaves%20on%20top,%20followed%20by%20another%20layer%20of%20rice.%20Garnish%20with%20the%20fried%20onions,%20raisins%20and%20cashewnuts.%20Seal%20the%20dish%20with%20tinfoil/aluminium%20foil.%3C/p%3E%3Cp%3ETo%20Bake%20(or%20dum):%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20220%20C.%3C/p%3E%3Cp%3EPlace%20the%20biriyani%20dish%20in%20the%20oven%20and%20bake%20for%2030%20minutes.%3C/p%3E%3Cp%3EOpen%20the%20seal%20just%20before%20serving....to%20oohs%20and%20aahs%20from%20your%20family%20and%20friends%20:-)%3C/p%3E%3Cp%3ETIPS:%3C/p%3E%3Cp%3EThis%20is%20quite%20a%20rich%20and%20flavorsome%20dish%20that%20does%20not%20require%20any%20side-dishes.%20I%20served%20it%20with%20an%20onion-tomato-green%20chilli%20raita,%20mango%20pickle,%20and%20pappads.%3C/p%3E){kind=link}
