.%20I've%20toned%20the%20heat%20back,%20waaaaay%20back%20in%20fact,%20but%20this%20is%20a%20chili%20that's%20easy%20to%20dial%20up%20or%20down,%20aiming%20for%20that%20sweet%20spot%20%E2%80%93%20spicy%20spot?!%20%E2%80%93%20that%20suits%20your%20mood%20or%20your%20taste.%3C/p%3E%3Cp%3ECHILI%20WITH%20MAC%20'N'%20CHEESE%20Yum!%20Who%20else%20loves%20to%20pair%20spicy%20chili%20with%20something%20warm%20but%20definitely%20not%20spicy?%20Chili%20with%20mashed%20potatoes?%20Years%20back,%20Iowa%20farm%20wives%20used%20this%20combination%20to%20extend%20chili%20fed%20to%20hungry%20farm%20workers%20for%20noon%20dinner.%20Chili%20with%20cubes%20of%20cornbread?%20My%20personal%20favorite!%20Until%20now!%20Chili%20with%20mac%20'n'%20cheese?%20Back%20in%20November,%20we%20headed%20to%20Texas%20with%20my%20dad%20to%20visit%20my%20sister%20and%20her%20family,%20then%20drove%20down%20to%20the%20Hill%20Country%20to%20celebrate%20the%20Marine%20Corps%20Birthday%20in%20Kerrville%20where%20our%20friends%20Pat%20and%20Keri%20Wilt%20own%20a%20wine%20bar%20and%20restaurant%20called%20Grape%20Juice.%20I%20was%20in%20total%20heaven%20with%20a%20big%20bowl%20of%20%22crack%22eroni%20'n'%20cheese%20with%20cabrito%20chili.%20Since,%20I've%20served%20chili%20with%20mac%20'n'%20cheese%20for%20family%20here%20and%20oh!%20it%20goes%20down%20easy!%3C/p%3E%3Cp%3EIn%20a%20large,%20heavy%20pot,%20heat%20olive%20oil%20on%20medium%20high%20until%20shimmery.%20Add%20the%20vegetables%20as%20they're%20prepped,%20stirring%20with%20each%20addition.%20Stir%20in%20the%20spices,%20then%20the%20tomatoes%20and%20beans.%20Stir%20together%20the%20mashed%20chipotles%20and%20adobo%20sauce%20with%20a%20tablespoon%20or%20two%20of%20water;%20stir%20this%20and%20the%20remaining%20water%20into%20the%20pot,%20there%20should%20be%20enough%20to%20not%20quite%20cover%20the%20vegetables.%20Bring%20the%20chili%20to%20a%20boil,%20then%20finish%20one%20of%20three%20ways:%3C/p%3E%3Cp%3ESTOVETOP%20Cover%20and%20reduce%20the%20heat%20to%20maintain%20a%20slow%20simmer,%20let%20simmer%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3ESLOW%20COOKER%20Transfer%20chili%20to%20a%20slow%20cooker%20and%20cook%20on%20high%20for%203%20hours%20or%20on%20low%20for%206%20hours.%20(I%20haven't%20made%20this%20in%20the%20slow%20cooker%20but%20the%20times%20are%20likely%20close,%20even%20though%20slow%20cookers%20do%20vary%20so%20much.)%3C/p%3E%3Cp%3ETO%20FINISH%20After%20cooking,%20if%20the%20chili%20is%20a%20little%20bit%20water-y%20vs%20chili-y,%20remove%20the%20lid%20and%20let%20simmer%20on%20the%20stovetop%20until%20enough%20water%20evaporates.%20Let%20cool,%20cover%20and%20refrigerate%20for%2024%20hours%20before%20serving.%3C/p%3E%3Cp%3EALANNA's%20TIPS%20&%20KITCHEN%20NOTES%3C/p%3E%3Cp%3ETo%20use%20so%20little%20oil%20with%20so%20many%20vegetables%20is%20a%20balance%20of%20heat%20and%20fat.%20I%20start%20off%20with%20just%20a%20tablespoon%20of%20oil,%20just%20enough%20to%20really%20turn%20the%20onions,%20carrots%20and%20celery%20quite%20golden.%20If%20the%20pan%20gets%20dry,%20I%20splash%20in%20a%20little%20water%20to%20avoiding%20burning%20the%20vegetables.%3C/p%3E%3Cp%3EFor%20years,%20I've%20purchased%20small%20cans%20of%20chipotle%20with%20adobo%20sauce.%20You%20only%20use%20a%20little%20bit%20at%20a%20time%20and%20typically%20only%20the%20mild%20and%20smoky%20adobo%20sauce%20that%20the%20ever-so-hot%20chipotle%20chilis%20sit%20in.%20Recently%20I%20learned%20the%20trick%20to%20mash%20the%20whole%20can%20in%20a%20small%20food%20processor%20for%20storage%20in%20a%20small%20glass%20jar%20%E2%80%93%20the%20stuff%20keeps%20for%20months%20in%20the%20refrigerator%20%E2%80%93%20and%20there's%20less%20waste.%20Now%20an%20entire%20can%20costs%20only%20a%20couple%20of%20bucks%20so%20it's%20not%20a%20huge%20money-saver.%20But%20it%20still%20makes%20me%20feel%20better!%3C/p%3E%3Cp%3EWant%20to%20turn%20this%20into%20a%20Master%20Recipe%20for%20Vegetable%20Chili?%20Start%20with%20an%20onion,%20then%20add%20about%202%20pounds%20of%20different%20vegetables,%20aiming%20for%204%20to%206%20different%20vegetables%20of%20different%20textures%20and%20colors,%20all%20diced%20to%20about%20the%20same%20size.%3C/p%3E%3Cp%3EA%20Veggie%20Venture%20is%20home%20of%20'veggie%20evangelist'%20Alanna%20Kellogg%20and%20the%3C/p%3E%3Cp%3Efamous%20asparagus-to-zucchini%20Alphabet%20of%20Vegetables.%3C/p%3E%3Cp%3E%C2%A9%20Copyright%20Kitchen%20Parade%202014%3C/p%3E){kind=link}
