Ingredientes

  • 1# 8 oz onions, chopped
  • 12 oz green pepper, chopped
  • 2 oz garlic, minced
  • 1/2 cup vegetable oil
  • 8# tomatoes, diced, canned
  • 3 qts tomato juice
  • 2# 8 oz tomato paste
  • 3 oz parsley, chopped
  • 1 Tbsp oregano, leaf
  • 1 Tbsp basil, leaf
  • 2 bay leaves
  • 3# spinach, chopped
  • 5# cottage cheese
  • 1# parmesan cheese
  • 5 eggs, beaten
  • 1 Tbsp salt
  • 2 tsp pepper, black
  • 5# lasagna noodles, dry
  • 3# 12 oz mozzarella cheese, shredded

Direcciones

  1. Saute onions, green pepper, and garlic in hot oil.
  2. Stir tomato and seasonings into sauteed vegetables. Simmer uncovered for about 20 minutes. Remove bay leaves. Use sauce in layering steps.
  3. Cook spinach and drain.
  4. Combine cottage cheese, parmesan cheese, eggs, salt, and pepper. Add to spinach.
  5. Layer ingredients in pans: 3# 4 oz tomato sauce, 13 oz dry noodles, 2# 5 oz spinach-cheese mixture, 11 oz mozzarella cheese, repeat (tomato sauce, noodles, spinach, mozzarella), 13 oz dry noodles, 3# 4 oz tomato saucce, 8 oz mozzarella cheese.
  6. Bake covered with foil for 1 hour. Remove foil and bake an additional 30-60 minutes or until hot and bubbly. If browning too fast, cover again with foil. Let set for 15-20 minutes before cutting. Cut each pan 4x8.
