Receta Vegetable Lo Mein
There are so many wonderful things to say about this recipe. Delicious does not do it justice. It’s just unbelievably fantastic, easy, inexpensive, and low in calories considering it has spaghetti in it, and on and on…
OK so I know that lo mein does not typically use spaghetti and obviously you can use whatever you want but the spaghetti is easy and something that I always have on hand so no worries it works!
Ingredients:
- 1 pound frozen broccoli
- 12 ounces spaghetti
- 1 medium red onion sliced
- 2 medium carrots julienned
- ¼ cup soy sauce
- 2 tbsp. brown sugar
- 4 cloves garlic minced
- 2.00 tbsp. rice Vinegar
- 3.00 tbsp. sesame oil
- 0.25 teaspoon crushed red pepper flakes
- 4.00 tbsp. vegetable oil (not olive oil)
- 1 cup of canned mushrooms drained
- 2 tbsp. black sesame seeds (optional)
Directions:
Cook spaghetti according to the package directions in a large pot. Three minutes before the spaghetti is done add frozen broccoli to the pot and allow to cook until the broccoli is tender then drain water.
Sit the spaghetti and the broccoli aside. To the large pot add onion and cook until the onion begins to soften then add carrots and cook until they begin to soften but not too soft. You only want them to start losing their crunch.
Next add the spaghetti and broccoli back to the pot then also add in the drained mushrooms.
In a small bowl add remaining ingredients and mix well to create the sauce
Add the sauce to the large pot and mix well. You will have to mix three to four times to get a good mix in.
Serve once the sauce is mixed in well and top with black sesame seeds.
