%20fat%20vegetarian%20Chimichanga.%20'Chimichanga'%20is%20essentially%20deep%20fried%20burrito%20that%20is%20stuffed%20with%20either%20meat%20and/or%20beans.%20Since%20deep%20frying%20is%20not%20something%20I%20do%20regularly%20I%20decided%20to%20pan%20fry%20them.%20I%20already%20have%20a%20recipe%20for%20baked%20chimichangas%20that%20I%20posted%20way%20back%20in%20the%20olden%20days%20:-)%3C/p%3E%3Cp%3EFilling%20for%20the%20chimichangas,%20like%20any%20other%20Mexican%20dish,%20is%20very%20versatile%20and%20can%20range%20from%20meats%20to%20beans%20to%20veggies.%20I%20have%20made%20these%20with%20different%20beans%20(black%20or%20red%20kidney%20or%20pinto)%20and%20sometimes%20even%20mix%20some%20TVP%20(soy%20granules).%20But%20the%20best%20I've%20found%20is%20using%20Trader%20Joe's%20Soyrizo%20and%20beans%20cooked%20with%20some%20onions,%20red%20pepper%20and%20some%20cheese%20--%20yummy!!%3C/p%3E%3Cp%3EToday's%20chimichangas%20are%20super%20simple%20with%20just%20red%20kidney%20beans%20and%20cheese.%20My%20son%20loves%20them%20too.%3C/p%3E%3Cp%3EIngredients:%20Makes%204%20Chimichangas%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20Filling:%20Heat%202tsp%20oil%20in%20a%20saute%20pan,%20add%20onions,%20garlic,%20jalapeno%20and%20cook%20for%204-5%20minutes%20or%20until%20the%20onions%20turn%20translucent.%3C/p%3E%3Cp%3ENext%20add%20drained%20and%20rinsed%20beans%20along%20with%20ground%20cumin,%20chili%20powder%20and%20salt.%20Using%20the%20back%20of%20the%20spoon,%20mash%20the%20beans%20a%20little%20to%20make%20the%20filling%20creamy%20and%20thick.%20Cook%20for%205%20minutes%20and%20set%20aside%20to%20cool%20a%20little.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20fold%20the%20tortillas%20in%20damp%20paper%20towel%20and%20microwave%20for%2030%20seconds%20to%20make%20them%20a%20little%20pliable.%3C/p%3E%3Cp%3EPlace%20some%20of%20the%20bean%20filling%20in%20the%20lower%20half%20of%20the%20tortilla%20and%20top%20it%20with%20cheese.%20Fold%20the%20bottom%20of%20the%20tortilla%20onto%20the%20filling,%20then%20fold%20both%20the%20sides%20over%20and%20roll%20to%20the%20top.%20Repeat%20with%20the%20remaining%20tortillas.%3C/p%3E%3Cp%3EHeat%202-3%20tbsp%20oil%20in%20a%20saute%20pan%20or%20griddle,%20place%20the%20chimichangas%20in%20the%20oil%20seam%20side%20down%20and%20cook%20on%20medium%20flame%20until%20golden%20brown,%20about%203-4%20minutes.%20Flip%20over%20and%20cook%20for%20another%202%20minutes%20or%20until%20golden%20brown.%3C/p%3E%3Cp%3EServe%20hot%20with%20your%20favorite%20accompaniments%20(sour%20cream%20for%20me%20:-)%3C/p%3E%3Cp%3EI%20served%20mine%20with%20a%20dollop%20of%20sour%20cream,%20grape%20tomatoes,%20corn%20salsa%20(store%20bought)%20and%20some%20chopped%20cantaloupe%20for%20a%20filling%20and%20delicious%20meal.%3C/p%3E%3Cp%3EPin%20It%20Now!%3C/p%3E){kind=link}
