%20yet%20I'm%20still%20providing%20fresh,%20homemade%20bread%20for%20my%20family.%20Without%20the%20help%20of%20a%20machine.%20And%20I%20am%20really%20proud%20of%20myself.%20I%20use%20to%20be%20very%20afraid%20of%20yeast....and%20rising,%20and%20resting...and%20just%20knowing%20bread%20dough.%20With%20that%20knowing%20though,%20comes%20confidence...and%20sometimes%20nerve.%20It's%20ok%20to%20add,%20and%20adjust.%20So%20with%20this%20HBin5%20assignment%20for%20Dilled%20Rye%20Whole%20Wheat%20Bread%20came%20memories%20of%20the%20rye%20wanna-be%20bread%20of%20my%20past.%3C/p%3E%3Cp%3ESooooooo....I%20added%20caraway%20seeds%20and%20parsley%20to%20this%20dough.%20Which%20happened%20to%20be%20a%20very%20wet%20dough%20and%20required%20quite%20a%20bit%20of%20flour%20dusting%20in%20order%20to%20handle.%20But%20all%20in%20all,%20it%20turned%20out%20wonderfully!%3C/p%3E%3Cp%3EGreat%20crust,%20great%20crumb......delicious%20flavor.%3C/p%3E%3Cp%3EOne%20of%20the%20joys%20I%20get%20when%20I%20make%20my%20bread%20is%20seeing%20my%20kids%20friends%20come%20by%20and%20devour%20healthy%20bread.%3C/p%3E%3Cp%3ENow%20that%20I%20have%20these%20two%20loaves%20of%20amped-up%20Dilled%20Rye,%20naturally%20my%20mind%20thinks%20'Patty%20Melt!!!!'.%3C/p%3E%3Cp%3Emakes%206%20burgers%3C/p%3E%3Cp%3EInstead%20of%20lentils,%20I%20used%20black%20beans%3C/p%3E%3Cp%3EI%20doubled%20the%20celery%3C/p%3E%3Cp%3EI%20omitted%20the%20leeks%20(didn't%20have%20any%20on%20hand)%3C/p%3E%3Cp%3EI%20doubled%20the%20garlic%3C/p%3E%3Cp%3EI%20omitted%20cashews%20(didn't%20have%20any%20on%20hand%20and%20it%20didn't%20appeal%20to%20me)%3C/p%3E%3Cp%3EI%20used%20greek%20yogurt%20instead%20of%20mayonnaise%3C/p%3E%3Cp%3EI%20used%20corn%20flake%20crumbs%20instead%20of%20panko%20ONLY%20because%20I%20had%20nothing%20else!!!!%3C/p%3E%3Cp%3EWith%20all%20that%20said,%20here's%20how%20things%20went.....%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20bring%201%20cup%20of%20salted%20(1/4%20tsp)%20water%20to%20a%20boil.%20Stir%20in%20the%20bulgur%20wheat%20and%20cover%20immediately.%20Remove%20from%20heat%20and%20let%20stand%20until%20all%20the%20water%20has%20absorbed...about%2020%20minutes.%3C/p%3E%3Cp%3EIn%20a%20heavy%20skillet,%20heat%20a%20couple%20of%20teaspoons%20of%20vegetable%20oil.%20Saute%20the%20onions,%20celery,%20garlic%20and%20mushrooms%20over%20medium%20heat%20until%20tender.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20bowl,%20combine%20the%20bulgur%20wheat,%20black%20beans,%20sauteed%20veggies%20and%20yogurt.%3C/p%3E%3Cp%3ETransfer%20the%20mixture%20to%20a%20food%20processor%20and%20pulse%20until%20coarsely%20chopped...about%2015%20-%2020%20times.%20Transfer%20back%20into%20the%20bowl%20and%20add%20the%20bread%20crumbs%20and%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EGuess%20what?%20There's%20no%20raw%20egg%20or%20raw%20meat%20in%20this%20mixture.%20You%20are%20free%20to%20taste%20it%20and%20adjust%20the%20flavors%20as%20needed.%3C/p%3E%3Cp%3EWhich%20I%20highly%20recommend%20you%20do....I'll%20explain%20that%20in%20a%20minute.%3C/p%3E%3Cp%3EDivide%20your%20veggie%20burger%20mix%20into%206%20equal%20sized%20balls.%3C/p%3E%3Cp%3EAnd%20shape%20them%20how%20ever%20you%20want%20them....round,%20square....oval?%20Yes,%20I%20made%20mine%20oval%20because%20I%20wanted%20them%20to%20fit%20nicely%20on%20my%20slices%20of%20bread.%20These%20will%20not%20shrink%20or%20change%20shape.%20Make%20them%20the%20size%20you%20want.%3C/p%3E%3Cp%3EPour%20a%20bit%20of%20oil%20in%20a%20skillet,%20and%20fry,%20turning%20carefully%20because%20they%20aren't%20as%20sturdy%20as%20meat.%3C/p%3E%3Cp%3EBut%20these%20babies%20do%20brown%20nicely.%20At%20a%20quick%20glance%20you%20might%20not%20realize%20they're%20not%20meat.%3C/p%3E%3Cp%3EI%20was%20thrilled%20with%20the%20visual%20of%20these%20burger%20patties.%3C/p%3E%3Cp%3EThe%20flavor?%20Not%20so%20much.%20It%20wasn't%20awful%20or%20anything....just%20bland.%3C/p%3E%3Cp%3ENot%20being%20a%20vegetarian%20myself....I%20didn't%20realize%20how%20important%20large%20quantities%20of%20herbs%20and%20spices%20are%20needed%20for%20some%20things.%20Next%20time,%20I'd%20add%20more%20garlic.%20More%20salt%20and%20pepper....maybe%20some%20creole%20seasoning%20or%20old%20bay.%20Something.%20A-1?%3C/p%3E%3Cp%3EAnyways.....I%20melted%20some%20american%20cheese%20(cuz%20for%20a%20Patty%20Melt...that's%20the%20only%20cheese%20that%20will%20do%20for%20me),%20grilled%20up%20some%20onions......%3C/p%3E%3Cp%3EAnd%20did%20enjoy%20a%20healthy%20Veggie%20Melt.%3C/p%3E%3Cp%3EWith%20a%20little%20tweaking,%20I%20think%20this%20recipe%20could%20be%20a%20real%20winner.%20The%20ultimate?%20I%20think%20that%20should%20be%20determined%20by%20a%20vegetarian.%3C/p%3E%3Cp%3EWhat%20changes%20would%20you%20suggest%20for%20this%20veggie%20burger%20recipe?%3C/p%3E){kind=link}
