Receta Velvet Chicken With Mushrooms

- Cut chicken in matchlike pcs. Toss with 2 tsp. cornstarch, the soy sauce, pepper, and 1 Tbsp. oil. Let stand 10 min. Drain the mushrooms, but reserve 1/4 c. juice. Mix the remaining cornstarch with the mushroom juice and salt.
- Heat the remaining oil in a skillet; add in the chicken, garlic and ginger. Cook 1 minute, stirring constantly. (Don't let chicken brown.) Add in the mushrooms and liquid. Cook over low heat 5 min. Don't over cook.
