- Peel and dice carrot and potatoes, dice squash. Saute/fry in vegetable oil. Bring water and salt to a boil, reduce heat and add in vegetables; add in bouillon cube and simmer till vegetables are still crisp but done.
- When serving soup, serve with a slice of lemon. Squeeze lemon into soup to taste. This adds flavor and zest.
