- Combine Cheddar and Monterey Jack cheese. Cut up crab into bite size pcs and add in lowfat sour cream, onion and 3/4 of cheese. Brush each side of tortilla with enchilada sauce and place 2 spoonfuls of filling on an edge. Roll up and place seam down in a 13 x 9 baking dish. Top with remaining sauce and cheese. Bake at 350 degrees for 30 to 35 min.
