I can’t believe it has been so long since I’ve last shared a recipe here, but I haven’t stopped eating–here’s Instagram proof!. About 14 months ago I got my first non-self-employed job, so Hungry Huy has been a bit neglected.
I started to cook at home a lot less, which meant eating out more. It’s quite a bit more expensive to eat out and usually not as healthy (fun though!), but I’ve decided to reel it in a bit and start cooking more often.

,%20but%20I%E2%80%99ve%20decided%20to%20reel%20it%20in%20a%20bit%20and%20start%20cooking%20more%20often.%3C/p%3E%3Cp%3EThis%20week,%20I%20wanted%20to%20share%20with%20you%20a%20recipe%20for%20Vietnamese%20chicken%20curry,%20or%20c%C3%A0%20ri%20g%C3%A0.%20Although%20there%20is%20some%20waiting%20involved%20with%20the%20marinade%20and%20extra%20care%20taken%20with%20the%20root%20vegetables,%20this%20curry%20recipe%20is%20fairly%20easy%20to%20make.%20This%20is,%20yet%20another%20recipe,%20that%20I%20have%20been%20lucky%20enough%20to%20grow%20up%20eating%20as%20a%20child.%3C/p%3E%3Cp%3EThe%20word%20%E2%80%9Ccurry%E2%80%9D%20makes%20me%20think%20FLAVOR.%20Whether%20its%20Vietnamese,%20Indian,%20Thai,%20Japanese%20(%3C%E2%80%94%20this%20one%E2%80%99s%20insane%E2%80%93it%E2%80%99s%20almost%20like%20gravy),%20I%20can%20be%20sure%20that%20curry%20is%20going%20to%20taste%20pretty%20intense,%20and%20have%20a%20great%20aroma.%3C/p%3E%3Cp%3EYou%20can%20use%20any%20cut%20of%20chicken%20you%20like%20for%20this%20Vietnamese%20curry%20recipe,%20however%20getting%20one%20with%20bones%20gives%20the%20chicken%20some%20size%20or%20bulk%20so%20it%20isn%E2%80%99t%20bullied%20around%20by%20the%20potatoes%20and%20carrots.%20Use%20wings,%20thighs,%20drumsticks,%20or%20even%20whole%20or%20half%20chickens.%20Just%20use%20a%20cleaver%20to%20split%20large%20pieces%20into%20about%203%E2%80%B3%20ones%20so%20they%20are%20uniform%20and%20finish%20cooking%20at%20the%20same%20time.%3C/p%3E%3Cp%3EUsing%20a%20cut%20of%20chicken%20here%20with%20skin%20will%20taste%20better%20and%20add%20fat%20so%20you%20can%20brown%20these%20in%20the%20pan%20without%20using%20any%20additional%20oil.%3C/p%3E%3Cp%3EWe%E2%80%99ll%20be%20deep%20frying%20the%20potatoes%20and%20the%20carrots,%20so%20that%20they%20form%20a%20skin%20on%20the%20outside%20and%20don%E2%80%99t%20disintegrate%20into%20the%20curry%20during%20cooking%20over%20stirring%20the%20pot.%20Deep%20frying%20them%20also%20par-cooks%20it%20so%20they%20don%E2%80%99t%20need%20to%20stew%20as%20long%20in%20the%20broth.%3C/p%3E%3Cp%3ELemongrass%20is%20super%20tough%20and%20woody,%20and%20it%E2%80%99s%20fairly%20cheap%20to%20buy%20in%20bunches.%20Just%20cut%20these%20down%20to%20keep%20in%20the%20freezer%20bags.%20They%20store%20quite%20well.%3C/p%3E%3Cp%3EThe%20vibrant%20yellow%20color%20from%20this%20curry%20is%20enhanced%20with%20coconut%20milk!%20Don%E2%80%99t%20add%20this%20until%20the%20end%20though,%20to%20keep%20the%20color%20from%20getting%20all%20murky.%20If%20you%20can%E2%80%99t%20hang%20with,%20or%20are%20allergic%20to%20coconut,%20some%20people%20like%20to%20sub%20in%20half%20&%20half%20or%20milk%20for%20this.%20It%20obviously%20tastes%20a%20little%20bit%20different,%20but%20for%20the%20Vietnamese%20flare,%20stick%20with%20coconut.%3C/p%3E%3Cp%3EThis%20curry%20goes%20well%20with%20a%20fresh%20loaf%20of%20bread.%20Those%20french%20style%20baguettes%20you%20find%20at%20Vietnamese%20bakeries%20are%20perfect%20for%20this%E2%80%93kind%20of%20airy%20but%20still%20crusty.%20If%20you%20don%E2%80%99t%20happen%20to%20be%20around%20any%20Vietnamese%20baguette%20shops,%20any%20crusty%20baguette%20will%20do.%20I%20enjoy%20eating%20this%20with%20rice%20too,%20but%20I%20don%E2%80%99t%20think%20you%E2%80%99ll%20find%20any%20restaurants%20serving%20it%20that%20way!%3C/p%3E%3Cp%3E2/8/2015%20update:%20I%20wasn%E2%80%99t%20happy%20with%20the%20photos%20for%20this%20recipe%20so%20updated%20them.%20Same%20recipe%20though!%3C/p%3E%3Cp%3EVietnamese%20Chicken%20Curry%20Recipe%20(C%C3%A0%20Ri%20G%C3%A0)%20%20%20%20%20%20%20%20Ingredients%3C/p%3E%3Cp%3E2%20lb%20chicken%20(any%20cut,%20chopped%20into%20large%202-3%22%20pieces)%201%C2%BD%20lb%20potatoes%20%C2%BD%20lb%20carrots%201%20medium-sized%20onion,%20finely%20chopped%204%20gloves%20garlic,%20finely%20chopped%202%20stalks%20lemongrass,%20cut%20into%205%22%20pieces%20then%20split%20lengthwise,%20smashed%20to%20expose%20more%20leaves%203%20bay%20leaves%20%C2%BD%20cup%20coconut%20milk%20oil%20for%20frying%202%20tsp%20sugar%202-3%20cups%20chicken%20broth%202-3%20cups%20water%20Marinade%3C/p%3E%3Cp%3E2%20tsp%20salt%202%20tsp%20onion%20powder%202%20tbsp%20curry%20powder%20%20%20Instructions%3C/p%3E%3Cp%3ECut%20chicken%20into%20large%202-3%22%20chunks%20if%20using%20large%20pieces.%20Add%20salt,%20onion%20powder%20&%20curry%20powder%20to%20chicken.%20Marinate%20for%202-4%20hours.%20Cut%20onions%20and%20carrots%20into%202%22%20chunks,%20deep%20fry%20until%20lightly%20browned.%20After%20marinating,%20brown%20chicken%20on%20all%20sides%20in%20small%20batches%20in%20a%20pot,%20skin%20side%20down%20first.%20Add%20oil%20if%20you're%20using%20skinless.%20Remove%20chicken,%20drain%20fat%20and%20clean%20off%20any%20burned%20residue%20in%20the%20pot.%20Add%20some%20oil%20to%20the%20pot%20on%20low%20heat%20and%20sweat%20onion%20until%20soft,%20then%20add%20garlic%20until%20lightly%20brown.%20Return%20chicken%20to%20the%20pot%20with%20lemongrass,%20bay%20leaves,%20and%20sugar.%20Add%2050%2
