%20she%20was%20known%20to%20have%20used.%3C/p%3E%3Cp%3EThere%20were%20fourteen%20entrants%20in%20all%20(not%20bad%20for%20the%20first%20contest%20of%20its%20kind%20by%20a%20relatively%20small%20local%20museum.)%20%20Three%20of%20the%20entries%20-%20including%20mine%20-%20were%20for%20%22Rye%20and%20Indian%20Bread,%22%20a%20bread%20once%20common%20in%20New%20England%20which%20was%20made%20from%20rye%20flour%20and%20corn%20meal%20(aka%20Indian%20meal.)%3C/p%3E%3Cp%3EMs.%20Dickinson%20won%20a%20Second%20Place%20prize%20for%20her%20Rye%20&%20Indian%20Bread%20at%20the%20Amherst%20Cattle%20Show%20in%201856.%20%20Unfortunately.%20the%20actual%20recipe%20she%20used%20has%20not%20survived.%20%20We%20were%20instructed%20to%20research%20antique%20recipes%20and%20come%20up%20with%20one%20that%20would%20be%20as%20authentic%20as%20possible.%3C/p%3E%3Cp%3EAs%20it%20turned%20out,%20each%20of%20us%20entereing%20the%20competition%20took%20a%20completely%20different%20approach%20to%20the%20problem%20and%20all%20of%20the%20results,%20while%20bearing%20little%20resemblance%20to%20each%20other,%20were%20reasonable%20and%20authentic%20solutions.%20%20Each%20of%20the%20breads%20are%20shown%20below%20along%20with%20tasting%20notes.%20%20Sorry%20for%20the%20dubious%20picture%20quality,%20but%20I%20was%20only%20able%20to%20take%20photos%20of%20the%20wrapped%20breads%20before%20the%20judging.%3C/p%3E%3Cp%3EFirst%20Place%20went%20to%20a%20yeast-raised%20loaf%20which%20used%20a%20combination%20of%20cornmeal,%20rye%20flour,%20and%20whole-wheat%20flour%20(to%20incorporate%20enough%20gluten%20to%20allow%20for%20rising.)%20%20The%20bread%20was%20dense%20and%20somewhat%20moist,%20with%20a%20pronounced%20rye%20flavor%20and%20a%20very%20tender%20crust.%20%20The%20density%20of%20the%20bread%20made%20it%20very%20filling.%3C/p%3E%3Cp%3ESecond%20Place%20was%20claimed%20by%20a%20steamed%20bread%20very%20much%20akin%20to%20Boston%20Brown%20Bread.%20%20Having%20been%20steamed%20in%20a%20pudding%20mold,%20it%20was%20cylindrical%20in%20shape.%20%20The%20baker%20cut%20it%20into%20wedges%20for%20serving,%20but%20it%20really%20should%20have%20been%20served%20sliced%20into%20generous%20round%20slices.%3C/p%3E%3Cp%3EVery%20moist%20and%20dense%20in%20texture,%20this%20bread%20was%20rich%20with%20the%20flavor%20of%20molasses.%20%20Typical%20of%20steamed%20breads%20and%20puddings,%20it%20was%20very%20heavy%20and%20filling.%20%20It%20would%20have%20been%20the%20perfect%20accompaniment%20for%20delicious%20homemade%20baked%20beans.%20%20Unfortunately,%20it%20was%20an%20unseasonably%20hot%20day%20in%20Amherst%20-%2090-plus%20F%20-%20and%20that%20dramatically%20reduced%20my%20enjoyment%20of%20this%20one.%3C/p%3E%3Cp%3EThird%20Place,%20and%20therefore%20The%20Loser,%20was%20taken%20by%20my%20own%20interpretation,%20a%20pan-baked%20quickbread%20which%20relied%20on%20acidic%20ingredients%20(buttermilk%20and%20molasses)%20along%20with%20baking%20powder%20and%20baking%20soda%20to%20provide%20leavening%20power.%20%20Not%20as%20heavy%20as%20the%20previous%20two%20entries,%20it%20was%20also%20not%20nearly%20as%20moist,%20coming%20out%20quite%20reminiscent%20of%20a%20modern%20cornbread%20(though%20with%20an%20interesting%20rye%20flavor%20tinged%20with%20molassesy%20sweetness.)%3C/p%3E%3Cp%3EAfter%20the%20judging%20was%20over%20and%20the%20winners%20announced,%20the%20portions%20of%20the%20bread%20which%20hadn't%20been%20eaten%20by%20the%20judges%20were%20offered%20to%20attendees%20at%20the%20museum%20for%20general%20nomming.%20%20%20The%20first%20and%20third%20place%20breads%20vanished%20the%20quickest%20(reflecting,%20as%20I%20noted%20earlier,%20the%20heat%20and%20oppressiveness%20of%20the%20day.)%3C/p%3E%3Cp%3EUnfortunately,%20I%20wasn't%20given%20the%20opportunity%20to%20get%20a%20copy%20of%20the%20recipes%20my%20rivals%20used,%20but%20I%20can%20provide%20you%20with%20my%20own%20recipe%20if%20you'd%20like%20to%20try%20baking%20a%20batch%20of%20Rye%20&%20Indian%20Bread%20for%20yourself.%3C/p%3E%3Cp%3EThird%20Place%20Rye%20&%20Indian%20Bread%3C/p%3E%3Cp%3E9%20servings%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425%20F%20and%20grease%20an%208%20x%208%20x%202%20baking%20dish.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20corn%20meal,%20rye%20flour,%20brown%20sugar,%20salt,%20baking%20powder,%20and%20baking%20soda.%20Stir%20well%20with%20a%20whisk%20until%20all%20the%20dry%20ingredients%20are%20uniformly%20blended.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20beat%20buttermilk,%20egg,%20oil,%20and%20molasses%20with%20a%20fork%20until%20thoroughly%20mixed.%20Pour%20liquid%20mixture%20all%20at%20once%20into%20dry%20ingredients%20and%20stir%20in%20just%20until%20the%20batter%20is%20thoroughly%20moistened.%3C/p%3E%3Cp%3ETurn%20the%20batter%20out%20into%20the%20prepared%20baking%20dish%20and%20bake%20at%20425%20F%20for%2020%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean..%3C/p%3E){kind=link}
