%20%20With%20a%20meat%20grinder,%20the%20cutting%20action%20is%20done%20inside%20the%20barrel%20of%20the%20grinder%20as%20the%20meat%20is%20forced%20out%20through%20holes%20in%20a%20steel%20plate.%20%20A%20food%20chopper%20forces%20the%20product%20out%20of%20the%20barrel%20where%20it%20is%20cut%20off%20on%20the%20outside.%20%20The%20chopper%20was%20a%20labor-saving%20device%20used%20to%20mince%20meat,%20vegetables,%20and%20other%20ingredients%20without%20having%20to%20spend%20a%20lot%20of%20time%20with%20a%20knife.%20%20It%20was%20the%20fastest%20way%20to%20get%20that%20kind%20of%20mincing%20done%20in%20the%20days%20before%20electric%20food%20processors.%3C/p%3E%3Cp%3EThese%20days,%20not%20as%20many%20people%20actually%20use%20food%20choppers%20any%20more.%20%20Cooks%20who%20want%20to%20save%20time%20on%20chopping%20chores%20turn%20to%20their%20food%20processors.%20%20My%20food%20processor%20gets%20plenty%20of%20use,%20but%20there%20are%20times%20when%20I%20still%20turn%20to%20my%20great-grandmother's%20Universal%20Food%20Chopper.%20%20It%20does%20an%20awesome%20job%20of%20cutting%20up%20cooked%20leftover%20beef%20roasts%20to%20turn%20them%20into%20hash.%20And%20it%20does%20an%20equally%20awesome%20job%20of%20cutting%20up%20vegetable%20ingredients%20for%20relish.%3C/p%3E%3Cp%3EHow's%20that%20for%20a%20segue?%3C/p%3E%3Cp%3ETwo%20consecurive%20frosts%20have%20raised%20hell%20with%20my%20vegetable%20garden.%20%20The%20tomato%20vines%20have%20pretty%20much%20died%20back,%20and%20now%20I'm%20picking%20the%20green%20tomatoes%20that%20are%20still%20clinging%20to%20the%20vines.%20%20I've%20got%20piles%20of%20green%20tomatoes.%20%20Luckily,%20I%20have%20plenty%20of%20recipes%20that%20call%20for%20greenies.%20%20Green%20tomato%20relishes%20are%20another%20one%20of%20those%20old-style%20products%20that%20have%20largely%20been%20forgotten%20as%20cheap%20and%20homogenous%20commercial%20products%20became%20widespread.%20I%20call%20this%20particular%20version%20%22Golden%20Relish%22%20because%20the%20use%20of%20some%20turmeric%20and%20yellow%20peppers%20in%20the%20veggie%20mix%20give%20it%20a%20golden%20tinge.%20%20This%20isn't%20a%20spicy%20relish,%20but%20rather%20a%20good,%20solid,%20sweet%20relish%20for%20use%20on%20hot%20dogs,%20in%20salads,%20or%20on%20its%20own%20with%20sliced%20ham.%3C/p%3E%3Cp%3ECut%20each%20tomato%20in%20half%20across%20the%20center%20and%20use%20a%20small%20spoon%20to%20scoop%20out%20the%20seeds.%20%20Run%20the%20tomatoees,%20onions,%20and%20peppers%20through%20the%20food%20chopper%20and%20then%20mix%20them%20well%20together%20in%20a%20large%20bowl.%20%20Sprinkle%20the%20canning%20salt%20over%20the%20mixture%20and%20let%20it%20stand%20overnight%20in%20the%20refrigerator.%20%20In%20the%20morning,%20rinse%20the%20mixture%20lightly%20and%20let%20it%20drain%20well%20in%20a%20strainer%20or%20colander.%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20combine%20the%20celery%20seed,%20turmeric,%20sugar,%20vinegar,%20and%20chopped%20vegetables.%20%20Bring%20to%20a%20simmer%20and%20cook%20for%20about%202%20hours.%20%20The%20tomatoes%20will%20release%20a%20lot%20of%20liquid%20during%20the%20cooking%20time.%3C/p%3E%3Cp%3EUse%20a%20slotted%20spoon%20to%20put%20the%20relish%20into%20pint%20jars%20without%20adding%20too%20much%20of%20the%20liquid.%20%20Cap%20the%20jars%20and%20process%20for%2010%20minutes%20in%20a%20boiling%20water%20bath.%3C/p%3E){kind=link}
