%20even%20though%20it%20is%20white.%20%20It%20had%20no%20lid,%20so%20I%20had%20no%20idea%20whether%20this%20was%20a%20goof%20at%20the%20Martinsville%20plant%20(who%20produced%20Visions%20in%20the%20U.S.)%20or%20if%20it%20was%20made%20this%20way%20on%20purpose.%3C/p%3E%3Cp%3EI%20decided%20to%20drag%20it%20home%20anyway%20and%20started%20poking%20around%20on%20the%20Internet%20to%20see%20what%20I%20could%20find%20out%20about%20it.%20%20Evidently,%20this%20is%20the%20Visions%20Chicken%20Fryer.%20%20I%20still%20cannot%20explain%20why%20it%20is%20white,%20for%20there%20are%20Amber%20and%20Cranberry%20Chicken%20Fryers%20too.%20%20In%20fact,%20the%20lids%20for%20the%20Amber%20and%20Cranberry%20Chicken%20Fryers%20(V-12-C)%20will%20fit%20this%20white%20model%20as%20well.%20%20It's%20all%20very%20strange%20and%20weird,%20but%20I%20don't%20judge.%20Besides,%20I%20know%20there%20is%20a%20clear%20V-12%20lid%20out%20there,%20somewhere.%3C/p%3E%3Cp%3EThe%20only%20conclusion%20I%20can%20draw,%20at%20this%20point,%20is%20that%20Visions%20made%20a%20white%20model%20of%20their%20Chicken%20Fryer%20to%20accompany%20the%20Rangetop%20line%20from%20the%2080s.%20(as%20opposed%20to%20the%20Rangetoppers%20line%20from%20the%20late%2070s)%20%20The%20Rangetop%20line%20is%20better%20known%20as%20the%20S-series%20round%20saucepans%20that%20have%20%22built%20in%22%20pyroceram%20handles%20attached%20to%20their%20sides%20and%20no%20aluminum%20on%20their%20bottoms.%3C/p%3E%3Cp%3EAfter%20my%20research%20I%20began%20wondering%20what%20I%20was%20going%20to%20use%20it%20for,%20since%20I%20don't%20fry%20chicken.%20%20I%20already%20have%20perfectly%20serviceable%20pieces%20of%20Corningware%20and%20didn't%20really%20NEED%20another%20one,%20unless%20it%20could%20serve%20a%20special%20purpose%20beyond%20what%20my%20Cornflower%20or%20Wheat%20pieces%20were%20capable%20of.%20%20I%20was%20just%20about%20to%20sell%20it%20on%20eBay%20or%20something%20when%20it%20hit%20me......%20%20with%20the%20higher%20sides%20(significantly%20higher%20than%20those%20of%20the%20P-series%20%22skillets%22)%20this%20would%20be%20perfect%20as%20a%20saute%20pan.%20%20%20I%20have%20always%20wondered....%20for%20all%20the%20lines%20that%20Corningware%20produced,%20they%20really%20only%20produced%20Skillets%20and%20Sauce%20Pans%20(OK,%20and%20Bakeware)%20which%20have%20different%20dimensions%20than%20Saute,%20Chef%20or%20Windsor%20style%20pans.%3C/p%3E%3Cp%3EAnd%20thus%20it%20was,%20armed%20with%20my%20new%20Corningware%20%22Saute%22%20pan,%20I%20embarked%20upon%20one%20of%20my%20favorite%20dishes....%20%20%20Risotto.%3C/p%3E%3Cp%3EHistorically%20I%20have%20made%20my%20Risotto%20in%20my%2010%20inch%20Pyroceram%20Skillet%20(with%20Pyroceram%20Lid),%20but%20I%20have%20discovered%20that%20this%20mysterious%20white%20%22Visions%22%20Chicken%20fryer%20is%20the%20best%20possible%20pot%20for%20making%20Risotto.%20%20(I%20am%20sure%20that%20a%20Visions%20Amber%20or%20Cranberry%20would%20work%20just%20as%20well)%20%20It's%20dimensions%20are%20perfect%20for%20providing%20just%20the%20right%20amount%20of%20surface%20area%20for%20the%20liquid%20evaporate%20at%20the%20perfect%20rate.%20%20As%20an%20added%20bonus,%20the%20waffle%20bottom%20ensures%20there%20will%20be%20absolutely%20no%20stickage%20AND%20it%20provides%20a%20secondary%20surface%20for%20gently%20abrading%20the%20rice%20grains%20to%20release%20to%20perfect%20amount%20of%20amylopectin%20into%20the%20stock,%20thus%20creating%20a%20perfectly%20creamy%20sauce%20to%20envelope%20the%20perfectly%20al%20dente%20rice%20grains.%3C/p%3E%3Cp%3EDid%20I%20mention%20that%20this%20pot%20is%20%22Perfect%22?%20%20LOVE%20IT!!!!%3C/p%3E%3Cp%3EThere%20is%20something%20about%20making%20Risotto%20in%20Corningware%20that%20I%20must%20caution%20you%20on.%20%20Corningware%20holds%20onto%20heat%20like%20cast%20iron.%20%20Because%20of%20this,%20and%20especially%20with%20Risotto,%20you%20will%20need%20to%20remove%20the%20dish%20from%20the%20stove%20just%20before%20the%20rice%20would%20be%20considered%20%22al%20dente%22,%20in%20other%20words,%20you%20want%20it%20to%20be%20a%20little%20under-done.%20%20It%20will%20continue%20to%20cook%20for%20a%20good%203-5%20minutes%20while%20it%20is%20in%20the%20%22resting%22%20phase%20and%20be%20perfect%20afterwards.%20%20Remember....%20Squishy%20Risotto%20defeats%20the%20whole%20purpose.%3C/p%3E%3Cp%3EI%20have%20gotten%20hooked%20on%20the%20%22Power%20Greens%22%20mixes%20that%20have%20been%20available%20in%20the%20stores%20lately,%20but%20this%20is%20just%20as%20delicious%20with%20ALL%20Baby%20Spinach%20or%20ALL%20Arugula...%20(though%20you%20may%20want%20to%20give%20those%20a%20rough%20chop%20first)%20%20I%20just%20think%20the%20mixture%20of%20Spinach,%20Chard%20and%20Kale,%20makes%20it%20a%20little%20more%20interesting.%3C/p%3E%3Cp%3EBaby%20Greens%20and%20Chevre%20Risotto%3C/p%3E%3Cp%3ESo%20while%20you%20are%20waiting,%20go%20ahead%20and%20crumble%20up%20the%20Chevre%20and%20set%20it%20aside.%20(It's%20easier%20to%20crumble%20when%20it's%20cold)%3C/p%3E%3Cp%3EPlace%20Olive%20Oil%20in%20the%20V-12%20Chicken%20Fryer%20and%20set%20it%20over%20Medium%20flame.%3C/p%3E%3Cp%3EOnce%20the%20Oil%20is%20hot,%20toss%20in%20the%20Shallots,%20sauteing%20until%20softened.%3C/p%3E%3Cp%3EAdd%20the%20Rice%20and%20saute%20until%20it%20begins%20to%20smell%20nutty.%20%20(about%205%20minutes)%3C/p%3E%3Cp%3EAdd%20the%20Wine%20and%20stir%20until%20it%20has%20evaporated%20down%20slightly%20and%20a%20sauce%20begins%20to%20form.%3C/p%3E%3Cp%3EPour%20in%20a%20little%20bit%20of%20Chicken%20Stock,%20and%20continue%20stirring.%3C/p%3E%3Cp%3EContinue%20in%20this%20way%20until%20you%20have%20used%20about%201/2%20of%20the%20Chicken%20Stock.%3C/p%3E%3Cp%3EAdd%20the%20Greens%20to%20the%20pot%20and%20stir%20until%20they%20have%20wilted%20down%20and%20mixed%20in%20with%20the%20rice.%3C/p%3E%3Cp%3EYou%20probably%20won't%20need%20to%20add%20any%20stock%20for%20a%20few%20minutes,%20as%20the%20greens%20wilt%20down,%20they%20will%20release%20liquid%20into%20the%20risotto.%3C/p%3E%3Cp%3EContinue%20adding%20stock%20and%20stirring%20until%20the%20rice%20is%20only%20a%20little%20bit%20toothy.%20(yes,%20you%20will%20have%20to%20check%20it%20with%20a%20spoon%20-%20cooking%20times%20always%20vary%20from%2016-20%20minutes%20as%20does%20the%20amount%20of%20stock%20needed)%3C/p%3E%3Cp%3ERemove%20the%20V-12%20Chicken%20Fryer%20from%20the%20stove%20and%20add%20the%20crumbled%20Chevre.%3C/p%3E%3Cp%3ECover%20with%20a%20Dish%20towel%20and%20allow%20the%20Risotto%20to%20rest%20for%203-5%20minutes.%3C/p%3E%3Cp%3EStir%20everything%20together%20to%20achieve%20creamy%20deliciousness.%3C/p%3E%3Cp%3EServe......%3C/p%3E%3Cp%3EDelicious!!%3C/p%3E%3Cp%3EWhere%20is%20your%20Corningware??%3C/p%3E){kind=link}
