.%20%20Just%20looking%20at%20this%20station%20made%20my%20mouth%20water%20for%20cheese...%20I%20need%20to%20see%20about%20getting%20one%20of%20these%20for%20my%20kitchen!%3C/p%3E%3Cp%3EAtop%20the%20cheese%20station%20rests%20the%20Presidential%20Cheese%20-%20a%2035%20pound%20cheese%20wheel%20of%20pasteurized%20cow%E2%80%99s%20milk%20cheese%20made%20of%20Cabot%20Clothbound%20cheddar%20from%20the%20Cellars%20at%20Jasper%20Hill,%20Vermont.%20%20I%20don't%20think%20I've%20ever%20seen%20a%20cheese%20wheel%20of%20that%20magnitude%20before.%20%20I%20wonder%20if%20Baxter%20could%20eat%20it....%3C/p%3E%3Cp%3EThe%20cheese%20selection%20includes%20a%20number%20of%20delicious%20goat,%20sheep%20and%20cow's%20milk%20cheeses%20from%20all%20over%20the%20US%20(and%20one%20from%20France%20for%20good%20measure,%20since%20it%20is%20sort%20of%20their%20thing).%20Lisa%20was%20so%20helpful%20in%20explaining%20where%20each%20of%20the%20different%20cheeses%20originate%20from,%20what%20they%20taste%20like,%20how%20they%20are%20prepared,%20and%20what%20techniques%20are%20used%20in%20the%20aging%20process.%20%20I%20learned%20so%20much%20about%20cheese-making%20and%20can%20appreciate%20it%20much%20more!%20%20(Here's%20a%20fast%20fact:%20Some%20cheeses%20are%20aged%20in%20a%20cave!)%3C/p%3E%3Cp%3EGiven%20my%20indecisive%20party%20selection%20(gasp!%20and%20I%20live%20in%20the%20Nation's%3C/p%3E%3Cp%3ECapital!),%20I%20opted%20for%20the%20Presidential%20cheese%20tray%20with%20two%20Blue%3C/p%3E%3Cp%3Echeeses%20(Democrat)%20and%20two%20Red%20cheeses%20(Republican).%20%20The%20Blue%20cheeses%20were%20Ewe%E2%80%99s%20Blue,%20a%20sheep%E2%80%99s%20milk%20cheese%20from%20New%20York,%20and%20Pont%20L'Eveque,%20a%20cow's%20milk%20cheese%20from%20France%20(left%20side%20of%20the%20board%20in%20picture%20below).%20%20On%20the%20other%20side%20of%20the%20tray%20were%20the%20Red%20cheeses,%20Lincoln%20Log,%20a%20pasteurized%20goat%E2%80%99s%20milk%20cheese%20from%20Michigan%20and%20the%20Cabot%20Clothbound%20cheddar%20from%20Vermont%20(right%20side%20of%20the%20board%20in%20picture%20below).%20%20The%20cheeses%20were%20accompanied%20by%20%20housemade%20pinot%20noir%20jelly,%20Vidalia%20onion%20jam,%20Concord%20grape%20jelly,%20pears,%20figs,%20and%20bread.%3C/p%3E%3Cp%3EThe%20cheese%20board%20was%20amazing,%20definitely%20one%20of%20the%20best%20cheese%20boards%20that%20I%20have%20ever%20had%20-%20it%20was%20perfectly%20balanced%20and%20enhanced%20by%20the%20jelly%20and%20jam%20pairings.%20%20The%20Blue%20selections%20were%20good,%20a%20solid%20Roquefort%20blue%20cheese%20and%20a%20creamy%20French%20cheese.%20%20But%20I%20have%20to%20say,%20the%20Red%20selections%20were%20outstanding%20-%20the%20Lincoln%20Log%20was%20light,%20fresh%20and%20smooth%20and%20the%20Cabot%20Clothbound%20cheddar%20was%20rich,%20complex%20and%20nutty.%20%20The%20Vidalia%20onion%20jam%20was%20a%20great%20pair%20to%20the%20cheddar%20-%20not%20like%20the%20traditional%20caramelized%20onion%20jams%20but%20much%20more%20sweet%20and%20light.%3C/p%3E%3Cp%3EAt%20this%20point,%20I%20was%20leaning%20strongly%20to%20voting%20Red,%20and%20Lisa%20had%20just%20gotten%20in%20the%20Red%20Hawk,%20a%20cow%E2%80%99s%20milk%20cheese%20from%20Cowgirl%20Creamery,%20California.%20%20To%20solidify%20my%20vote,%20I%20sampled%20the%20Red%20Hawk%20cheese%20with%20sopressata%20and%20prosciutto.%3C/p%3E%3Cp%3EThe%20polls%20are%20closed%20-%20we%20had%20a%20winner!%20%20The%20Red%20Hawk%20cheese%20was%20definitely%20my%20favorite,%20it%20is%20a%20triple%20cream%20cheese%20that%20is%20silky%20and%20smooth%20with%20an%20earthy%20taste.%20Check%20it%20out,%20the%20Winners'%20Circle...%3C/p%3E%3Cp%3EI%20had%20a%20phenomenal%20experience%20at%20the%20Park%20Hyatt%20Washington%20-%20a%20fantastic%20cheese%20and%20charcuterie%20selection%20in%20a%20relaxed%20setting%20with%20friendly%20and%20attentive%20staff.%20You%20have%20a%20month%20left%20to%20enjoy%20the%20Presidential%20Cheeses%20and%20submit%20your%20vote%20over%20at%20the%20cheese%20station%20(available%20nightly%20from%205:30%20pm%20to%2010:30%20pm).%20Get%20out%20and%20rock%20the%20vote!%3C/p%3E){kind=link}
