Walnut Cookies

Great for a mid-afternoon energy boost

Ingredientes

  • 1/2 cup butter, at room temperature, diced
  • 1 cup superfine sugar
  • 1 cup flour
  • 2 teaspoons vanilla
  • 1 cup walnuts, finely chopped

Direcciones

  1. Preheat the oven to 300 F.
  2. Grease two baking sheets
  3. Using an electric mixer, cream the butter until soft
  4. Add 1/4 cup of the sugar
  5. Continue to beat until light and fluffy
  6. Stir in the flour, vanilla extract, and the chopped walnuts
  7. Drop by teaspoonfuls of the batter onto the prepared baking sheets
  8. Space about 1 inch apart
  9. Flatten slightly using the back of the spoon
  10. Bake the cookies for about 25 minutes or until golden
  11. Transfer to a wire rack set over a baking sheets
  12. Sprinkle with the remaining sugar
  13. Allow to cool
