Warm Bacon Potato Salad

Great side dish for brats, bbq, etc., and contains no mayo.

Ingredientes

  • 2 lbs. red potatoes
  • 4-5 slices bacon, cooked and fat reserved
  • 1 small onion, minced or 2-3 scallions sliced thin
  • 1/3 cup cider vinegar
  • 1/3 cup water
  • 1 1/2 tsp. flour
  • 1 tsp. butter
  • 3 tbs. sugar
  • pinch thyme
  • 1/8 tsp. celery seeds
  • salt and pepper to taste
  • garnish: chopped parsley or paprika

Direcciones

  1. Cook potatoes in water until done, remove from water and let cool.
  2. Cook bacon, and reserve the fat.
  3. Saute the onions until golden brown.
  4. Add the sugar to the water and vinegar.
  5. Melt the butter in the bacon fat, add flour.
  6. Quikly stir together, then slowly add vinegar mix.
  7. Chop the bacon.
  8. Sl;ice potatoes in 1/4 " rounds.
  9. Toss all ingredients together.
  10. Refrigerate several hours, reheat and serve warm.
  11. Garnish before serving.
