Receta Warm Bacon Potato Salad
Great side dish for brats, bbq, etc., and contains no mayo.
Ingredientes
- 2 lbs. red potatoes
- 4-5 slices bacon, cooked and fat reserved
- 1 small onion, minced or 2-3 scallions sliced thin
- 1/3 cup cider vinegar
- 1/3 cup water
- 1 1/2 tsp. flour
- 1 tsp. butter
- 3 tbs. sugar
- pinch thyme
- 1/8 tsp. celery seeds
- salt and pepper to taste
- garnish: chopped parsley or paprika
Direcciones
- Cook potatoes in water until done, remove from water and let cool.
- Cook bacon, and reserve the fat.
- Saute the onions until golden brown.
- Add the sugar to the water and vinegar.
- Melt the butter in the bacon fat, add flour.
- Quikly stir together, then slowly add vinegar mix.
- Chop the bacon.
- Sl;ice potatoes in 1/4 " rounds.
- Toss all ingredients together.
- Refrigerate several hours, reheat and serve warm.
- Garnish before serving.
