Receta Warm Barley and Chard Salad, Bonnie and Guapa tell tales
by Katie Zeller

I haven’t done a chard post in a bit….

I’m guessing it’s been about 9 months since I picked the last of it.

It’s been slow to start this yeas (as has everything else), but it’s finally getting big enough to pick.

Could it be that summer is here?

Warm Barley and Chard Salad

Total time: 30 minutes

Ingredients:

Instructions:

Cook barley in chicken stock until done, usually about 15 minutes for quick-cooking.

Wash the chard and trim any bad bits. Stack the leaves together and fold over, the long way. Slice into thin strips, using both leaves and stems, but keep stems separate.

Heat oil in a large skillet.

Add shallots, chard stems and sauté until tender, about 7 minutes.

Add the chard leaves and sauté until wilted.

Remove from heat and stir in herbs.

Vinaigrette: Whisk together mustard, vinegar and olive oil.

When barley is done, put into a large bowl and stir to cool slightly.

Add chard, shallot mixture and stir to combine.

Add vinaigrette and stir well.

Add mozzarella, stir and serve.

Guapa and Bonnie beg your indulgence – they have something to say..

Our Other Human was a Bad Human again

We thought he had learned his lesson, two years ago, when he left the garden gate open and we wandered into the sunflowers and got lost. That’s us, over there in the circle by the cows.

Our Human (the main Human, the one that feeds us) is always very careful about closing the gates. She doesn’t want us to get lost again…. Or chase the bunnies up the road….

And she told us that if we’re Bad Dogs someone would steal us and take us away and then we wouldn’t get our peanut butter treats any more.

We like having all the gates closed. It makes us feel safe.

Other Human left the main gate open today.

Twice.

The first time we barked and our Human came and closed it.

The second time we kind of forgot that we weren’t supposed to go through it and we wandered off towards the sunflowers.

Our Human was busy and didn’t notice.

But we’re bigger now, and the sunflowers haven’t grown much this year. We didn’t get far before she found us and reminded us we were supposed to stay home.

I think Bela’s Human (the black dog that lives down the lane) called our Human to tell her we were wandering off.

Other Human is leading us astray.

He’s causing us to get into trouble.

But…..

He does give us his toast crusts at breakfast…. And bits of cheese when he makes lunch.

And he gives us bits of fish on Fish Hell Night.

And we get to lick out the yogurt cartons (we like vanilla best).

I guess we’ll keep him.
