Warm white bean saute

This is a tasty and healthy side dish. We served it with simple Flank Steak, but it would go well with chicken, fish, or other vegetables too.

Ingredientes

  • 1 Tbsp olive oil
  • 1/2 small red onion, sliced
  • 2 medium carrots, halved lengthwise and sliced (1 cup sliced baby carrots)
  • 1 medium red bell pepper, seeded and diced
  • 2 garlic cloves, slivered
  • 1 19oz can Cannellini beans, drained and rinsed
  • 1 tsp grated lemon zest
  • 2 tsps fresh lemon juice
  • coarse salt and fresh ground pepper to taste

Direcciones

  1. In a small saucepan, heat oil over medium. Add onion and carrots. Cook stirring frequently, until onion is lightly browned...about 5 min. Add bell pepper and garlic. Cook, stirring, about 3 minutes.
  2. Stir in beans, lemon zest, and 1 cup water and season with salt and pepper. Bring to a boil. Reduce to simmer, cover, and cook until beans have absorbed most of the liquid...about 10 minutes.
  3. Stir in lemon juice and add salt and pepper until properly seasoned.
  4. Serve and enjoy!
