%3C/p%3E%3Cp%3ENine%20years%20ago,%20we%20spent%20our%20daughter's%20first%20Christmas%20in%20Quebec%20with%20my%20husband's%20side%20of%20the%20family.%20It%20was%20a%20bit%20of%20a%20whirlwind%20for%20me%20-%20his%20family%20is%20much%20larger,%20louder,%20and%20Frencher%20than%20my%20side!%20My%20family%20traditions%20consist%20of%20church%20on%20Christmas%20Eve,%20stockings%20and%20presents%20on%20Christmas%20morning,%20and%20a%20big%20turkey%20dinner%20later%20that%20day.%20Sweet%20and%20simple.%20My%20husband's%20family%20traditions%20consist%20of%20midnight%20Mass,%20and%20traveling%20around%20to%20all%20the%20relatives'%20houses%20for%20lots%20of%20laughter,%20presents,%20games,%20tacky%20gift-exchanges,%20brunches,%20snacks,%20suppers,%20etc.%20It's%20a%20little%20crazy,%20but%20it's%20a%20lot%20of%20fun!%3C/p%3E%3Cp%3EAmidst%20all%20the%20hustle%20and%20bustle%20of%20my%20first%20Quebec%20Christmas,%20I%20discovered%20the%20Raclette.%20My%20sister-in-law%20hosted%20a%20big%20raclette%20supper%20on%20Christmas%20Eve%20that%20year,%20and%20it%20was%20love%20at%20first%20bite!%20I%20am%20forever%20in%20her%20debt%20for%20introducing%20me%20to%20what%20has%20now%20become%20our%20family's%20favourite%20traditional%20holiday%20meal!%20Since%20we%20still%20like%20to%20do%20our%20big%20turkey%20dinner%20for%20a%20Christmas%20meal,%20the%20Raclette%20has%20become%20our%20traditional%20New%20Year's%20Eve%20meal%20instead.%3C/p%3E%3Cp%3EThe%20simplest%20way%20to%20describe%20raclette%20is%20%22fondue%20on%20a%20grill%22.%20It's%20an%20open-faced%20grill%20that%20sits%20in%20the%20middle%20of%20the%20table,%20and%20you%20can%20cook%20your%20food%20on%20top%20and/or%20place%20it%20in%20little%20broiler%20trays%20that%20slide%20underneath%20the%20grill.%20%20You%20can%20purchase%20the%20grills%20at%20most%20stores%20that%20carry%20small%20kitchen%20appliances.%3C/p%3E%3Cp%3EThe%20traditional%20Swiss%20raclette%20features%20melted%20cheese%20(there's%20actually%20a%20type%20of%20cheese%20called%20raclette%20-%20careful,%20it%20stinks%20to%20high%20Heaven,%20but%20it's%20really%20good%20once%20it's%20melted!),%20cured%20meats,%20boiled%20potatoes,%20gherkins,%20and%20pickled%20onions.%20That's%20not%20how%20we%20do%20it,%20though!%20Our%20raclette%20meal%20is%20a%20feast%20of%20the%20following%20ingredients:%3C/p%3E%3Cp%3Edipping%20sauces%20(usually%203%20different%20kinds%20-%20some%20of%20our%20favourites%20are%20Curry%20Mayo,%20Honey%20Mustard,%20Sweet%20&%20Sour,%20Barbeque,%20etc.%20We%20usually%20have%20garlic%20butter%20as%20well.)%3C/p%3E%3Cp%3EThe%20meat%20and%20vegetables%20should%20be%20cut%20into%20very%20small%20pieces,%20so%20that%20they%20will%20cook%20quickly%20on%20the%20grill.%20%20We%20typically%20have%202%20marinades%20for%20chicken%20and%202%20marinades%20for%20beef.%20%20Here%20are%20some%20simple%20marinades%20that%20work%20well:%3C/p%3E%3Cp%3EChicken%20Marinade%20%231:%20oil,%20lemon%20juice,%20garlic%3C/p%3E%3Cp%3EChicken%20Marinade%20%232:%20lime%20juice,%20ketchup,%20cumin,%20chili%20powder%20or%20fajita%20seasoning%3C/p%3E%3Cp%3EBeef%20Marinade%20%231:%20vinegar,%20ketchup,%20garlic,%20onion%20powder,%20cumin,%20oregano,%20pepper%3C/p%3E%3Cp%3EBeef%20Marinade%20%232:%20soy%20sauce,%20ginger,%20garlic,%20brown%20sugar%3C/p%3E%3Cp%3EYou%20grill%20meat%20and%20veggies%20on%20top,%20and%20then%20put%20them%20in%20the%20the%20broiler%20trays%20with%20a%20slice%20of%20cheese%20on%20top.%20The%20combinations%20are%20endless!%20%20You%20can%20also%20put%20a%20slice%20of%20French%20bread%20underneath%20the%20broiler%20with%20some%20garlic%20butter,%20or%20top%20it%20off%20with%20a%20piece%20of%20prosciutto%20and%20a%20slice%20of%20cheese.%20%20You%20can%20take%20some%20seafood%20from%20the%20top%20of%20the%20grill,%20then%20transfer%20it%20to%20your%20broiler%20tray%20and%20add%20a%20little%20garlic%20butter.%20%20You%20can%20mix%20and%20match%20the%20marinated%20meats%20with%20the%20dipping%20sauces%20and%20see%20which%20flavours%20work%20well%20together.%20%20Basically%20you%20spend%20the%20meal%20experimenting,%20and%20generally%20everything%20tastes%20fantastic!%3C/p%3E%3Cp%3EOnce%20the%20raclette%20meal%20is%20over,%20two%20things%20are%20certain:%20you%20will%20be%20incredibly%20full,%20and%20you%20will%20have%20tons%20of%20leftovers.%20You%20know%20the%20story%20of%20Jesus%20feeding%205000%20with%20just%20a%20few%20fish%20and%20some%20loaves%20of%20bread?%20Well%20the%20raclette%20is%20kind%20of%20like%20that%20-%20you%20start%20out%20thinking%20you'll%20never%20have%20enough%20food%20for%20everyone,%20and%20somehow%20you%20end%20up%20with%20enough%20for%20at%20least%20one%20more%20large%20meal!%3C/p%3E%3Cp%3EThere%20are%20a%20number%20of%20ways%20you%20can%20use%20up%20your%20raclette%20leftovers.%20Often%20we%20just%20do%20it%20all%20over%20again%20the%20next%20night,%20since%20we%20love%20the%20Raclette%20meal%20so%20much.%20You%20can%20also%20use%20the%20leftover%20cheese%20and%20veg
