%20with%20my%20fingertips%20before%20I%20put%20my%20salad%20together.%20This%20quick%20little%20step%20is%20vital%20in%20releasing%20that%20familiar%20bitterness%20found%20in%20kale,%20and%20also%20helps%20to%20soften%20the%20tough%20rubbery%20leaves.%20After%20a%20quick%20massage,%20all%20my%20salad%20needed%20was%20a%20light%20toss%20in%20some%20peppery%20ranch%20dressing,%20an%20egg%20medium-soft%20poached%20in%20a%20vinegar-water%20bath,%20chopped%20farm-fresh%20tomatoes,%20and%20some%20slices%20of%20creamy%20avocado%20and%20I%20had%20the%20perfect%20afternoon%20healthy%20treat!%3C/p%3E%3Cp%3EBabbo%20At%20Hockley%20Valley%20Resort%20-%20My%20mom%20has%20been%20having%20such%20a%20great%20time%20this%20summer%20visiting%20all%20different%20types%20of%20resorts,%20retreats,%20and%20lakes%20all%20around%20Ontario%20with%20different%20friends%20and%20family.%20This%20week%20I%20got%20to%20be%20her%20lucky%20partner%20in%20crime%20as%20we%20headed%20to%20Orangeville%20to%20enjoy%20a%20lovely%20spa%20day%20at%20Hockley%20Valley%20Resort.%20After%20cutting%20our%20time%20short%20at%20the%20very%20disappointing%20White%20Pine%20Shores%20in%20Haliburton%20(it's%20certainly%20a%20work%20in%20progress),%20it%20was%20so%20refreshing%20to%20drive%20up%20to%20the%20gorgeous%20facilities%20at%20Hockley%20Valley%20for%20some%20rest%20and%20relaxation.%20With%20my%20mom%20raving%20about%20the%20mouth-watering%20kale%20salad%20at%20Hockley%20Valley's%20Babbo%20restaurant,%20I%20knew%20what%20I%20had%20to%20get%20for%20lunch.%20Of%20course%20I%20always%20begin%20my%20kale%20salads%20with%20a%20massage,%20but%20with%20the%20restaurant%20chefs%20taking%20care%20of%20the%20lunch%20prep%20for%20me,%20my%20mom%20and%20I%20were%20able%20to%20indulge%20in%20a%20little%20massage%20of%20our%20own.%20We%20started%20off%20our%20spa%20day%20with%20massages%20in%20Hockley's%20extremely%20relaxing%20spa,%20and%20followed%20that%20by%20finding%20a%20prime%20spot%20on%20Babbo's%20comfortable%20patio%20to%20enjoy%20their%20kale%20salad.%20The%20tender%20but%20still%20crisp%20kale%20was%20perfect,%20tossed%20in%20a%20buttermilk%20dressing%20with%20shredded%20carrots,%20toasted%20walnuts,%20and%20fresh%20herbs.%3C/p%3E%3Cp%3EHockley%20Valley%20Resort%20-%20After%20our%20leisurely%20lunch%20on%20the%20patio%20at%20Babbo,%20my%20mom%20and%20I%20spent%20a%20few%20wonderful%20hours,%20soaking%20up%20the%20sun%20by%20the%20beautiful%20pool%20at%20Hockley%20Valley%20while%20sipping%20on%20cucumber%20and%20citrus%20infused%20water.%20Once%20we%20were%20sufficiently%20freckled,%20my%20mom%20gave%20me%20a%20tour%20of%20their%20incredibly%20well%20cared%20for%20grounds.%20My%20absolute%20favourite%20part%20of%20the%20resort%20was%20their%20fantastic%20and%20bountiful%20organic%20chefs%20garden.%20The%20large%20garden,%20which%20provides%2080%25%20of%20all%20menu%20ingredients,%20was%20filled%20with%20row%20upon%20row%20of%20just%20about%20every%20type%20of%20fruit%20and%20vegetable%20you%20can%20imagine.%20As%20if%20I%20wasn't%20already%20in%20love%20with%20the%20garden,%20in%20the%20centre%20of%20it%20all%20rests%20a%20large%20stone%20wood-fired%20pizza%20oven,%20which%20is%20utilized%20every%20Saturday%20and%20Sunday%20from%20May%20through%20to%20September%20for%20%22Pizza%20in%20the%20Garden%22.%20I%20was%20in%20my%20glory!%20I%20had%20such%20a%20lovely%20time%20at%20Hockley%20Valley%20Resort,%20this%20will%20certainly%20not%20be%20my%20last%20visit!%3C/p%3E%3Cp%3EKale%20Salad%20with%20Grilled%20Peaches%20Prosciutto%20Goat%20Cheese%20&%20Pomegranate%20Balsamic%20Vinaigrette%20-%20With%20kale%20still%20on%20the%20brain%20and%20a%20basket%20full%20of%20Ontario%20peaches%20on%20the%20counter%20that%20my%20mom%20and%20I%20had%20picked%20up%20on%20the%20way%20home%20from%20our%20retreat%20up%20north,%20I%20had%20been%20dreaming%20up%20my%20perfect%20salad%20to%20start%20off%20my%20Friday%20night.%20Halved%20peaches%20are%20lightly%20oiled%20and%20tossed%20onto%20the%20grill%20(or%20grill%20pan)%20to%20enhance%20the%20sweet%20flavours.%20While%20the%20peaches%20were%20being%20grilled,%20I%20massaged%20my%20kale%20and%20whisked%20together%20a%20very%20simple%20vinaigrette%20of%20pomegranate-infused%20balsamic%20vinegar%20(an%20unbelievable%20product%20I%20picked%20up%20in%20St.%20Lawrence%20Market),%20olive%20oil,%20and%20pepper.%20The%20tender%20kale%20is%20tossed%20in%20the%20vinaigrette%20and%20topped%20with%20the%20grilled%20peaches,%20salty%20prosciutto%20slices,%20creamy%20and%20tangy%20goat%20cheese,%20and%20a%20sprinkle%20of%20chia%20seeds.%20If%20all%20salads%20were%20that%20delicious%20I%20would%20never%20eat%20anything%20else!%20If%20I%20had%20more%20time%20to%20toast%20some%20nuts,%20this%20salad%20would%20have%20been%20perfect.%20The%20sweet,%20salty,%20and%20tangy%20combo%20made%20my%20taste%20buds%20so%20very%20happy,%20I%20haven't%20stopped%20thinking%20about%20this%20creation%20all%20weekend%20long!%20Keep%20your%20eyes%20peeled%20as%20I
