.%3C/p%3E%3Cp%3EPorchetta%20&%20Co.%20-%20With%20so%20many%20great%20eats%20popping%20up%20in%20Toronto,%20it's%20hard%20to%20keep%20track%20of%20them%20all,%20not%20to%20mention%20actually%20find%20the%20chance%20to%20get%20out%20to%20try%20all%20of%20them!%20Porchetta%20&%20Co.%20is%20one%20Toronto%20favourite%20that%20has%20been%20on%20my%20radar%20for%20a%20while%20now,%20despite%20the%20fact%20that%20I%20haven't%20got%20myself%20out%20to%20Dundas%20West%20to%20try%20their%20decadent%20porchetta%20sandwiches%20until%20last%20week.%20What%20is%20a%20porchetta%20sandwich%20you%20ask?%20I'd%20say%20it's%20the%20ultimate%20in%20piggy%20deliciousness!%20A%20piece%20of%20pork%20shoulder%20is%20marinated%20for%2024%20hours%20in%20a%20medley%20of%20spices%20including%20rosemary,%20sage,%20garlic%20oil,%20and%20lemon%20zest.%20The%20shoulder%20is%20then%20wrapped%20in%20prosciutto%20(I'm%20sure%20I've%20already%20got%20you%20salivating),%20and%20then%20all%20of%20that%20gets%20wrapped%20in%20cured%20pork%20belly.%20The%20layered%20creation%20gets%20roasted%20at%20a%20high%20temperature%20for%20just%20long%20enough%20to%20get%20a%20nice%20crispy%20crust%20on%20the%20outside,%20and%20then%20turned%20down%20to%20get%20slow%20roasted%20for%20several%20more%20hours.%20Finally,%20the%20meat%20is%20carved%20and%20put%20on%20fresh%20sourdough%20bread%20from%20Caldense%20Bakery%20and%20topped%20with%20Kozlik's%20grainy%20mustard.%3C/p%3E%3Cp%3EPorchetta%20&%20Co.%20-%20Porchetta%20&%20Co.%20totally%20won%20me%20over%20from%20my%20very%20first%20bite%20thanks%20to%20the%20high%20quality%20of%20every%20single%20aspect%20of%20the%20sandwich.%20Perfect%20meat,%20on%20a%20perfect%20bun,%20with%20perfect%20mustard.%20Perfection!%20I%20especially%20loved%20the%20crunch%20and%20saltiness%20from%20the%20crackling%20(the%20crispy%20crust%20from%20the%20outside%20of%20the%20roast,%20which%20is%20sprinkled%20on%20the%20sandwich),%20adding%20another%20layer%20of%20flavour%20and%20texture%20to%20the%20sinful%20sandwich.%20I'm%20interested%20to%20try%20some%20of%20the%20sides%20that%20Porchetta%20&%20Co.%20serves%20alongside%20their%20sandwiches%20such%20as%20roasted%20potatoes,%20rapini,%20and%20seasonal%20daily%20soups.%20I%20look%20forward%20to%20coming%20back,%20but%20next%20time%20when%20the%20weather%20is%20warmer%20so%20I%20can%20take%20my%20sandwich%20to%20a%20nearby%20park%20to%20enjoy%20in%20the%20sun!%3C/p%3E){kind=link}
