,%20my%20main%20goal%20was%20a%20meal%20that%20would%20not%20mess%20up%20my%20kitchen.%20I%20wanted%20my%20husband%20to%20come%20home%20to%20a%20nice,%20clean%20house%20so%20he%20could%20relax.%20Plus,%20I%20needed%20to%20compete%20with%20two%20weeks%20of%20hotel%20maid%20service!%20So,%20I%20decided%20to%20go%20back%20to%20a%20recipe%20we%20had%20tried%20once,%20but%20had%20not%20had%20in%20some%20time:%20Ina's%20Truffled%20Filet%20of%20Beef%20Sandwiches.%20Taste:%20phenomenal.%20Ease:%20super%20easy.%20Cleanliness:%20very%20few%20dishes%20and%20no%20prep.%20chopping.%20We%20had%20a%20winner!%3C/p%3E%3Cp%3EWhile%20a%20little%20on%20the%20expensive%20side%20because%20of%20the%20large%20piece%20of%20filet%20mignon%20and%20truffle%20butter,%20this%20recipe%20is%20well%20worth%20it.%20Paired%20with%20a%20homemade%20Caesar%20salad%20(recipe%20in%20a%20previous%20post),%20and%20this%20was%20a%20great%20welcome%20home%20dinner%20that%20was%20quick%20and%20easy,%20and%20allowed%20us%20to%20catch%20up%20after%20two%20weeks%20apart.%3C/p%3E%3Cp%3EIngredients%20%20nocoupons%3C/p%3E%3Cp%3EDirections%20%20Preheat%20the%20oven%20to%20500%20degrees%20F.%20(Be%20sure%20your%20oven%20is%20very%20clean!)%20Place%20the%20beef%20on%20a%20sheet%20pan%20and%20pat%20the%20outside%20dry%20with%20a%20paper%20towel.%20Spread%20the%20butter%20all%20over%20the%20beef%20with%20your%20hands.%20Sprinkle%20the%20beef%20evenly%20with%201%201/2%20teaspoons%20salt%20and%201%201/2%20teaspoons%20pepper.%20Roast%20for%20exactly%2022%20minutes%20for%20rare%20and%2025%20minutes%20for%20medium-rare.%20Remove%20the%20beef%20from%20the%20oven,%20cover%20it%20tightly%20with%20aluminum%20foil,%20and%20allow%20it%20to%20rest%20at%20room%20temperature%20for%2015%20minutes.%20Remove%20the%20strings%20and%20slice%20the%20fillet%20about%201/4-inch%20thick.%20Open%20the%20baguettes%20lengthwise%20but%20not%20all%20the%20way%20through.%20Spread%20the%20bottom%20halves%20generously%20with%20the%20truffle%20butter.%20Top%20with%20a%20layer%20of%20sliced%20beef%20and%20sprinkle%20it%20with%20salt%20and%20pepper.%20Using%20a%20vegetable%20peeler,%20shave%20the%20Parmesan%20into%20thin%20shards%20and%20scatter%20the%20shards%20over%20the%20sliced%20beef%20on%20each%20sandwich.%20Finish%20with%20a%20sprinkling%20of%20arugula%20leaves.%20Fold%20the%20tops%20of%20the%20sandwiches%20over,%20cut%20each%20baguette%20diagonally%20in%203%20or%204%20sandwiches,%20and%20serve%20right%20away.%3C/p%3E%3Cp%3EFood%20Network%3C/p%3E%3Cp%3EMy%20Recipe%20Notes:%3C/p%3E%3Cp%3EDon't%20skimp%20on%20the%20truffle%20butter!%20It%20makes%20all%20the%20difference.%20(Mine%20was%20from%20Williams-Sonoma.%20dartagnan.com%20also%20sells%20it)%3C/p%3E%3Cp%3EFilet%20of%20Beef%20is%20Filet%20Mignon.%20I%20have%20tried%20it%20once%20tied%20like%20the%20recipe%20says,%20and%20once%20not%20tied.%20I%20didn't%20notice%20a%20difference.%3C/p%3E%3Cp%3EMy%20grocery%20store%20has%20horrible%20baguettes,%20so%20I%20use%20their%20Rustic%20Country%20Loaf%20(Safeway)%20and%20it's%20perfect%20for%20these.%20Anything%20with%20a%20crunchy%20texture%20on%20the%20outside%20is%20great.%3C/p%3E%3Cp%3EReally%20take%20your%20time%20and%20slice%20the%20meat%20as%20thinly%20as%20possible.%20The%20first%20time%20we%20cut%20it%20a%20little%20thick%20and%20they%20were%20hard%20to%20eat.%20I%20slowed%20down%20this%20time%20and%20got%20it%20thin%20enough%20so%20the%20meat%20wouldn't%20fall%20out.%3C/p%3E){kind=link}
