,%20I%20like%20to%20mix%20it%20up--I've%20been%20known%20to%20go%20big,%20keep%20it%20simple,%20and%20everything%20in%20between.%20As%20is%20often%20the%20case,%20we%20celebrated%20both%20my%20birthday%20and%20Easter%20with%20this%20cake,%20but%20that's%20okay--I'm%20happy%20to%20share.%3C/p%3E%3Cp%3EYou've%20probably%20eaten%20this%20cake%20before,%20if%20I%20may%20be%20so%20bold%20as%20to%20even%20refer%20to%20it%20as%20a%20cake.%20It's%20essentially%20layers%20of%20graham%20crackers%20and%20vanilla%20pudding%20fluffed%20with%20Cool%20Whip%20and%20topped%20with%20a%20chocolate%20ganache.%20Yes,%20it's%20reminiscent%20of%20a%20chocolate%20eclair,%20but%20in%20my%20opinion,%20SO%20much%20better.%20As%20I%20make%20it,%20the%20pudding%20component%20is%20the%20majority%20of%20the%20bulk,%20where%20an%20eclair%20is%20mostly%20pastry.%20To%20each%20her%20own,%20but%20I%20prefer%20the%20pudding.%20Lots%20of%20people%20who%20make%20this%20use%20a%20thicker%20chocolate%20frosting,%20but%20my%20mamster%20always%20used%20this%20thinner%20boiled%20ganache,%20and%20it's%20what%20I%20still%20like.*%3C/p%3E%3Cp%3E*Especially%20if%20it's%20made%20correctly.%20Apparently,%20I%20didn't%20start%20timing%20at%20the%20ROLLING%20boil%20for%20this%20batch%20of%20frosting%20and%20therefore%20ended%20up%20with%20an%20undercooked%20ganache%20that%20became%20sticky%20and%20tacky%20and%20troublesome.%20Still%20delicious,%20but%20a%20pain%20in%20the%20derri%C3%A8re.%3C/p%3E%3Cp%3EDEE-stroyed.%20DEE-molished.%20%20But%20what%20DEE-licious%20carnage.%3C/p%3E%3Cp%3EThis%20is%20another%20in%20a%20long%20list%20of%20desserts%20that%20just%20gets%20better%20with%20age%20(much%20like%20yours%20truly,%20you%20might%20say).%20I%20always%20appreciate%20desserts%20like%20that--they%20help%20me%20improve%20my%20patience%20and%20strengthen%20my%20willpower.%20As%20birthday%20cakes%20go%20(or%20any%20cakes,%20for%20that%20matter),%20you%20could%20do%20much%20worse%20than%20the%20combination%20of%20creamy%20vanilla%20pudding,%20softened%20graham%20crackers,%20and%20rich%20chocolate%20ganache!%3C/p%3E%3Cp%3EChocolate%20Eclair%20Birthday%20Cake%20for%20Easter%3C/p%3E%3Cp%3EFills%20a%2013x9-inch%20pan%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ECake:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20pudding%20mixes%20and%20milk;%20briskly%20whisk%20or%20beat%20at%20medium%20speed%20for%202%20minutes.%3C/p%3E%3Cp%3EGently%20fold%20in%20the%20whipped%20topping.%3C/p%3E%3Cp%3ESpray%20a%2013x9-inch%20baking%20dish,%20then%20spread%20a%20layer%20of%20graham%20crackers%20onto%20the%20bottom.%3C/p%3E%3Cp%3ESpread%20half%20of%20the%20pudding%20mixture%20over%20the%20crackers,%20then%20top%20with%20another%20layer%20of%20graham%20crackers.%3C/p%3E%3Cp%3ESpread%20the%20remaining%20pudding%20over%20those%20crackers;%20top%20the%20second%20pudding%20layer%20with%20another%20layer%20of%20crackers.%3C/p%3E%3Cp%3ERefrigerate%20until%20chilled--this%20will%20help%20the%20ganache%20firm%20up%20properly.%3C/p%3E%3Cp%3ETo%20make%20the%20ganache,%20in%20a%20small%20saucepan%20over%20medium%20heat,%20melt%20together%20the%20butter,%20sugar,%20milk,%20and%20cocoa.%3C/p%3E%3Cp%3EWhen%20the%20mixture%20comes%20to%20a%20ROLLING%20boil,%20begin%20timing%20for%20one%20minute.%3C/p%3E%3Cp%3ERemove%20from%20the%20heat%20and%20stir%20in%20the%20salt%20and%20vanilla%20extract.%3C/p%3E%3Cp%3ELet%20the%20mixture%20cool%20for%20a%20few%20minutes%20before%20pouring%20it%20onto%20the%20chilled%20eclair%20cake,%20spreading%20evenly%20over%20the%20exposed%20crackers.%3C/p%3E%3Cp%3ERefrigerate%20at%20least%20a%20few%20hours,%20but%20the%20longer,%20the%20better.%3C/p%3E%3Cp%3E*Most%20recipes%20call%20for%208%20ounces%20of%20whipped%20topping.%20That's%20probably%20the%20better%20way%20to%20go--the%20pan%20won't%20be%20so%20close%20to%20overflowing%20and%20the%20structure%20will%20be%20a%20little%20firmer.%20Whatever,%20I%20love%20me%20some%20Cool%20Whip.%3C/p%3E){kind=link}
