Receta White Kurma
White Kurma (also known as White Vegetable Kurma or Chettinad Vellai Kurma) is a popular dish from the Chettinad cuisine. They are best served as a side dish with roti, idiyappam, parotta or with rice.
Ingredients:
- Potatoes – 1 cup, chopped
- Carrot – 1/2 cup, chopped
- Beans – 1/2 cup, chopped
- Green Peas – 1/2 cup, shelled
- Cauliflower – 3/4 cup, finely chopped
- Capsicum – 3/4 cup, finely chopped
- Onion – 1, finely chopped
- Coriander Leaves – handful, chopped
- Curd – 1 cup
- Coconut Oil – 1 tsp
- Oil as required
- Salt as per taste
- For the Masala:
- Green Chillies – 5
- Ginger Garlic Paste – 2 to 3 tblsp
- Coconut – 1/3 cup, chopped
- Cashew Nuts – 4 to 6, blanched
- Roasted Gram Flour – 1 tsp
- Saunf – 1 tsp
- Gasagasa – 1 tsp
- Clove – 1
- Cinnamon – a small piece
