%20The%20house%20is%20off%20limits%20to%20everyone%20until%20after%2010:00am,%20while%20Ty%20opens%20presents%20and%20we%20lounge%20about%20in%20our%20pajamas.%3C/p%3E%3Cp%3EAfter%2010:00am,%20all%20hell%20breaks%20loose.%20In%20the%20kitchen,%20that%20is.%20Christmas%20Day%20is%20my%20one%20day%20of%20the%20year%20where%20I%20cook%20whatever%20the%20heck%20I%20want%20and%20everyone%20else%20can%20just%20deal%20with%20the%20fallout.%20And%20so%20I%20cook.%20Whatever%20I%20want.%20And%20we%20invite%20all%20of%20our%20friends%20over%20to%20feast.%20There%20is%20always%20plenty%20to%20eat%20and%20drink.%20Sometimes%20we%20have%20a%20house%20full.%20Sometimes%20its%20just%20us,%20trying%20to%20put%20away%20a%2024%20pound%20turkey%20and%20eleven%20side%20dishes.%20It%20greatly%20depends%20on%20the%20weather.%20And%20since%20we%20had%20several%20inches%20of%20snow%20this%20Christmas,%20you%20might%20say%20attendance%20was%20light.%3C/p%3E%3Cp%3EAs%20in....one.%3C/p%3E%3Cp%3EWho%20went%20away%20one%20very%20satisfied%20guy.%3C/p%3E%3Cp%3E(Get%20your%20minds%20out%20of%20the%20gutter!%20I%20mean,%20he%20ate%20a%20lot!%20Of%20FOOD!)%3C/p%3E%3Cp%3EAnd%20when%20I%20say%20%E2%80%9Cfood%E2%80%9D...I%20mean....PRIME%20RIB.%3C/p%3E%3Cp%3EYes,%20I%20know%20prime%20rib%20is%20hardly%20a%20novelty%20on%20Christmas,%20but%20at%20my%20house%20it%20is.%20And%20you%20can%20bet%20there%20wasn%E2%80%99t%20a%20single%20person%20complaining%20when%20I%20declared%20the%20menu%20for%20this%20year%20to%20include%20a%20very%20large,%20very%20rare%20hunk%20of%20beef.%20Since%20I%20have%20never%20made%20a%20prime%20rib%20before,%20naturally,%20I%20turned%20to%20Mark%20Bittman.%20I%20did%20my%20homework,%20sure,%20but%20in%20the%20end,%20my%20copy%20of%20How%20To%20Cook%20Everything%20was%20what%20was%20propped%20open%20on%20my%20countertop%20to%20the%20recipe%20entitled%20Prime%20Rib%20Roast%20for%20a%20Small%20Crowd%20(ironic,%20eh?).%20I%20cut%20back%20on%20the%20side%20dishes%20since%20we%20were%20short%20on%20company,%20but%20ended%20up%20making%20Yukon%20Gold%20Havarti%20Mashed%20Potatoes,%20and%20a%20Zucchini%20and%20Vidalia%20Onion%20Gratin.%20All%20of%20which%20were%20consumed%20with%20holiday%20zeal.%3C/p%3E%3Cp%3EI%20did,%20of%20course,%20have%20to%20adapt%20the%20recipe%20a%20touch,%20since%20the%20roast%20I%20got%20from%20my%20butcher%20was%20in%20the%20neighborhood%20of%20eleven%20pounds%20(yes,%20we%20had%20a%20LOT%20of%20leftovers.%20Again,%20no%20one%20was%20complaining.)%3C/p%3E%3Cp%3ESo,%20for%20our%20roast,%20I%20used%20some%20aptly%20named%20Prime%20Rib%20Rub%20from%20Penzey%E2%80%99s%20to%20season%20the%20outside%20of%20the%20roast.%20I%20plugged%20my%20probe%20thermometer%20into%20the%20center%20of%20the%20roast%20and%20popped%20it%20into%20a%20450%20degree%20oven%20for%20about%2015%20minutes,%20then%20lowered%20the%20temperature%20to%20350%20and%20roasted%20the%20meat%20until%20the%20internal%20temperature%20reached%20120%20degrees.%20After%20letting%20the%20roast%20rest%20about%2015%20minutes,%20we%20sliced%20into%20the%20meat%20to%20find%20a%20gorgeous%20rare/medium%20rare%20center.%20The%20end%20pieces%20were%20more%20well%20done,%20of%20course,%20but%20all%20of%20it%20was%20flavorful%20and%20juicy.%3C/p%3E%3Cp%3EThe%20total%20cooking%20time%20was%20almost%202%20%C2%BD%20hours%20for%20a%20roast%20that%20size,%20which%20gave%20me%20plenty%20of%20time%20to%20put%20together%20the%20side%20dishes.%3C/p%3E%3Cp%3EAll%20I%20can%20say%20is....Merry%20Christmas%20to%20me!%3C/p%3E%3Cp%3EOh,%20and%20those%20leftovers?%20What%20we%20didn%E2%80%99t%20eat%20the%20very%20next%20day,%20I%20turned%20into%20Prime%20Rib%20hash%20(which%20I%20also%20used%20a%20Bittman%20recipe%20for!)%20for%20breakfast%20and%20a%20lovely%20pot%20of%20Prime%20Rib%20soup!%20Yes....yes,%20I%20did.%3C/p%3E%3Cp%3ECheck%20out%20that%20gorgeous%20Prime%20Rib%20Hash!This%20Prime%20Rib%20is%20my%20submission%20to%20Tackling%20Bittman,%20which%20is%20being%20hosted%20by%20Girlichef%20this%20month!%3C/p%3E){kind=link}
