%20changed.%20Getting%20inspired%20by%20professionals%20like%20Ina%20Garten,%20Martha%20Stewart%20and%20a%20few%20fellow%20bloggers,%20I%20learnt%20a%20few%20things%20about%20baking!%20Number%20one%20being%E2%80%A6..%22stick%20to%20the%20recipe%22.%20Yet,%20the%20imprudent%20baker%20that%20I%20was,%20I%20tried%20a%20banana%20nut%20bread%20with%20some%20substitutions%20in%20the%20original%20recipe,%20that%20came%20out%20of%20the%20oven%20fabulous%E2%80%A6.%20not%20once%20or%20twice%20but%20several%20times!!!%20A%20few%20more%20attempts%20with%20other%20bakes%20came%20out%20well.%20The%20baker%20in%20me%20was%20on%20fire%20but%20little%20did%20I%20know%20that%20I%20was%20only%20on%20my%20way%20to%20mess%20up%20a%20few%20more%20cakes!!!%20Luck%20had%20changed%20again%20and%20I%20parted%20ways%20with%20baking.%3C/p%3E%3Cp%3EA%20few%20years%20after%20our%20big%20move%20back%20to%20India,%20I%20got%20a%20small%20Morphy%20Richards%20oven%20to%20be%20able%20to%20make%20veggie%20bakes,%20enchiladas,%20pasta%20etc.%20I%20was%20pretty%20happy%20with%20my%20oven.%20I%20decided%20to%20try%20my%20luck%20with%20my%20very%20trusted%20banana%20nut%20bread!!%20Voila!%20It%20came%20out%20great%20yet%20again!%20A%20few%20other%20cakes%20were%20tested%20and%20they%20tasted%20great%E2%80%A6..then%20came%20the%20call%20by%20Kitchen%20Aid%20asking%20home%20bakers%20to%20send%20their%20entires%20to%20Pro%20baker%202015!!%20Suddenly%20a%20burst%20of%20energy%20rose%20inside%20me%E2%80%A6..it%20was%20time%20to%20stop%20trying%20recipes%20and%20instead%20create%20some!!%20Too%20early%20to%20be%20so%20confident%20but%20I%20had%20some%20kind%20of%20gut%20feeling%20about%20getting%20this%20one%20right.%3C/p%3E%3Cp%3EThis%20whole%20grain%20apple%20cranberry%20bread%20needs%20a%20little%20introduction!%20An%20idea%20that%20captured%20my%20mind%20for%20a%20whole%20month%20now,%20a%20recipe%20that%20was%20developed%20over%20a%20week%20with%20a%20lot%20of%20reading%20on%20quick%20breads.%20I%20agree%20that%20the%20recipe%20is%20not%20very%20uncommon%20but%20when%20you%20develop%20something%20on%20your%20own%20with%20a%20lot%20of%20thinking%20going%20behind%20the%20recipe,%20it%20becomes%20very%20special%20to%20you!!%20And%20it%20becomes%20even%20more%20special%20%20when%20the%20risen%20cake%20does%20not%20collapse%20in%20front%20of%20your%20eyes,%20no%20power%20cuts%20during%20baking,%20both%20kids%20asleep%20during%20the%20entire%20prep,%20bake%20and%20cooling%20process%20(yay!).%20Was%20that%20luck%20or%20what??%20My%20sudden%20impulsive%20on%20the%20spot%20decision%20to%20reduce%20an%20egg%20and%20add%20yogurt%20instead%20worked%20very%20well%20too.%20I%20think%20it%20gave%20the%20bread%20a%20nice%20crumb.%20The%20sweet%20local%20apples%20pair%20beautifully%20with%20the%20slightly%20tart%20cranberries.%20Walnuts%20provide%20a%20nice%20crunch%20to%20this%20moist%20crumbly%20bread.%20The%20addition%20of%20whole%20wheat%20convinces%20you%20to%20reach%20for%20guilt%20free%20second%20servings!!%20It%20tasted%20even%20better%20the%20next%20day%20as%20the%20flavors%20matured.%20And%20I%20was%20on%20cloud%20nine%20when%20my%205%20year%20old%20girl%20said,%20%22Mama,%20when%20will%20you%20make%20this%20bread%20again?%22%3C/p%3E%3Cp%3EThis%20is%20my%20entry%20for%20Kitchen%20Aid's%20Probaker%202015!%20Come%20participate%20and%20have%20fun!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EGrease%20and%20flour%20a%208%201/2%20X%204%201/2%20X%202%203/4%20loaf%20pan.%20Line%20bottom%20with%20parchment.%20Preheat%20oven%20to%20175%20deg%20C.%3C/p%3E%3Cp%3ESift%20wheat%20flour,%20flour,%20baking%20powder%20thrice.%20Reserve.%3C/p%3E%3Cp%3EWith%20an%20electric%20beater%20cream%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20Add%20egg%20and%20mix%20well.%20Beat%20in%20vanilla%20bean%20powder%20followed%20by%20apple%20sauce%20and%20then%20the%20yogurt.%3C/p%3E%3Cp%3ENow%20add%20the%20reserved%20flour%20mixture%20and%20with%20the%20beater%20on%20low,%20mix%20just%20until%20incorporated.%20Do%20not%20over%20beat%20at%20this%20point.%3C/p%3E%3Cp%3EFold%20in%20the%20diced%20apples,%20cranberries%20and%20walnuts.%20The%20batter%20will%20be%20quite%20thick!%3C/p%3E%3Cp%3EPour%20batter%20into%20the%20prepared%20loaf%20pan%20and%20even%20out%20the%20top.%20Keep%20the%20pan%20on%20a%20cookie%20sheet%20and%20bake%20in%20the%20preheated%20oven%20for%2025%20minutes.%20After%2025%20minutes%20remove%20the%20loaf%20pan%20and%20place%20on%20to%20another%20empty%20loaf%20pan%20of%20the%20same%20size%20and%20bake%20for%20another%2025%20minutes%20or%20until%20tester%20comes%20out%20clean.%20Alternately%20you%20can%20bake%20at%20a%20lower%20temperature%20(165%20Deg%20C)%20until%20the%20tester%20comes%20out%20clean.%3C/p%3E%3Cp%3ELet%20the%20bread%20cool%20in%20the%20pan%20for%20about%2010%20minutes,%20then%20remove%20on%20to%20cooling%20rack%20to%20cool%20completely%20before%20slicing.%3C/p%3E%3Cp%3EMix%20the%20ingredients%20for%20the%20glaze%20and%20pour%20on%20top%20of%20the%20loaf%20bread.%20Let%20some%20glaze%20drip%20on%20the%20sides.%3C/p%3E%3Cp%3EServing:%3C/p%3E%3Cp%3ECut%20think%20slices%20and%20enjoy%20with%20your%20morning%20tea%20or%20coffee.%20The%20flavors%20mature%20the%20next%20day%20and%20the%20bread%20tasted%20even%20better%20making%20this%20a%20perfect%20make%20ahead%20dish%20for%20a%20brunch%20party.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3E*If%20not%20using%20the%20glaze,%20increase%20the%20sugar%20in%20the%20recipe%20to%201%20cup.%3C/p%3E%3Cp%3E*The%20bread%20stays%20well%20at%20room%20temperature%20for%201-2%20days%20only.%20If%20yours%20lasts%20longer%20then%20store%20in%20the%20refrigerator.%3C/p%3E%3Cp%3E*I%20think%20you%20can%20easily%20substitute%20the%20fresh%20fruit%20and%20dry%20fruits%20in%20the%20recipe%20with%20other%20ingredients%20of%20your%20choice.%20Let%20your%20imagination%20run%20wild!%3C/p%3E%3Cp%3E*You%20could%20add%20a%20pinch%20of%20salt%20to%20the%20batter.%20I%20didn't.%3C/p%3E%3Cp%3ERecipe%20for%20Apple%20Sauce-%3C/p%3E%3Cp%3E2%20medium%20apples,%20cored,%20peeled%20and%20diced%3C/p%3E%3Cp%3E1%20inch%20stick%20of%20cinnamon%3C/p%3E%3Cp%3E4%20cloves%3C/p%3E%3Cp%3E1%20TBS%20organic%20brown%20sugar%3C/p%3E%3Cp%3E2%20TBS%20water,%20if%20needed%3C/p%3E%3Cp%3E1/4%20to%201/2%20tsp%20lemon%20juice%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPut%20all%20the%20ingredients%20in%20a%20sauce%20pan%20and%20cook%20until%20tender%20and%20mushy.%20You%20can%20add%20a%20couple%20of%20tablespoons%20of%20water%20if%20needed.%20Fish%20out%20the%20spices%20and%20then%20mash%20with%20a%20potato%20masher%20or%20puree%20in%20your%20blender.%20Makes%20about%201%20cup.%20Store%20any%20left%20overs%20in%20the%20fridge.%3C/p%3E){kind=link}
