%20do%20not%20include%20air%20conditioning,%20and%20as%20such,%20temps%20in%20the%20mid-80's%20with%20humidity%20to%20match%20have%20many%20people%20moaning%20about%20the%20%22extreme%22%20weather.%20%20I,%20however,%20have%20been%20waking%20with%20a%20smile%20with%20no%20jacket%20required.%20%20I%20love%20living%20the%20day%20in%20tank%20tops%20and%20skirts%20and%20then%20leaving%20for%20the%20evening%20knowing%20a%20chill%20is%20not%20going%20to%20set%20in%20before%20I%20arrive%20home.%3C/p%3E%3Cp%3EThat%20being%20said,%20I'm%20not%20opposed%20to%20a%20staple%20of%20fall%20and%20a%20family%20favorite%20-%20pumpkin.%20%20Actually,%20my%20pantry%20is%20stocked%20year%20round%20with%20cans%20of%20Trader%20Joe's%20canned%20pumpkin,%20and%20we%20often%20enjoy%20Pumpkin%20Pancakes%20or%20even%20Pumpkin%20Cinnamon%20Rolls%20as%20treats%20in%20mid-July%20or%20over%20Spring%20Break.%3C/p%3E%3Cp%3ELuckily,%20though%20my%20stash%20of%20pumpkin%20may%20be%20dwindling,%20we%20had%20enough%20to%20get%20us%20through,%20and..,%20shopping%20at%20TJ's%20yesterday%20brought%20a%20most%20welcome%20sight:%3C/p%3E%3Cp%3EI'm%20still%20not%20admitting%20to%20the%20arrival%20of%20autumn,%20but%20I%20will%20admit%20to%20becoming%20just%20a%20little%20addicted%20to%20our%20carpool%20treat%20last%20week%20-%20the%20esteemed%20Pumpkin%20Banana%20Bread.%20%20Filled%20with%20generous%20flavors%20of%20cinnamon%20and%20pumpkin,%20the%20bread%20follows%20a%20somewhat%20traditional%20path.%20%20Add%20in%20a%20couple%20of%20those%20over-ripe%20bananas%20sitting%20on%20your%20counter,%20and%20you%20have%20a%20moist,%20tender%20bread%20that%20would%20be%20perfect%20as%20a%20fall%20treat%20if%20one%20were%20considering%20greeting%20the%20season%20with%20a%20welcome.%20%20As%20we%20are%20still%20celebrating%20summer%20though,%20I'm%20proclaiming%20this%20bread%20the%20perfect%20back%20to%20summer%20school%20treat,%20just%20perfect%20for%20the%20lunchbox.%3C/p%3E%3Cp%3EPumpkin%20Banana%20Nut%20Bread%3C/p%3E%3Cp%3Eadapted%20from%20King%20Arthur%3C/p%3E%3Cp%3EMade%20with%20whole%20grain%20flour%20along%20with%20a%20touch%20of%20ground%20flax,%20then%20combined%20with%20vitamin%20rich%20pumpkin%20and%20banana,%20this%20moist%20bread%20was%20a%20carpool%20snack%20for%20Liv%20and%20her%20girlfriends%20that%20I%20didn't%20fee%20guilty%20serving.%20%20Greeted%20a%20few%20days%20later%20with,%20%22Do%20you%20have%20more%20of%20that%20awesome%20bread?%22%20comments,%20I'd%20say%20it%20is%20definetly%20teenage%20girl%20approved.%3C/p%3E%3Cp%3ESpray%20an%208%201/2%20x%204%201/2%20loaf%20pan%20with%20cooking%20spray%20and%20set%20aside%20%20(alternatively,%20use%20smaller%20loaf%20pans%20or%20even%20muffin%20tins).%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%BA.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20the%20first%209%20ingredients%20(vegetable%20oil%20through%20vanilla%20extract).%20%20Whisk%20vigorously%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20larger%20bowl,%20combine%20the%20flours,%20baking%20powder%20and%20baking%20soda,%20salt%20and%20cinnamon.%20%20Again,%20whisk%20to%20combine.%20%20Sprinkle%20the%20walnuts%20over%20the%20top,%20then%20add%20the%20pumpkin%20mixture.%3C/p%3E%3Cp%3EUsing%20a%20wooden%20spoon,%20and%20with%20a%20light%20hand%20give%20the%20mixture%20about%2010%20good%20stirs.%20%20%20If%20the%20mixture%20seems%20too%20dry,%20add%20a%20tablespoon%20or%20two%20of%20water%20as%20necessary,%20alternatively,%20if%20it%20is%20too%20wet,%20add%20a%20tablespoon%20or%20two%20of%20flour%20***(see%20note%20below).%20%20Continue%20stirring%20until%20the%20batter%20is%20just%20barely%20incorporated.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20pans%20and%20sprinkle%20with%20raw%20sugar%20as%20desired%20-%20Liv%20say%20more%20is%20better,%20and%20all%20of%20the%20girls%20commented%20on%20how%20they%20loved%20the%20%22crunch%22%20on%20the%20top.%3C/p%3E%3Cp%3EBake%20the%208%201/2%20x%204%201/2%20size%20pan%20for%20approximately%2055%20minutes%20(keep%20checking,%20may%20require%20up%20to%2070%20min),%20or%20until%20a%20toothpick%20tested%20in%20the%20center%20of%20the%20loaf%20comes%20out%20clean%20and%20the%20loaf%20is%20golden%20brown.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20then%20the%20pans,%20and%20place%20on%20a%20wire%20rack%20to%20cool.%20%20Enjoy%20alone,%20or%20for%20an%20even%20more%20tempting%20treat%20top%20with%20a%20little%20whipped%20butter.%3C/p%3E%3Cp%3E***Liv%20Life%20Note:%20%20We%20made%20this%20bread%203%20times.%20%20The%20first%20attempt%20was%20made%20with%20a%20very%20watery%20can%20of%20pumpkin,%20and%20as%20I%20followed%20the%20recipe%20exactly,%20the%20batter%20was%20just%20slightly%20thicker%20than%20pancake%20batter...%20not%20quite%20right%20for%20a%20quick%20loaf%20and%20the%20loaf%20never%20baked%20all%20the%20way%20through%20before%20it%20started%20burning%20on%20the%20outside.%20%20My%20fault,%20as%20there%20was%20just%20way%20too%20much%20liquid%20and%20I%20didn't%20adjust.%3C/p%3E%3Cp%3EOn%20our%20next%20attempt,%20the%20can%20of%20pumpkin%20had%20far%20less%20liquid,%20and%20the%20texture%20came%20out%20perfectly.%3C/p%3E%3Cp%3EHence...%20the%20amount%20of%20liquid%20needed%20will%20vary%20based%20on%20the%20how%20watery%20your%20particular%20cup%20of%20pumpkin%20puree%20is.%20%20Try%20to%20adjust%20accordingly.%20%20I%20prefer%20a%20batter%20that%20is%20thicker%20for%20quick%20breads%20as%20it%20tends%20to%20give%20me%20a%20bit%20more%20rise.%3C/p%3E%3Cp%3EPans%20-%20using%20different%20pan%20sizes%20will%20require%20different%20baking%20times.%20%20For%20the%208%201/2%20x%204%201/2%20size%20loaf%20pan,%20we%20came%20out%20at%20about%201%20hour,%203%20mini%20loaf%20pans%20required%2027-35%20%20min.%3C/p%3E){kind=link}
