.%20I%20was%20looking%20at%20the%20food%20section%20on%20Yahoo%20and%20saw%20this%20post%20come%20up.%20I%20thought%20it%20would%20be%20a%20great%20healthier%20cookie,%20and%20it%20just%20so%20happened%20that%20today%20would%20be%20oatmeal%20cookie%20day.%3C/p%3E%3Cp%3EI%20saw%20that%20this%20recipe%20had%20milk%20in%20it,%20so%20I%20would%20probably%20sub%20the%20milk%20for%20soy.%20I%20would%20also%20use%20ghee%20for%20the%20butter,%20since%20Gary%20didn't%20have%20a%20reaction%20to%20it%20like%20he%20does%20milk%20and%20butter.%20Then%20I%20had%20the%20idea%20to%20use%20the%20coconut%20oil%20and%20coconut%20milk%20I%20had%20on%20hand%20in%20my%20pantry%20already.%20I%20suggested%20this%20to%20Gary,%20and%20he%20thought%20it%20sounded%20good%20as%20well.%20My%20other%20sub%20was%20making%20this%20with%20these%20huge%20plump%20raisins%20we%20had,%20since%20raisins%20ARE%20his%20favorite!%20My%20cookies%20didn%E2%80%99t%20quite%20spread%20like%20the%20original%20recipe,%20probably%20because%20my%20raisins%20were%20huge%20and%20didn%E2%80%99t%20allow%20it%20to%20spread%20too%20much.%3C/p%3E%3Cp%3EIt%20smelled%20absolute%20divine%20while%20baking,%20and%20Gary%20couldn%E2%80%99t%20wait%20to%20try%20one.%20Gary%20ate%20one%20and%20loved%20it,%20then%20proceeded%20to%20grab%20another%20one.%20He%20thought%20it%20had%20a%20nice%20coconut%20essence%20to%20it.%3C/p%3E%3Cp%3EWhole%20Wheat%20Oatmeal%20Raisin%20Cookies%3C/p%3E%3Cp%3Eadapted%20from:%20A%20Bicycle%20Built%20for%20Two%3C/p%3E%3Cp%3Eingredients:%3C/p%3E%3Cp%3Edirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0%20F.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20mix%20the%20whole-wheat%20flour,%20baking%20soda,%20baking%20powder%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20your%20stand%20mixer,%20mix%20the%20brown%20sugar%20and%20granulated%20sugar%20together.%20Next,%20cream%20the%20sugar%20with%20the%20coconut%20oil%20until%20light%20and%20fluffy.%20Add%20in%20the%20egg,%20vanilla%20and%20milk%20and%20mix%20until%20smooth.%3C/p%3E%3Cp%3EMix%20the%20dry%20mixture%20into%20the%20wet%20until%20blended%20well.%20Once%20smooth,%20stir%20in%20the%20oats%20and%20the%20raisins.%3C/p%3E%3Cp%3EGrease%20a%20cookie%20sheet.%20Using%20a%20tablespoon%20size%20cookie%20scoop,%20scoop%20the%20dough%20onto%20the%20sheet%20and%20place%202%20inches%20apart.%3C/p%3E%3Cp%3EBake%20in%20preheated%20oven%20for%20about%2012-15%20minutes%20or%20until%20edges%20are%20golden%20brown.%3C/p%3E%3Cp%3EMakes%20about%202%20dozen%20cookies%20(I%20got%2026).%3C/p%3E){kind=link}
