This morning I woke up bright and early at 6:15 in a great mood! Why is it that I can never sleep in on my days off, but when I have to get up early to make it to the gym before work I feel like I could sleep for hours?!

%3C/p%3E%3Cp%3EThe%20mix%20was%20easy%20to%20make,%20and%20I%20was%20excited%20it%20didn%E2%80%99t%20call%20for%20eggs,%20because%20we%E2%80%99re%20out!%3C/p%3E%3Cp%3EIn%20to%20the%20skillet%20they%20went,%20until%20bubbly%E2%80%A6%3C/p%3E%3Cp%3Eand%20then%20FLIP!%3C/p%3E%3Cp%3EI%20made%20myself%20a%20stack%20of%204%20pancakes,%20topped%20with%20two%20strawberries%20from%20my%20own%20yard!%3C/p%3E%3Cp%3EOne%20tablespoon%20of%20Grade%20B%20maple%20syrup%20on%20the%20side%20for%20occasional%20dips!%3C/p%3E%3Cp%3EThese%20pancakes%20had%20what%20every%20perfect%20stack%20should%20have%20%E2%80%93%20crisp%20edges%20and%20a%20doughy%20center.%20YUM!%3C/p%3E%3Cp%3EThe%20flavor%20was%20great.%20I%20didn%E2%80%99t%20taste%20the%20Apple%20Cider%20Vinegar,%20and%20since%20I%20added%201%20tsp.%20of%20vanilla%20to%20the%20batter,%20there%20was%20a%20slight%20hint%20of%20funnel%20cake!%3C/p%3E%3Cp%3EThe%20texture%20was%20good.%20Doughy%20and%20chewy.%3C/p%3E%3Cp%3EBut%20here%E2%80%99s%20my%20one%20complaint.%3C/p%3E%3Cp%3EI%20ate%20these%20pancakes%20at%208:15,%20and%20now%20three%20hours%20later,%20I%20am%20STARVING!!!!%3C/p%3E%3Cp%3EAND%20I%20haven%E2%80%99t%20even%20been%20to%20the%20gym%20yet!%20Granted%20I%E2%80%99ve%20been%20knocking%20out%20school%20work,%20and%20using%20the%20ol%E2%80%99%20noggin,%20but%20dang!%20I%20should%20have%20beefed%20up%20the%20batter%20with%20chia%20and%20oats%20and%20protein.%3C/p%3E%3Cp%3EOR%20I%20should%20have%20topped%20these%20babies%20with%20yogurt.%20There%20just%20wasn%E2%80%99t%20enough%20protein%20to%20hold%20me%20over.%20I%20like%20my%20breakfast%20to%20leave%20me%20a%20little%20bit%20hungry%20by%2011:30,%20so%20I%20have%20my%20snack,%20and%20then%20hold%20me%20over%20until%20lunch%20at%201pm.%20Being%20this%20hungry%20at%2011:15%20makes%20me%20want%20to%20eat%20a%20giant%20pile%20of%20french%20fries!%20(Which%20thankfully%20we%20don%E2%80%99t%20have%20at%20our%20house!)%3C/p%3E%3Cp%3EBut%20overall,%20I%20would%20definitely%20recommend%20this%20mix.%20They%20were%20very%20yummy%20gluten%20free%20pancakes,%20and%20if%20you%20can%E2%80%99t%20do%20corn%20then%20you%E2%80%99re%20in%20luck!%20They%E2%80%99re%20corn%20free%20too!%20And%20if%20you%20can%E2%80%99t%20do%20dairy,%20then%20you%20can%20use%20a%20milk%20substitute.%20Yay!%3C/p%3E%3Cp%3EAlright,%20back%20to%20school%20work.%20I%E2%80%99m%20working%20on%20a%20discussion%20question:%20If%20I%20were%20an%20Indian%20in%20North%20America%20between%2015,000%20years%20ago%20and%20AD%201500,%20would%20I%20have%20rather%20been%20a%20hunter-gatherer%20or%20a%20farmer?%3C/p%3E%3Cp%3ETough%20question.%20But%20I%20definitely%20would%20have%20been%20gluten%20free!%3C/p%3E){kind=link}
