.%20We%20left%20well%20before%20dawn,%20and%20there%20was%20only%20just%20enough%20light%20to%20see%20through%20the%20hard%20drizzle%20when%20we%20parked%20the%20car.%20We%20set%20off%20with%20bags%20and%20buckets%20for%20a%20relatively%20easy%20hike,%20a%20few%20miles%20down%20a%20smooth%20trail,%20and%20then%20there%20was%20the%20first%20chanterelle%20-%20just%20sitting%20there,%20growing%20right%20next%20to%20the%20road.%3C/p%3E%3Cp%3EAs%20we%20went%20deeper%20into%20the%20woods,%20we%20found%20them%20everywhere!%20They%20seem%20to%20favor%20the%20places%20close%20to%20tree%20stumps%20and%20live%20trees,%20without%20too%20much%20undergrowth%20(other%20spots%20were%20carpeted%20in%20ferns,%20and%20there%20were%20no%20chanterelles%20there).%20We%20found%20most%20of%20them%20in%20the%20wetter%20spots%20-%20yes,%20even%20in%20the%20same%20forest,%20one%20spot%20can%20be%20considerably%20wetter%20than%20a%20spot%20just%20a%20few%20feet%20away%20-%20and%20they%20didn't%20hide%20underneath%20logs%20and%20such%20the%20way%20that%20some%20other%20mushrooms%20do.%20There'd%20be%20dark%20brown%20leaf%20litter%20and%20the%20yellow-orange%20mushroom%20standing%20bold%20against%20it.%3C/p%3E%3Cp%3EI%20understood%20pretty%20soon%20why%20mushroomers%20guard%20their%20spots%20so%20jealously;%20the%20mushrooms%20make%20so%20little%20attempt%20to%20hide%20themselves%20that%20there%20would%20be%20none%20left%20for%20anyone%20if%20the%20word%20got%20out%20where%20they%20were.%3C/p%3E%3Cp%3EBy%20the%20end%20of%20the%20day,%20our%20experienced%20guide%20had%20scored%20just%20over%20ten%20pounds,%20and%20Keith%20and%20I%20had%20bagged%20about%20half%20that.%20Had%20it%20been%20earlier%20in%20the%20season,%20we%20would've%20gotten%20plenty%20more,%20but%20I'm%20thrilled%20with%20what%20we%20got!%20We%20had%20a%20wonderful%20time%20tromping%20around%20in%20the%20woods,%20and%20so%20far%20we're%20enjoying%20ourselves%20just%20as%20much%20eating%20these%20delicacies%20in%20our%20warm%20dry%20house.%20A%20couple%20of%20them%20even%20found%20their%20way%20into%20our%20scrambled%20eggs%20this%20morning.%3C/p%3E%3Cp%3EBut%20I%20spent%20the%20afternoon%20turning%20the%20bulk%20of%20them%20into%20duxelles.%20This%20is%20a%20lovely%20way%20to%20preserve%20mushrooms%20of%20any%20kind;%20the%20French%20use%20it%20to%20stuff%20meats%20and%20vegetables%20or%20to%20spread%20on%20omelettes,%20and%20the%20British%20use%20it%20for%20Beef%20Wellington.%20I%20now%20have%20a%20pint%20and%20a%20half%20of%20luxurious%20chanterelle%20duxelles,%20which%20I%20intend%20to%20stir%20into%20risottos%20and%20which%20will%20probably%20find%20its%20way%20into%20the%20cornbread%20stuffing%20and%20the%20gravy%20this%20Thanksgiving.%20(And%20now%20I'm%20all%20on%20fire%20to%20make%20a%20Beef%20Wellington%20too.)%3C/p%3E%3Cp%3EGo%20get%20your%20own%20delicious%20mushrooms%20-%20chanterelles%20are%20the%20best%20but%20use%20whatever%20edible%20ones%20you%20have%20available%20-%20and%20make%20up%20a%20batch%20of%20duxelles.%20It'll%20give%20a%20rich%20boost%20of%20earthy%20flavor%20to%20almost%20anything.%20Here's%20my%20recipe,%20adapted%20from%20Well%20Preserved%20by%20Eugenia%20Bone.%3C/p%3E%3Cp%3EGet%20down%20your%20biggest,%20heaviest%20skillet%20and%20heat%201%20Tbsp%20olive%20oil%20in%20it.%20Add%201/3%20the%20mushrooms%20and%20onions%20and%20saute;%20the%20mushrooms%20will%20let%20out%20a%20good%20deal%20of%20liquid,%20so%20keep%20cooking%20until%20the%20liquid%20evaporates.%20Transfer%20to%20a%20clean%20bowl,%20add%20another%201%20Tbsp%20olive%20oil%20and%20half%20the%20remaining%20onion%20and%20mushrooms.%20Saute%20until%20the%20liquid%20evaporates,%20transfer%20to%20the%20bowl,%20then%20repeat%20with%20the%20remaining%20olive%20oil,%20onion,%20and%20mushrooms.%20When%20the%20last%20batch%20is%20cooked%20through,%20put%20the%20first%20two%20batches%20back%20in%20the%20skillet.%3C/p%3E%3Cp%3EAdd%20the%20whole%20sprig%20of%20thyme%20and%20all%20the%20other%20ingredients.%20Simmer,%20stirring%20occasionally,%20until%20the%20mushrooms%20have%20absorbed%20all%20the%20liquid;%20they%20should%20be%20a%20thick%20chunky%20paste%20by%20now.%20Fish%20out%20the%20thyme%20sprig%20and%20discard.%3C/p%3E%3Cp%3ESpoon%20the%20duxelles%20into%20clean%20jars%20and%20refrigerate%20or%20freeze.%20You%20can%20also%20spoon%20it%20into%20ice%20cube%20trays%20and%20freeze%20into%20small%20servings,%20which%20can%20be%20added%20to%20gravy,%20pasta,%20eggs,%20etc.%20or%20just%20heated%20to%20thaw%20and%20spread%20on%20toast.%20If%20you%20want%20to%20save%20the%20duxelles%20in%20the%20fridge%20for%20more%20than%20a%20day%20or%20two,%20pack%20it%20densely%20into%20the%20jar%20with%20as%20few%20air%20pockets%20as%20possible,%20then%20cover%20it%20with%20olive%20oil%20and%20seal.%20The%20oil%20on%20top%20will%20keep%20it%20fresher%20for%20longer.%3C/p%3E){kind=link}
