%20to%20be%20creative%20on%20a%20daily%20basis,%20and%20work%20within%20the%20limits%20of%20what%20is%20in%20season%20and%20available%22%20And%20isn't%20that%20just%20the%20best%20way%20to%20eat?%20eat%20locally%20and%20have%20ingredients%20at%20their%20best?%3C/p%3E%3Cp%3EOn%20the%20day%20we%20arrived,%20hungry%20after%20a%20day%20of%20mountain%20biking%20in%20Riverside%20State%20Park,%20WA,%20the%20Bistro%20was%20bustling%20with%20happy%20diners.%20We%20were%20shown%20to%20our%20seats%20by%20Heather%20Ann%20and%20soon%20we%20had%20cold%20water%20for%20thirsty%20throats%20and%20quickly%20chose%20a%20glass%20of%20wine%20each.%3C/p%3E%3Cp%3ETheir%20famous%20popovers%20appeared,%20light%20as%20a%20cloud,%20accompanied%20by%20lavender%20butter...%20mmm!%20A%20taste%20of%20summer.%3C/p%3E%3Cp%3Elight%20as%20a%20cloud%20Popovers%3C/p%3E%3Cp%3EMellow%20with%20a%20few%20sips%20of%20wine%20(we%20had%20empty%20tummies!)%20we%20pondered%20over%20menu%20choices...%20As%20a%20nod%20to%20healthy%20dining,%20we%20chose%20Pea%20Vine%20Salad%20-%20a%20refreshing%20combination%20of%20English%20peas,%20pea%20vine%20tendrils,%20arugula...%20%20topped%20with%20a%20parmesan%20vinaigrette.%20Sharing%20it%20-%20(and%20Wild%20Sage%20plated%20it%20into%20two%20beautiful%20plates%20for%20us)%20so%20that%20we%20had%20tummy%20room%20for%20full%20meal%20deal.%20The%20pea%20puree%20was%20cool%20and%20fresh,%20contrasting%20well%20with%20the%20peppery%20arugula%20and%20salty%20parmigiano.%20Good%20start%20it%20was.%3C/p%3E%3Cp%3EMoving%20on%20to%20the%20meat%20of%20the%20matter,%20birthday%20girl%20splurged%20on%20Filet%20Mignon%20-%20tender,%20flavourful,%20melt%20in%20your%20mouth%20Double%20%22R%22%20signature%20northwest%20beef%20-%20on%20a%20bed%20of%20startlingly%20purple%20mash%20and%20playful%20crispy%20leeks%20on%20the%20side.%20The%20sauce%20was%20so%20good,%20we%20were%20glad%20for%20the%20mash%20so%20that%20could%20eat%20every%20drop%20of%20it.%3C/p%3E%3Cp%3EFilet%20Mignon%3C/p%3E%3Cp%3EI%20usually%20choose%20things%20that%20I%20don't%20cook%20and%20that%20Dry%20Aged%20Pork%20Loin%20Chop%20was%20just%20called%20my%20name.%20It's%20hard%20to%20get%20a%20well%20cooked%20(not%20well%20done)%20pork%20chop%20that%20is%20still%20juicy%20and%20doesn't%20have%20the%20texture%20of%20cardboard.%20Now,%20this%20Pork%20Chop%20was%20something%20else!%20First%20of%20all,%20it%20was%20HUGE.%20I%20have%20never%20eaten%20such%20a%20large%20chop,%20and%20it%20was%20well%20seasoned,%20juicy,%20resting%20on%20mashed%20purple%20potatoes...%20and%20topped%20with%20crispy%20pork%20belly!%20Oh%20my!Dry%20Aged%20Pork%20Loin%20Chop%3C/p%3E%3Cp%3EWhat%20amazing%20food!%20And%20contrary%20to%20our%20usual%20practice,%20we%20didn't%20swop%20plates%20-%20it%20was%20just%20too%20good,%20although%20we%20did%20sample%20bites%20of%20each%20other's%20entree.%20Thoroughly%20enjoyed%20it.%3C/p%3E%3Cp%3ESitting%20back%20after%20the%20plates%20were%20cleared%20away,%20we%20are%20back%20to%20the%20question%20we%20started%20this%20blog%20with...%20%20%22Why%20aren't%20they%20bringing%20the%20dessert%20menu?%22%20The%20reason%20was%20soon%20clear,%20when%20Heather%20Ann%20astutelydeduced%20which%20diner%20was%20the%20birthday%20girl%20and%20brought%20a%20slice%20of%20their%20%22Soon%20to%20be%20Famous%20Coconut%20Cream%20Layer%20Cake%22%20complete%20with%20candle.%20No%20singing%20thankfully!%20Big%20Smile%20from%20Birthday%20girl.%20That%20cake%20should%20really%20be%20%22Famous%22%20-%20light,%20not%20too%20sweet,%20a%20great%20ending%20to%20a%20fabulous%20dinner.%3C/p%3E%3Cp%3ESoon%20to%20be%20Famous%20Coconut%20Cream%20Layer%20Cake%20Thank%20you%20Tom%20(my%20partner%20is%20crime)%20and%20Heather%20Ann%20and%20Wild%20Sage%20for%20a%20truly%20memorable%20meal.%20We'll%20definitely%20be%20back.%3C/p%3E){kind=link}
