%20I%20am%20never%20sure%20if%20I%20can%20pull%20it%20off%20but%20after%20a%20little%20bit%20of%20research%20and%20trial%20and%20error%20I%20seem%20to%20end%20up%20with%20something%20we%20all%20love.%3C/p%3E%3Cp%3EThis%20year%20was%20no%20different%20except%20that%20Vika%20couldn%E2%80%99t%20settle%20on%20ONE%20cake%20%20she%20wanted.%20I%20also%20lacked%20the%20inspiration%20and%20skill%20to%20deliver%20on%20her%20requests%20until%20I%20stumbled%20upon%20something%20very%20special%20by%20Sweetapolita%20who%20is%20my%20number%20one%20stop%20for%20anything%20cake%20and%20confection%20related.%20Vika%20is%20a%20huge%20animal%20lover%20and%20has%20a%20really%20soft%20spot%20for%20puppies%20so%20when%20I%20saw%20these%20hand%20stamped%20cupcakes%20by%20Rosie%20of%20Sweetapolita%20I%20knew%20exactly%20what%20I%20needed.%20Rubber%20stamps!%20The%20great%20thing%20about%20these%20cupcakes%20is%20that%20depending%20on%20a%20stamp%20you%20can%20create%20a%20great%20variety%20of%20cupcakes%20toppers.%20You%20never%20have%20to%20repeat%20yourself.%3C/p%3E%3Cp%3EI%20was%20delighted%20with%20how%20they%20turned%20out.%20All%20my%20hard%20work%20paid%20off%20when%20I%20saw%20the%20excitement%20and%20joy%20in%20my%20daughter%E2%80%99s%20eyes!%20These%20cupcakes%20were%20just%20perfect%20for%20a%20little%20girl%E2%80%99s%20birthday%20party%20as%20the%20cake%20toppers%20themselves%20evoked%20images%20of%20a%20child%E2%80%99s%20drawings.%20Don%E2%80%99t%20you%20think?%20And%20the%20tea%20towel%20that%20served%20as%20a%20back%20drop%20was%20made%20using%20the%20%E2%80%9Cself-portraits%E2%80%9D%20of%20%20the%20children%20in%20Vika%E2%80%99s%20class!%20Here%20is%20one%20done%20by%20Vika.:-)%3C/p%3E%3Cp%3EYou%20can%20use%20any%20cake%20recipe%20and%20any%20frosting%20recipe%20but%20you%20do%20need%20fondant,%20never%20used%20rubber%20stamps,%20paste%20food%20colours%20and%20a%20small%20brush%20to%20make%20these.%20Here%20is%20what%20I%20did.%3C/p%3E%3Cp%3EA%20day%20(or%20a%20week%20ahead)%20ahead:%3C/p%3E%3Cp%3ERoll%20out%20fondant%20as%20thin%20as%20you%20can%20on%20an%20icing%20sugar%20dusted%20surface%20and%20cut%20out%20medallions%20to%20fit%20the%20diameter%20of%20your%20cupcakes.%20Make%20sure%20you%20dust%20your%20surface%20well%20with%20icing%20sugar%20as%20fondant%20tends%20to%20be%20pretty%20sticky.%20Lay%20them%20out%20and%20dry%20overnight.%20I%20live%20in%20England%20where%20it%E2%80%99s%20often%20rainy%20so%20I%20really%20struggled%20to%20get%20my%20toppers%20very%20dry,%20and%20at%20one%20point%20I%20had%20a%20humidifier%20going%20for%20a%20while%20to%20draw%20all%20the%20moisture%20out!%3C/p%3E%3Cp%3EAs%20soon%20as%20your%20fondant%20toppers%20are%20dry%20you%20can%20stamp%20them.%20I%20used%20paste%20food%20colour%20(Dusky%20Pink%20by%20Sugarflair)%20with%20just%20a%20drop%20of%20water%20in%20it,%20then%20I%20painted%20each%20stamp%20with%20a%20small%20paint%20brush%20and%20stamped%20the%20toppers.%20Rosie%20of%20Sweetapolita%20made%20a%20great%20tutorial%20on%20her%20website%20if%20you%20would%20like%20more%20details.%20If%20you%20have%20ever%20used%20a%20rubber%20stamp%20before%20you%20can%20quickly%20master%20this%20technique.%3C/p%3E%3Cp%3EIngredients%20for%20the%20cupcakes%20%7BMakes%2024%7D:%3C/p%3E%3Cp%3ECake%20Flour-%202%201/2%20cups/275%20gr%3C/p%3E%3Cp%3EBaking%20powder-%201tbsp.%3C/p%3E%3Cp%3ESalt-%201/2%20tsp.%3C/p%3E%3Cp%3ENote:%20Recipe%20adapted%20from%20Sweetapolita%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20F/160%20C.%20Sift%20the%20flour,%20baking%20powder%20and%20salt%20in%20a%20bowl,%20in%20a%20separate%20bowl%20mix%20together%20the%20egg,%20egg%20whites,%20kefir%20or%20buttermilk%20and%20vanilla%20seeds.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20whip%20together%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20To%20the%20bowl%20with%20butter%20mixture%20add%20flour%20mixture%20and%20egg%20mixture%20in%202%20or%203%20additions%20alternating%20them,%20starting%20with%20the%20flour%20mixture%20and%20finishing%20with%20the%20flour%20mixture.%3C/p%3E%3Cp%3EFill%20your%202%20lined%20muffin%20tins%20with%20cupcake%20batter%20about%202/3%20full%20and%20bake%20for%2015-17%20minutes%20until%20toothpick%20comes%20out%20clean.%3C/p%3E%3Cp%3EIngredients%20for%20Frosting:%3C/p%3E%3Cp%3EMascarpone%20(chilled)-%208%20oz/250%20gr%3C/p%3E%3Cp%3ECream%20Cheese(chilled)-%208%20oz/250%20gr%3C/p%3E%3Cp%3EButter(at%20room%20temperature)-%201/2%20cup/125%20gr%3C/p%3E%3Cp%3EIcing%20sugar-%201%201/2%20cups%3C/p%3E%3Cp%3EVanilla-%202%20tsp.%3C/p%3E%3Cp%3EPaste%20food%20colour%20(Dusky%20Pink%20by%20Sugarflair)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ECombine%20mascarpone,%20cream%20cheese,%20butter,%20vanilla,%20sugar%20and%20food%20colouring%20if%20using%20in%20a%20food%20processor%20and%20pulse%20just%20until%20smooth%20and%20creamy.%20Do%20not%20overprocess.%20It%E2%80%99s%20important%20that%20your%20mascarpone%20and%20cream%20cheese%20are%20cold%20from%20the%20fridge%20and%20butter%20is%20at%20r
