- 1 C. raw sugar
- 1 C. honey
- 1 vanilla bean, split in half and scraped
- 1/4 C. extra virgin olive oil
- 3/4 C. pumpkin puree*
- 1 1/4 C. all-purpose flour
- 3/4 C. buckwheat flour
- 1 t. baking soda
- 1 t. salt
- 1 t. cinnamon
- 1/2 t. ground cloves
- 1/2 t. freshly grated nutmeg
- 1 C. buttermilk
- 1/2 C. grated carrot
- 1/2 C. grated parsnip
- 3/4 C. dark chocolate chips/chunks
- confectionerâs sugar for dusting
