%3C/p%3E%3Cp%3EWhen%20I%20first%20decided%20to%20make%20this%20meal,%20I%20really,%20really%20thought%20that%20it%20had%20ground%20sausage%20in%20it.%20Really.%20I%20had%20convinced%20myself%20of%20that%20and%20decided%20to%20use%20ground%20venison%20sausage%20that%20friends%20gave%20us%20(hubs%20supplied%20our%20family%20with%20the%20ground%20venison,%20but%20we%20got%20the%20ground%20venison%20sausage%20from%20friends).%20I%20planned%20on%20this%20meal%20for%20a%20couple%20nights%20ago,%20but%20had%20to%20cancel%20that%20because%20we%20didn't%20have%20any%20tortillas.%20My%20loving%20hubby%20had%20kindly%20tossed%20them%20out,%20claiming%20they%20were%20%22hard%20as%20a%20rock%22%20or%20something.%20I%20managed%20to%20purchase%20some%20tortillas,%20so%20tonight%20was%20the%20night%20for%20this%20meal.%3C/p%3E%3Cp%3EAnd%20as%20I%20put%20everything%20in%20the%20slow%20cooker%20this%20morning,%20I%20perused%20through%20the%20ingredients%20&%20lo%20&%20behold%20there%20isn't%20any%20sausage!%20And%20it%20dawned%20on%20me%20that%20the%20eggs%20were%20protein%20enough,%20why%20add%20sausage?%20But%20the%20venison%20sausage%20had%20thawed%20in%20the%20fridge%20long%20enough%20and%20needed%20to%20get%20used,%20so%20I%20decided%20we'd%20use%20it%20anyhow.%3C/p%3E%3Cp%3ECrockpot%20Mexican%20Breakfast%20Casserole%20(sausage%20style)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ESpray%20bottom%20&%20inside%20of%206-qt%20crock%20with%20nonstick%20cooking%20spray.%20Line%20bottom%20of%20slow%20cooker%20with%202-3%20tortillas,%20torn%20into%20large%20pieces.%20Place%201/2%20of%20ground%20sausage%20on%20bottom%20of%20crock%20right%20on%20top%20of%20the%20torn%20tortilla%20pieces.%20Mix%20&%20blend%20eggs,%20milk,%202/3%20of%20the%20cheese,%20and%20the%20remaining%20ingredients%20in%20a%20large%20bowl.%20Pour%20half%20of%20the%20egg%20mixture%20on%20top%20of%20the%20sausage%20in%20the%20crock.%20Add%20a%20layer%20of%202-3%20more%20tortillas,%20torn%20in%20large%20pieces.%20Add%20remaining%20ground%20sausage%20on%20top%20of%20tortillas,%20and%20the%20remaining%20egg%20mixture%20on%20top%20of%20sausage.%20Add%20remaining%20tortillas,%20again%20torn%20in%20large%20pieces,%20on%20top%20of%20egg%20mixture.%20Sprinkle%20some%20of%20the%20remaining%20cheese%20on%20top%20of%20the%20tortillas.%20Cover%20slow%20cooker%20and%20cook%20on%20low%20for%205-6%20hours%20or%20high%203-4%20hours.%20Serve%20with%20rest%20of%20shreded%20cheese%20on%20top.%3C/p%3E%3Cp%3EI%20liked%20the%20flavor.%20It%20smelled%20heavenly%20when%20I%20came%20home%20from%20work.%20It%20was%20definitely%20different.%20Hubs%20said%20that%20it%20was%20all%20right,%20but%20the%20kids%20didn't%20eat%20any%20of%20it.%20Literally.%20Not%20any%20of%20it.%20They%20just%20weren't%20hungry%20and%20refused%20any%20source%20of%20substinance.%20So%20it%20was%20a%20good%20meal,%20like%20I%20said,%20different,%20and%20certainly%20worth%20considering%20for%20future%20reference.%3C/p%3E){kind=link}
