%20?%20For%20some%20reason,%20performing%20the%20whole%20creaming%20of%20the%20butter%20&%20sugar%20sounded%20like%20such%20hard%20work.%20I%20know,%20that's%20lame%20but%20I%20guess%20you%20get%20what%20you%20put%20into%20it,%20huh?%20This%20recipe%20came%20from%20my%20Elinor%20Klivans,%20Cupcake%20book.%20I've%20had%20the%20book%20for%20awhile%20but%20this%20is%20the%20first%20recipe%20I've%20made%20from%20it.%20Not%20a%20good%20first%20impression.%20Have%20you%20guys%20made%20any%20recipes%20from%20it?%20What%20did%20you%20think?%3C/p%3E%3Cp%3EBut%20now%20let%20me%20get%20to%20the%20icing.%20I%20have%20yet%20to%20find%20a%20chocolate%20icing%20that%20I'm%20crazy%20about.%20I've%20always%20dreamed%20about%20a%20smooth,%20glossy%20&%20creamy%20icing%20that%20has%20a%20deep%20chocolate%20flavor%20&%20color(but%20not%20necessarily%20a%20DARK%20chocolate....if%20that%20makes%20sense).%20All%20I've%20ever%20come%20across%20is%20really%20light%20brown%20icings%20that%20are%20somewhat%20gritty%20or%20rough%20with%20no%20glossiness%20whatsoever.%20My%20previous%20attempts%20have%20been%20delicious%20but%20not%20exactly%20what%20I've%20been%20looking%20for.%20I've%20made%20several%20that%20I%20really%20like%20but%20have%20been%20the%20sort%20of%20icing%20that%20sets%20into%20a%20semisoft%20fudge%20like%20consistency.%20I%20would%20like%20one%20that%20stays%20softer%20and%20creamier,%20ya%20know.%20This%20icing%20that%20I%20chose%20is%20from%20my%20Martha%20Stewart's%20cupcake%20book.%20It's%20a%20swiss%20meringue%20buttercream,%20which%20involves%20cooking%20but%20since%20I%20was%20going%20to%20be%20icing%20a%20%22delicious%22%20yellow%20fluffy%20cake,%20I%20wanted%20to%20make%20a%20special%20icing.%20If%20you%20are%20the%20sort%20of%20person%20who%20normally%20complains%20that%20icing%20is%20achingly%20sweet,%20then%20this%20is%20the%20icing%20for%20you.%20I%20can%20recognize%20that%20it's%20a%20delicious%20icing%20but%20it's%20NOT%20sweet%20enough%20for%20me.%20What%20it%20is%20is%20super%20duper%20silky%20&%20smooth.%20Sooo%20smooth.%20It's%20pipes%20like%20a%20dream.%20And%20sooo%20buttery%20and%20light.%20It's%20amazing%20how%20light%20the%20texture%20is%20considering%20it%20has%204%20sticks%20of%20butter%20in%20it.%20Yes,%20lot's%20of%20folks%20were%20crazy%20about%20the%20lack%20of%20sweetness%20in%20this%20icing.%20That%20was%20a%20plus%20in%20their%20book.%20So%20if%20you%20are%20into%20that%20sort%20of%20thing,%20then%20definitely%20try%20this%20icing.%20If%20you%20want%20just%20vanilla%20swiss%20meringue%20buttercream,%20then%20just%20don't%20add%20the%20melted%20chocolate.%20I%20think%20I%20might%20like%20that%20better.%3C/p%3E%3Cp%3EI%20took%201%20slice%20from%20this%20cake%20to%20take%20photos.%20Took%20a%20few%20bites%20&%20tossed%20that%20piece.%20The%20remainder%20of%20the%20cake%20ended%20up%20at%20work.%20They%20will%20eat%20anything.%3C/p%3E%3Cp%3EEasy-Mix%20Yellow%20Cupcake%20Batter%3C/p%3E%3Cp%3Efrom%20Elinor%20Klivans%20Cupcakes%3C/p%3E%3Cp%3ECombine%20egg%20whites,%20and%20sugar%20in%20the%20heatproof%20bowl%20of%20an%20electric%20mixer.%20Set%20bowl%20over%20a%20pan%20of%20simmering%20water.%20Whisk%20constantly%20until%20sugar%20has%20dissolved%20and%20whites%20are%20hot%20to%20the%20touch,%205%20to%207%20minutes.Transfer%20bowl%20to%20the%20electric%20mixer.%20Using%20the%20whisk%20attachment,%20mix%20on%20low%20speed,%20gradually%20increasing%20to%20high%20speed,%20until%20stiff,%20glossy%20peaks%20form,%20about%2010%20minutes%20and%20mixture%20is%20cool%20when%20you%20feel%20the%20bottom%20of%20the%20mixing%20bowl.%20At%20low%20speed,%20gradually%20add%20butter%20to%20egg%20white%20mixture,%20and%20beat%20until%20smooth.%20If%20it%20looks%20curdled,%20that's%20ok,%20just%20keep%20mixing%20and%20it%20will%20come%20together%20smoothly%20again.%20Add%20vanilla,%20melted%20cooled%20chocolate,%20and%20salt,%20and%20continue%20mixing%20until%20incorporated.%3C/p%3E){kind=link}
