%20summer%20afternoon%20extra%20special.%20I%20made%20this%20English%20tea-time%20treat%20in%20celebration%20of%20Elizabeth%20Goudge's%20well-loved%20juvenile%20fantasy%20book,%20%22The%20Little%20White%20Horse%22.%20This%20book%20is%20the%20current%20book%20selection%20for%20Cook%20the%20Books,%20the%20online%20foodie%20book%20club%20that%20was%20started%20last%20year%20by%20me%20and%20my%20bibliophilic%20blogger%20friends%20Johanna%20of%20Food%20Junkie,%20Not%20Junk%20Food%20and%20Deb%20of%20Kahakai%20Kitchen.%3C/p%3E%3Cp%3EFor%20each%20bimonthly%20round%20of%20Cook%20the%20Books%20we%20have%20chosen%20a%20book%20to%20read%20and%20then%20ruminate%20upon%20for%20culinary%20and%20bloggity%20inspiration.%20We%20have%20previously%20read%20and%20blogged%20about%20Sicilian%20cuisine%20for%20Lily%20Prior's%20novel%20%22La%20Cucina%22,%20explored%20Middle%20Eastern%20food%20for%20Diana%20Abu-Jaber's%20delicious%20memoir%20%22The%20Language%20of%20Baklava%22,%20and%20cooked%20up%20delights%20for%20bad%20boy%20chef%20Anthony%20Bourdain's%20book%20%22Kitchen%20Confidential%22.%3C/p%3E%3Cp%3EIt%20was%20my%20turn%20to%20host%20Cook%20the%20Books%20again%20and%20so%20I%20thought%20to%20change%20things%20up%20a%20bit.%20Goudge's%20book,%20%22The%20Little%20White%20Horse%22,%20is%20our%20first%20foray%20into%20the%20world%20of%20juvenile%20literature%20and%20fantasy%20and%20I%20found%20it%20to%20be%20a%20delightful%20escape%20into%20a%20world%20of%20coziness%20and%20comfort.%20Goudge's%20writing%20reminded%20me%20of%20my%20youthful%20devouring%20of%20George%20Macdonald's%20Curdie%20series%20and%20of%20reading%20C.S.%20Lewis'%20wonderful%20Narnia%20series%20as%20an%20older%20reader.%20Having%20similarly%20swallowed%20the%20Harry%20Potter%20series%20whole%20in%20reading%20them%20to%20my%20children%20(and%20reading%20ahead)%20I%20can%20see%20where%20author%20J.K.%20Rowling%20drew%20inspiration%20from%20Goudge's%20book,%20self-described%20by%20Rowling%20as%20one%20of%20her%20childhood%20favorites,%20for%20the%20mouthwatering%20Hogwarts%20feast%20scenes%20and%20tremendously%20sensual%20descriptions%20of%20train%20carts%20full%20of%20a%20vast%20array%20of%20Wizard%20sweets.%20I%20had%20thought%20that%20these%20feast%20scenes%20and%20colorful,%20descriptive%20character%20names%20were%20straight%20out%20of%20Charles%20Dickens'%20canon,%20but%20after%20reading%20%22The%20Little%20White%20Horse%22,%20I%20sensed%20the%20inspiration%20from%20this%20jewel%20of%20a%20novel%20and%20imagined%20the%20young%20J.K.%20snuggled%20up%20with%20it,%20reading%20and%20re-reading%20it%20during%20wintry%20Scottish%20blizzards.%3C/p%3E%3Cp%3EThe%20litany%20of%20English%20baked%20goods%20which%20emanated%20from%20Moonacre%20Manor's%20castle%20kitchen%20was%20what%20most%20intrigued%20me%20about%20Goudge's%20book.%20I%20enjoying%20researching%20fairy%20cakes,%20rock%20cakes,%20syllabub,%20and%20other%20tea-time%20treats.%20I%20decided%20to%20make%20a%20Saffron%20Cake,%20the%20culinary%20history%20of%20which%20is%20amply%20described%20in%20this%20blog%20post.%20I%20had%20some%20saffron%20in%20the%20spice%20cupboard%20which%20was%20fairly%20well%20aged%20from%20having%20been%20purchased%20for%20some%20special%20recipe%20of%20distant%20memory,%20as%20well%20as%20some%20leftover%20rosewater%20from%20another%20kitchen%20experiment,%20so%20I%20thought%20I%20would%20take%20a%20stab%20at%20this%20recipe%20for%20Golden%20Saffron%20Cake.%3C/p%3E%3Cp%3EAlas,%20in%20my%20attempts%20to%20convert%20this%20recipe%20to%20a%20gluten-free%20version%20and%20in%20perhaps%20having%20elderly%20saffron%20threads,%20my%20Golden%20Saffron%20Cake,%20though%20rather%20smart%20looking,%20turned%20out%20to%20be%20medicinal%20tasting%20and%20in%20my%20husband's%20words,%20like%20something%20that%20had%20been%20stashed%20away%20in%20Aunt%20Tilda's%20drawer%20of%20undergarments,%20next%20to%20the%20packet%20of%20moth%20balls.%20I%20don't%20even%20want%20to%20think%20about%20an%20elder%20Auntie's%20niceties%20when%20I'm%20noshing%20away.%20Or%20at%20all,%20for%20that%20matter.%20The%20cake%20had%20a%20lovely%20crumb,%20but%20it%20was%20inedible,%20and%20its%20golden%20remainder%20was%20handed%20over%20to%20our%20trusty%20kitchen%20hound,%20Martha,%20for%20disposal.%20So%20back%20to%20the%20Crispy%20Kitchen%20I%20went%20to%20figure%20out%20something%20else%20for%20the%20Cook%20the%20Books%20post.%3C/p%3E%3Cp%3EEnd%20of%20the%20school%20year%20madness%20got%20in%20the%20way,%20however.%20With%20two%20active%20teenagers%20around,%20there%20were%20music%20concerts%20to%20attend,%20softball%20and%20soccer%20games%20to%20squire%20the%20young%20'uns%20to,%20academic%20awards%20ceremonies%20(not%20to%20boast%20(too%20much)%20but%20those%20Jag%20girls%20are%20brains,%20don't%20you%20know),%20sports%20banquets,%20gardens%20to%20plant,%20etc.,%20etc.%20So%20my%20culinary%20artistry%20was%20stymied%20by%20various%20time%20constraints,%20so%20I%20do%20beg%20everyone's%20pardon%20who%20was%20waiting%20for%20the%20Cook%20the%20Books%20hostess%20to%20get%20with%20it%20and%20post%20already.%3C/p%3E%3Cp%3EAt%20last%20I%20found%20some%20unencumbered%20hours%20to%20spend%20by%20my%20oven,%20and%20decided%20to%20whip%20up%20some%20parkin.%20Parkin%20is%20a%20chewy%20gingerbread%20traditionally%20made%20in%20England's%20North%20Country%20with%20oats%20and%20plenty%20of%20ground%20ginger,%20then%20stashed%20away%20to%20ripen%20until%20it%20is%20sticky%20and%20moist.%20Again,%20I%20had%20to%20make%20my%20Parkin%20gluten-free,%20so%20I%20made%20a%20few%20adjustments%20to%20this%20recipe,%20and%20we%20enjoyed%20a%20square%20of%20parkin%20recently%20with%20a%20nice%20cuppa%20and%20a%20dollop%20of%20buttercream%20to%20fuel%20us%20up%20for%20an%20afternoon%20of%20yard%20work.%3C/p%3E%3Cp%3EHere's%20my%20adaptation%20of%20a%20hearty%20Yorkshire%20Parkin%20recipe:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EGrease%20a%209%20x%2012%20glass%20baking%20dish%20with%20shortening%20or%20butter.%3C/p%3E%3Cp%3EIn%20saucepan,%20heat%20together%20butter,%20brown%20sugar,%20molasses%20and%20corn%20syrup%20until%20butter%20is%20melted%20and%20sugar%20grains%20are%20smooth.%3C/p%3E%3Cp%3EStir%20together%20flour,%20baking%20soda,%20ginger,%20ground%20oats%20and%20xanthan%20gum.%20Add%20in%20melted%20butter-syrup%20mixture%20and%20stir%20until%20thoroughly%20mixed.%3C/p%3E%3Cp%3EStir%20in%20beaten%20eggs%20and%20blend%20thoroughly.%3C/p%3E%3Cp%3EPour%20into%20prepared%20baking%20dish.%3C/p%3E%3Cp%3EBake%2045%20minutes%20or%20until%20toothpick%20inserted%20in%20center%20of%20pan%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20completely%20in%20pan%20before%20serving.%20Ideally,%20parkin%20can%20be%20aged%20at%20room%20temperature%20in%20a%20closed%20tin%20least%20three%20days%20to%20one%20week%20before%20consuming,%20so%20that%20it%20has%20a%20chance%20to%20ripen%20and%20soften.%3C/p%3E%3Cp%3EMakes%20about%2015%20squares%20of%20parkin.%3C/p%3E%3Cp%3EI%20am%20delighted%20to%20report%20that%20Deborah%20Gaudin,%20of%20the%20British%20Elizabeth%20Goudge%20Society,%20will%20be%20judging%20the%20submissions%20for%20this%20round%20of%20Cook%20the%20Books%20after%20the%20June%2026%20deadline%20and%20can't%20wait%20to%20see%20what%20everyone%20has%20come%20up%20with.%20Be%20sure%20to%20check%20back%20at%20the%20Cook%20the%20Books%20blog%20to%20see%20our%20roundup%20of%20tasty%20%22Little%20White%20Horse%22%20inspirations.%3C/p%3E){kind=link}
