%3C/p%3E%3Cp%3EBut%20they%20were%20just%20making%20the%20wrong%20kind%20of%20salad.%20In%20the%20South,%20I%20see%20salads%20as%20some%20of%20the%20friendliest%20food%20out%20there.%20We%20take%20them%20to%20any%20and%20all%20social%20gatherings...potlucks,%20picnics,%20family%20BBQs,%20holiday%20get-togethers.%20We%20give%20them%20side%20dish%20status%20at%20Sunday%20dinner%20(and%20in%20the%20South,%20side%20dishes%20rule).%20We%20bring%20them%20to%20people%20when%20babies%20are%20born%20or%20when%20friends%20or%20family%20are%20lost.%20Sounds%20like%20a%20friendly%20thing%20to%20me.%3C/p%3E%3Cp%3ESalads%20are%20popular%20in%20the%20South%20and%20it's%20not%20just%20bowls%20of%20lettuce%20that%20I'm%20talking%20about.%20Potato%20salad,%20macaroni%20salad,%20bean%20salad,%20sweet%20pea%20salad,%20carrot%20and%20raisin%20salad,%20cold%20rice%20salads,%20fruit%20salad,%20jello%20salad,%20coleslaw,%20salads%20of%20marinated%20tomatoes%20or%20cucumbers%20marinated%20in%20vinegar%20and%20onions...lots%20of%20salads.%20I%20have%20to%20admit%20that%20it%20has%20taken%20me%20almost%20my%20entire%20life%20to%20warm%20up%20to%20many%20of%20these%20salads.%20And%20there%20are%20some%20in%20the%20list%20above%20that%20I%20won't%20touch%20(I%20love%20ya,%20but%20I'm%20not%20confessing%20which%20ones).%20Many%20popular%20southern%20salads%20are%20suspended%20in%20mayo.%20I%20have%20had%20to%20grow%20into%20mayo...and%20I'm%20still%20not%20100%25%20there%20yet.%20If%20I%20think%20about%20it%20too%20hard,%20well%20I%20just%20try%20not%20to.%3C/p%3E%3Cp%3ESince%20I've%20done%20coleslaw%20and%20marinated%20tomatoes,%20I%20thought%20I'd%20go%20a%20more%20traditional%20route.%20Below%20are%20a%20couple%20of%20my%20favorite%20homemade%20salad%20dressings.%20Mostly,%20I%20use%20them%20on%20green%20salads,%20but%20they%20have%20multiple%20personalities.%3C/p%3E%3Cp%3EA%20quick%20note:%20when%20I%20make%20salad%20dressings,%20or%20and%20sauce%20or%20condiment,%20it%20is%20definitely%20play%20time%20for%20me.%20The%20measurements%20in%20the%20recipes%20below%20are%20my%20best%20estimate.%20The%20measurements%20that%20are%20in%20the%20final%20product%20are%20by%20taste.%3C/p%3E%3Cp%3EBalsamic%20Vinaigrette%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace,%20adapted%20from%20a%20friend's%20recipe%3C/p%3E%3Cp%3E3/4%20c%20olive%20oil%3C/p%3E%3Cp%3E1/4%20c%20balsamic%20vinegar%3C/p%3E%3Cp%3E1/2%20T%3C/p%3E%3Cp%3E1%20tsp%20Dijon%20mustard%3C/p%3E%3Cp%3E1/2%20tsp%20dried%20oregano%3C/p%3E%3Cp%3E1%20clove%20roasted%20garlic%20or%20a%20touch%20of%20minced%20raw%20garlic%20(to%20taste)%20(garlic%20could%20be%20optional)%3C/p%3E%3Cp%3Esalt%20and%20pepper%20to%20taste%20(if%20needed)%3C/p%3E%3Cp%3EAdd%20everything%20to%20a%20mixing%20bowl%20and%20whisk%20thoroughly.%20Or,%20add%20to%20a%20jar%20with%20lid%20and%20shake.%20Makes%20about%201%20cup%20of%20dressing.%3C/p%3E%3Cp%3EWhat%20you'll%20need.%20The%20garlic%20can%20be%20roasted%20or%20not.%20If%20you%20use%20raw%20garlic,%20don't%20use%20much...it's%20strong.%20Or,%20skip%20the%20garlic.%20You're%20gonna%20do%20what%20you%20want%20anyway,%20right?%20Oh,%20and%20where%20did%20my%20Dijon%20mustard%20run%20off%20to?%3C/p%3E%3Cp%3EAdd%20everything%20to%20a%20bowl%20and%20whisk.%3C/p%3E%3Cp%3EDrizzle%20over%20salads,%20tomatoes,%20grilled%20chicken,%20use%20as%20a%20marinade%20for%20grilled%20chicken,%20use%20as%20a%20bread%20dip.%20If%20making%20ahead,%20you'll%20have%20to%20rewhisk%20before%20using.%20It'll%20separate.%3C/p%3E%3Cp%3ECreamy%20Garlic%20Dressing%20(or%20Dip)%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace,%20adapted%20from%20a%20friend's%20recipe%3C/p%3E%3Cp%3EWhisk%20all%20ingredients%20except%20the%20cheese%20together%20in%20a%20bowl.%20This%20can%20also%20be%20mixed%20in%20a%20food%20processor%20or%20blender.%20Add%20the%20cheese%20and%20mix%20well.%20Taste%20to%20see%20if%20more%20garlic,%20lemon%20juice,%20salt,%20or%20pepper%20is%20needed.%20Adjust%20consistency%20if%20needed%20by%20adding%20more%20liquid%20(to%20thin)%20or%20more%20mayo%20or%20cheese%20(to%20thicken).%20Best%20if%20made%20the%20day%20before.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Creamy%20Garlic%20Dressing.%20You%20may%20or%20may%20not%20need%20salt.%20I%20usually%20don't%20add%20any.%20Depends%20on%20how%20salty%20your%20cheese%20is.%20Taste%20first.%20Here,%20I%20added%20lemon%20juice%20to%20the%20half%20and%20half,%20which%20basically%20makes%20buttermilk.%20But,%20the%20title%20%22Creamy%20Buttermilk%20Garlic%20Dressing%22%20is%20just%20too%20dang%20long%20and%20fussy.%3C/p%3E%3Cp%3EI%20like%20to%20use%20roasted%20garlic.%20(How%20to%20roast%20garlic)%20But%20sometimes%20roasting%20garlic%20ain't%20gonna%20happen.%20Like%20when%20it's%20100%20degrees%20out.%20Then%20I%20use%20raw%20minced%20garlic%20or%20garlic%20paste%20(comes%20in%20a%20tube).%20But%20much,%20much%20less.%20By%20the%20way,%20roasted%20garlic%20is%20good%20just%20spread%20on%20toasted%20bread.%20Oooo...top%20a%20salad%20with%20that!%3C/p%3E%3Cp%3EAdd%20everything%20but%20the%20Parmesan%20cheese%20to%20a%20bowl%20and%20whisk%20away.%3C/p%3E%3Cp%3EAdd%20in%20the%20cheese.%20If%20you%20don't%20like%20the%20consistency,%20add%20more%20liquid%20(milk,%20cream,%20half%20and%20half)%20to%20thin.%20Add%20more%20mayo%20or%20cheese%20to%20thicken.%20It's%20not%20gonna%20hurt.%20I%20promise.%3C/p%3E%3Cp%3EServe%20as%20a%20dressing%20for%20salad.%20Make%20it%20thick%20and%20use%20as%20a%20veggie%20dip.%20Or%20use%20as%20a%20dressing%20for%20pasta%20salad.%20Or%20just%20use%20it%20in%20place%20of%20what%20you'd%20use%20ranch%20dressing%20for.%3C/p%3E){kind=link}
