%20I%20have%20never%20realised%20that,%20and%20after%20looking%20through%20my%20photos...yes,%20indeed%20most%20of%20them%20looked%20like%20they%20were%20covered%20with%20a%20generous%20layer%20of%20pork%20floss,%20lolz!%3C/p%3E%3Cp%3EIt%20was%20the%20same%20thing%20when%20I%20unmolded%20this%20Yuja%20Cha%20Chiffon%20;)%3C/p%3E%3Cp%3EI%20bought%20a%20bottle%20of%20Korean%20Yuzu%20Tea%20or%20Yucheong%20or%20Yuja-Cha%20%E6%9F%9A%E5%AD%90%E8%8C%B6%20jam.%20This%20marmalade-like%20syrup%20is%20made%20from%20thinly%20sliced%20citrus%20fruit%20called%20Yuzu.%20When%20mixed%20with%20hot%20water%20you%20get%20a%20beverage%20known%20as%20Yuja%20Cha.%20I%20like%20adding%20lots%20of%20ice%20to%20turn%20it%20to%20a%20icy,%20refreshing%20cold%20drink,%20excellent%20to%20quench%20my%20thirst%20during%20the%20hot%20afternoons.%3C/p%3E%3Cp%3EI%20didn't%20have%20much%20luck%20making%20chiffon%20cakes%20lately.%20I%20under-baked%20my%20earlier%20attempt%20on%20a%20coffee%20chiffon,%20and%20upon%20unmolding,%20the%20cake%20sank%20like%20the%20Titanic,%20lopsided.%20After%20cutting%20a%20slice%20of%20the%20cake,%20the%20pathetic%20looking%20'ring'%20reminded%20me%20very%20much%20of%20the%20structure%20at%20the%20Marina%20Barrage.%20It%20was%20really%20amazing%20that%20even%20though%20with%20the%20undesirable%20outcome,%20we%20wolf%20down%20half%20of%20the%20cake%20minutes%20later.%3C/p%3E%3Cp%3EI%20had%20better%20luck%20with%20this%20Yuja%20Cha%20version.%20It%20didn't%20collapse,%20in%20fact%20it%20rose%20beautifully%20initially,%20but%20it%20started%20sinking%20in%20the%20oven%20when%20there%20was%20still%20another%2010mins%20before%20the%20baking%20time%20was%20up%20:'(%3C/p%3E%3Cp%3ECan%20you%20spot%20the%20dense%20layer%20at%20the%20bottom%20of%20the%20cake?%20I%20can%20either%20blame%20my%20oven%20for%20the%20unstable%20temperature,%20or,%20it%20could%20really%20be%20due%20to%20the%20whisking%20of%20the%20egg%20whites.%20I%20may%20have%20over%20beat%20or%20under%20beat%20the%20whites?%20Or%20could%20it%20be%20due%20to%20the%20folding%20of%20the%20whites%20to%20the%20yolk%20batter?%20It's%20very%20likely%20that%20I%20deflated%20the%20batter%20quite%20a%20fair%20bit%20as%20I%20kept%20folding%20and%20folding%20and%20folding%20just%20to%20get%20rid%20of%20the%20tiny%20lumps%20of%20whites%20that%20were%20trapped%20in%20the%20batter.%3C/p%3E%3Cp%3EAnyway,%20the%20cake%20still%20tasted%20good,%20although%20the%20yuzu%20flavour%20was%20not%20as%20prominent%20as%20I%20would%20have%20expected.%20The%20bits%20of%20yuzu%20rinds%20did%20enhance%20the%20taste%20though.%20I%20will%20certainly%20try%20this%20recipe%20again%20soon...as%20I%20am%20left%20with%20less%20than%20half%20a%20jar%20of%20Yuzu%20syrup!%3C/p%3E%3Cp%3EYuja%20Cha%20Chiffon%3C/p%3E%3Cp%3EIngredient%20A:%3C/p%3E%3Cp%3E(makes%20one%2018cm%20cake)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EDissolve%20yuzu%20syrup%20with%20the%20hot%20water.%20Leave%20to%20cool.%3C/p%3E%3Cp%3ESieve%20flour,%20baking%20powder%20together,%20set%20aside.%3C/p%3E%3Cp%3ESeparate%20egg%20yolks/whites%20and%20bring%20to%20room%20temperature.%20(It%20is%20easier%20to%20separate%20eggs%20when%20they%20are%20cold.)%3C/p%3E%3Cp%3EPlace%20egg%20yolks%20in%20a%20mixing%20bowl,%20add%20in%20sugar,%20and%20with%20a%20manual%20whisk,%20whisk%20till%20the%20mixture%20becomes%20very%20sticky%20and%20turn%20pale.%3C/p%3E%3Cp%3EDrizzle%20in%20the%20oil,%20whisking%20at%20the%20same%20time%20till%20the%20mixture%20is%20well%20combined.%20Repeat%20the%20same%20with%20the%20Yuzu%20mixture.%20Sieve%20over%20the%20flour%20mixture%20and%20whisk%20until%20flour%20mixture%20is%20fully%20incorporated%20into%20the%20batter.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20mixing%20bowl,%20beat%20egg%20whites%20with%20an%20electric%20mixer%20until%20mixture%20becomes%20frothy%20and%20foamy.%20Beat%20in%20the%20sugar%20in%203%20separate%20additions%20on%20high%20speed%20until%20just%20before%20stiff%20peaks%20form.%3C/p%3E%3Cp%3EAdd%20the%20beaten%20egg%20white%20into%20the%20egg%20yolk%20batter%20in%203%20separate%20additions,%20each%20time%20folding%20gently%20with%20a%20spatula%20until%20just%20blended.%3C/p%3E%3Cp%3EPour%20batter%20into%20a%2018cm%20(7%20inch)%20tube%20pan%20(do%20not%20grease%20the%20pan).%20Tap%20the%20pan%20lightly%20on%20a%20table%20top%20to%20get%20rid%20of%20any%20trapped%20air%20bubbles%20in%20the%20batter.%3C/p%3E%3Cp%3EBake%20in%20pre-heated%20oven%20at%20170%20degC%20for%2030%20~%2035mins%20or%20until%20the%20cake%20surface%20turns%20golden%20brown,%20and%20a%20skewer%20inserted%20into%20the%20centre%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20invert%20the%20pan%20immediately.%20Let%20cool%20completely%20before%20unmould.%20To%20remove%20the%20cake%20from%20the%20pan,%20run%20a%20thin-bladed%20knife%20around%20the%20inside%20of%20the%20pan%20and%20the%20center%20core.%20Release%20the%20cake%20and%20run%20the%20knife%20along%20the%20base%20of%20the%20pan%20to%20remove%20the%20cake
