%3C/p%3E%3Cp%3EThese%20roasted%20chickpeas%20happen%20to%20be%20the%20last%20reason%20I%20turned%20on%20the%20oven%20before%20I%20left%20California,%20and%20they%E2%80%99ll%20be%20the%20first%20reason%20I%20turn%20it%20on%20again%20when%20I%20get%20back.%3C/p%3E%3Cp%3EJust%20as%20Paula%20has%20always%20done%20with%20pinto%20beans,%20we%20have%20been%20soaking%20and%20boiling%20our%20own%20dried%20chickpeas%20for%20a%20while%20now%E2%80%94only%20falling%20back%20on%20the%20canned%20ones%20when%20a%20true%20Hummus%20Emergency%20strikes.%3C/p%3E%3Cp%3EEach%20time%20we%20soak%20a%20pot%20of%20the%20tiny%20dried%20garbanzos%20we%20end%20up%20with%20a%20temporary%20wealth%20of%20chickpeas%20(and%20a%20freezer-space-worthy%20chickpea%20broth,%20rich%20with%20olive%20oil,%20onion,%20and%20cilantro).%3C/p%3E%3Cp%3ESo%20what%20to%20do%20with%20too%20many%20chickpeas?%20Hummus%20or%20chana%20masala%20might%20be%20the%20obvious%20answers%E2%80%94or%20there%E2%80%99s%20always%20homemade%20baked%20falafel%20(for%20the%20ambitious)%20or%20tossing%20them%20onto%20salads%20along%20with%20tomatoes%20and%20feta%20(for%20the%20unambitious)%E2%80%94but%20I%20thought%20it%20was%20time%20I%20joined%20the%20ranks%20of%20the%20roasted-chickpea%20obsessed%20and%20tried%20my%20hand%20at%20crunchy%20roasted%20chickpeas.%3C/p%3E%3Cp%3EMost%20of%20the%20recipes%20out%20there%20for%20roasted%20chickpeas%20seem%20to%20use%20Indian%20combinations%20of%20spices%E2%80%94which%20also%20sound%20completely%20awesome,%20of%20course;%20I%20thought%20I%E2%80%99d%20attempt%20something%20a%20little%20different.%20Also,%20my%20za%E2%80%99atar%20obsession%20seems%20to%20be%20sticking%20around.%3C/p%3E%3Cp%3EZa%E2%80%99atar%20is%20a%20Middle%20Eastern%20blend%20of%20thyme,%20sumac,%20sesame,%20and%20salt.%20It%E2%80%99s%20a%20perfect%20way%20of%20perking%20up%20pita%20chips,%20popcorn,%20yogurt,%20or%20hummus,%20but%20it%E2%80%99s%20good%20for%20so%20many%20other%20things,%20too.%20(Paula%20recently%20made%20some%20za%E2%80%99atar%20crusted%20salmon%20that%20significantly%20upped%20my%20willingness%20to%20eat%20cooked%20fish%20for%20dinner%E2%80%94we%20kept%20exclaiming%20how%20delicious%20it%20was%20between%20bites!)%3C/p%3E%3Cp%3EI%20took%20it%20as%20given%20that%20the%20flavors%20of%20za%E2%80%99atar%20would%20go%20well%20with%20chickpeas,%20but%20this%20recipe%20doesn%E2%80%99t%20exactly%20call%20for%20za%E2%80%99atar%20since%20I%20left%20out%20the%20sesame%E2%80%A6%20The%20first%20time%20I%20made%20it,%20I%20had%20all%20of%20the%20ingredients%20at%20home%20(including%20fresh%20thyme!),%20but%20I%20worried%20that%20sesame%20seeds%20wouldn%E2%80%99t%20stick%20to%20the%20chickpeas%20and%20would%20simply%20create%20more%20of%20a%20mess%20without%20adding%20much%20flavor.%20(I%E2%80%99m%20curious%20about%20incorporating%20tahini%20actually,%20but%20I%E2%80%99ve%20still%20never%20tried%20it;%20let%20me%20know%20how%20it%20turns%20out%20if%20you%20do.)%3C/p%3E%3Cp%3EI%20also%20added%20a%20little%20paprika%20and%20cayenne%20to%20the%20mix,%20but%20I%20think%20the%20lemony%20sumac%20and%20aromatic%20thyme%E2%80%94accompanied%20by%20just%20a%20hint%20of%20salt%E2%80%94were%20the%20keys%20to%20the%20addictive%20flavor.%3C/p%3E%3Cp%3EAnd%20guess%20what?%20The%20chickpeas%20were%20so%20good%20that%20now%20I%E2%80%99ve%20made%20them%20several%20times%20with%20the%20EXACT%20SAME%20SEASONINGS.%20Way%20to%20branch%20out%20and%20be%20original%20and%20creative%20in%20the%20kitchen,%20I%20know%E2%80%A6%3C/p%3E%3Cp%3EI%20didn%E2%80%99t%20get%20them%20quite%20crunchy%20enough%20the%20first%20time,%20but%20it%20turns%20out%20that%20first%20drying%20out%20your%20cooked%20chickpeas%20as%20thoroughly%20as%20possible%20(using%20a%20dish%20towel%20+%20air-drying%20them%20on%20a%20baking%20sheet%20if%20time%20allows)%20will%20help%20them%20crisp%20up%20nicely.%20I%20ended%20up%20increasing%20the%20cooking%20time%20to%20a%20total%20of%20up%20to%2045%20minutes,%20too.%3C/p%3E%3Cp%3EYou%20might%20be%20boycotting%20your%20oven%20this%20summer,%20but%20I%E2%80%99d%20say%20ready%20your%20sumac%20supply%20and%20go%20out%20in%20search%20of%20fresh%20thyme:%20be%20prepared%20for%20that%20one%20afternoon%20it%20just%20happens%20to%20cool%20off%20a%20little%20outside,%20because%20these%20are%20worth%20turning%20on%20your%20oven%20for.%3C/p%3E%3Cp%3E(Paula%E2%80%99s%20genius%20addition%20to%20all%20this%20the%20last%20time%20we%20made%20it:%20scrape%20up%20the%20leftover%20chickpea%20seasonings%E2%80%94from%20the%20medium%20bowl%20or%20baking%20sheet%E2%80%94to%20swirl%20into%20some%20hummus,%20and/or%20sprinkle%20some%20of%20the%20za%E2%80%99atar%20roasted%20chickpeas%20on%20top%20of%20a%20bowl%20of%20homemade%20hummus%20to%20garnish.%20I%20might%20just%20have%20to%20serve%20them%20like%20that%20every%20time%E2%80%A6)%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EZa%E2%80%99atar%20Roasted%20Chickpeas%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Make%20sure%20t
