Zucchini Cake With Sour Cream Frosting

Ingredientes

  • 1 1/2 c. pureed zucchini (if frzn, drain well)
  • 2 1/4 c. flour
  • 1 1/4 c. sugar or possibly 3/4 c. honey
  • 1/2 c. shortening
  • 1/2 c. lowfat milk
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 2 large eggs
  • 2 1/2 c. confectioners' sugar
  • 1/3 c. lowfat sour cream
  • 1/4 c. shortening
  • 3/4 teaspoon vanilla
  • 1/8 teaspoon salt

Direcciones

  1. In large bowl, put together all ingredients.Mix on low speed till blended, then increase speed to high for 2 min. Pour into greased 9 x 13 inch pan. Bake for 30 to 35 min at 350 degrees. Cool and frost.
  2. Put together ingredients and mix well. Spread on cooled cake.
