.%20%20%20%20So,%20I%20trudged%20to%20the%20kitchen.%20%20You%20all%20know%20I%20love%20to%20cook,%20particularly%20something%20grand%20and%20delicious%20(my%20new%20favorite%20cookbook%20is%20The%20Smitten%20Kitchen%20-%20I'll%20try%20to%20write%20more%20about%20that%20later)%20-%20but%20when%20it's%20just%20the%20two%20of%20us,%20sometimes%20the%20most%20I%20feel%20like%20doing%20is%20open%20a%20box%20of%20raisin%20bran%20and%20pour%20the%20milk.%20%20Smith's%20default%20is%20a%20very%20large%20PB&J.%20%20But%20it%20was%20cold%20out%20(finally!)%20and%20something%20warm%20was%20called%20for.%3C/p%3E%3Cp%3EOh,%20the%20last%20time%20I've%20been%20to%20the%20grocery*?%20%208%20days%20ago.%20%20Which%20meant%20I%20had%20a%20pack%20of%20bacon,%20a%20dozen%20eggs%20and%20a%20bunch%20of%20frozen%20stuff.%3C/p%3E%3Cp%3EEasy%20peasy.%3C/p%3E%3Cp%3EBecause%20this%20is%20what%20I%20made:%3C/p%3E%3Cp%3EEggs...mmmm...%20bacon...%20-%20wait,%20what's%20that%20green%20stuff?%20%20Yes.%20%20Spinach.%20%20And%20under%20those%20eggs?%20%20YES%20-%20frozen%20sweet%20potato%20and%20regular%20potato%20TATER%20TOTS.%20%20Mashed%20into%20a%20hash.%3C/p%3E%3Cp%3EHere's%20what%20I%20used:%3C/p%3E%3Cp%3EHere's%20what%20I%20did:%3C/p%3E%3Cp%3ESwirled%20a%20bit%20of%20grapeseed%20oil%20into%20my%20smaller%20cast%20iron%20skillet%20*%20and%20threw%202%20strips%20of%20bacon%20in.%20%20Cooked%20it%20to%20crispy%20then%20removed%20it%20from%20the%20pan%20and%20let%20it%20drain%20on%20paper%20towels.%20Then%20I%20threw%20my%203%20cups%20of%20tots%20in%20the%20bottom%20of%20the%20skillet%20(add%20a%20bit%20more%20grapeseed%20oil%20if%20your%20bacon%20hasn't%20thrown%20off%20enough%20fat)%20and%20just%20let%20them%20sit%20there%20over%20a%20medium%20to%20low%20heat.%20%20After%20they%20defrosted,%20and%20once%20they%20started%20to%20brown,%20I%20mashed%20them%20in%20to%20the%20bottom%20of%20the%20skillet.%20%20This%20is%20when%20I%20added%20salt,%20pepper%20and%20several%20drops%20of%20Tabasco.%20%20Cook%20until%20they%20are%20brown%20on%20the%20bottom%20then%20scramble%20them%20up%20-%20which%20in%20my%20opinion%20creates%20the%20perfect%20hash%20-%20crispy%20and%20not-crispy%20at%20the%20same%20time.%3C/p%3E%3Cp%3EMeanwhile,%20I%20preheated%20my%20oven%20to%20450%20and%20swirled%20some%20more%20oil%20in%20my%20big%20big%20big%20cast%20iron%20skillet%20and%20threw%20in%20the%20remainder%20of%20my%20bacon.%20%20(Cooking%20bacon%20in%20the%20oven%20reduces%20clean%20up%20-%20I%20hate%20splatter%20because%20I'm%20lazy.)%20%20Cooked%20the%20bacon%20in%20the%20oven.%3C/p%3E%3Cp%3EIn%20my%20third%20cast%20iron%20skillet%20(who%20needs%20All%20Clad%20when%20you%20can%20get%20pre-seasoned%20Lodge%20cast%20iron%20skillets%20for%20about%20$25%20at%20the%20hardware%20store?)%20(Ok,%20I%20do%20have%20a%20couple%20of%20All%20Clad%20pans%20-%20but%20I%20swear%20to%20you%20I%20use%20my%20cast%20iron%20more%20frequently.)%20(Moving%20on.)%20swirled%20more%20grapeseed%20oil,%20dumped%20the%20cup%20of%20frozen%20spinach%20in%20and%20let%20it%20saut%C3%A9%20a%20bit%20until%20it%20became%20unfrozen.%20%20Then%20I%20made%20a%20little%20space%20right%20in%20the%20center%20and%20cracked%20in%20the%20two%20eggs.%20%20Splashed%20a%20little%20more%20Tabasco%20around%20and%20let%20the%20eggs%20sit%20until%20they%20cooked.%20%20Smith%20likes%20his%20very%20runny,%20so%20I%20took%20his%20out%20early.%20%20I%20like%20mine%20cooked%20to%20a%20slightly%20runny%20stage%20-%20so%20mine%20hung%20out.%3C/p%3E%3Cp%3EPut%20a%20layer%20of%20hash%20down%20on%20the%20plate%20and%20gently%20place%20the%20eggs/spinach%20on%20top.%20%20Once%20your%20bacon%20is%20cooked,%20you%20can%20either%20crumble%20it%20over%20the%20whole%20thing,%20or%20let%20it%20hang%20out%20on%20the%20side.%20%20I%20know%20I've%20been%20lax%20about%20posting%20-%20but%20Smith%20pointed%20out%20to%20me%20post%20greedy%20silent%20consumption%20that%20this%20is%20exactly%20the%20kind%20of%20meal%20my%20blog%20is%20about.%3C/p%3E%3Cp%3EAnyway,%20this%20kind%20of%20dinner%20should%20also%20promote%20a%20long%20and%20harmonious%20marriage%20-%20even%20if%20you%20have%20nothing%20to%20talk%20about%20once%20the%20kids%20have%20left%20the%20nest...%3C/p%3E%3Cp%3ENOTE:%3C/p%3E%3Cp%3E*%20I'm%20conflicted%20about%20blindly%20going%20to%20Whole%20Foods%20these%20days%20in%20light%20of%20this%20and%20this%20-%20I%20appreciate%20that%20he%20supports%20sustainable%20farming%20and%20small%20businesses%20-%20but%20he%20seems%20a%20little%20nuts.%20%20I've%20heard%20this%20for%20years,%20but%20I%20must%20admit%20I%20turned%20a%20blind%20eye%20because%20there%20really%20isn't%20anywhere%20else%20yet%20to%20buy%20things%20like%20grass-fed%20or%20hormone%20free%20meat%20and%20poultry%20in%20my%20neighborhood.%20%20Plus%20the%20organic%20produce%20in%20grocery%20stores%20like%20Giant%20are%20not%20of%20the%20same%20quality%20and%20are%20much%20more%20expensive%20than%20WF.%20%20Does%20the%20good%20outweigh%20the%20bad?%20...%20sigh.%20%20I%20hate%20knowing%20too%20much.%20%20This%20is%20why%20I%20hate%20the%20internet%20sometimes...%3C/p%3E%3Cp%3E*%20I%20use%20grapeseed%20oil%20because%20it%20has%20a%20lower%20flash%20point%20-%20and%20because%20bacon%20fat%20burns%20at%20the%20drop%20of%20a%20hat%20I%20believe%20(probably%20erroneously%20-%20but%20whatever)%20that%20the%20grapeseed%20oil%20prevents%20the%20bacon%20from%20burning.%20%20I%20like%20really%20crispy%20bacon,%20but%20there%20is%20a%20line%20that%20is%20sometimes%20hard%20to%20catch%20between%20bacon%20that's%20super%20crispy%20and%20burnt.%3C/p%3E){kind=link}
