.%3C/p%3E%3Cp%3ETortilla%20de%20Vegetales%3C/p%3E%3Cp%3EI%20have%20a%20confession%20to%20make,%20but%20I%E2%80%99m%20not%20sure%20how%20you%E2%80%99ll%20take%20it,%20so%20I%E2%80%99ll%20provide%20a%20little%20back%20story.%20It%20started%20on%20a%20Friday%20night%20and%20the%20conundrum%20of%20what%20to%20do%20for%20food%20for%20the%20week%20when%20we%20were%20traveling%20Saturday%20through%20Sunday%20morning%20(really,%20we%20were%20in%20Pennsylvania%20for%20less%20than%2024%20hours)%20and%20so%20Friday%20we%20I%20spent%20the%20evening%20poring%20through%20cookbooks%20and%20logging%20some%20ingredients%20into%20our%20Fresh%20Direct%20order.%3C/p%3E%3Cp%3EAs%20I%20read%20the%20list%20of%20ingredients%20from%20The%20Book%20of%20Tapas,%20Michael%20surmised%20that%20we%20were%20making%20%E2%80%9Ca%20more%20complicated%20version%20of%20a%20Western%20omelette.%E2%80%9D%20Suddenly%20warning%20bells%20sounded%20in%20my%20ear,%20urging%20me%20to%20proceed%20with%20caution.%20I%20took%20solace%20in%20the%20fact%20that%20the%20tortilla%20we%20were%20making%20was%20only%20one%20of%20two%20dishes,%20and%20the%20second%20was%20a%20longtime%20favorite:%20Catalan%20meatball%20soup.%3C/p%3E%3Cp%3EWhy%20the%20worry,%20you%20ask?%20I%E2%80%99ll%20be%20frank:%20I%20don%E2%80%99t%20like%20omelets.%3C/p%3E%3Cp%3EI%20can%E2%80%99t%20explain%20this%20particular%20phenomenon%20except%20for%20the%20fact%20that%20for%20a%20long%20time,%20%20I%20was%20rather%20fickle%20about%20eggs%20and%20about%20various%20foods%20%E2%80%9Ctouching%E2%80%9D%20each%20other.%20I%E2%80%99m%20pretty%20sure%20that%20had%20the%20option%20been%20available%20to%20me,%20I%20would%20have%20likely%20grown%20up%20happily%20using%20one%20of%20those%20three-sectioned%20plates%20well%20into%20an%20age%20when%20it%20was%20not%20at%20all%20appropriate.%20Instead,%20I%20had%20to%20make%20my%20own,%20creating%20clear%20%E2%80%9Careas%E2%80%9D%20for%20each%20food%E2%80%93because%20God%20forbid%20my%20broccoli%20even%20be%20within%20spitting%20distance%20of%20my%20spaghetti%20and%20meatballs.%20So%20the%20idea%20of%20eggs%20and%20vegetables%20all%20mangled%20together%20in%20one%20mess%20has%20never%20sit%20well%20with%20me%E2%80%93even%20though%20I%20actually%20do%20really%20like%20tortillas%20and%20to%20a%20lesser%20extent,%20frittatas.%3C/p%3E%3Cp%3ECatalan%20Meatball%20Soup%3C/p%3E%3Cp%3EMaybe%20one%20day%20I%E2%80%99ll%20get%20over%20my%20aversion%20to%20omelets,%20but%20in%20the%20meantime%20I%E2%80%99ll%20content%20myself%20with%20eating%20tortillas%E2%80%93especially%20the%20one%20above.%20A%20friend/reader%20wrote%20to%20me%20after%20we%20gave%20tortilla-making%20another%20try%20a%20few%20months%20ago%20and%20implored%20me%20to%20make%20one%20with%20onions,%20because%20they%20taste%20absolutely%20amazing%20when%20onions%20are%20involved.%20To%20be%20honest,%20I%20was%20surprised%20that%20the%20Spanish%20tortilla%20recipe%20in%20The%20Book%20of%20Tapas%20didn%E2%80%99t%20call%20for%20them,%20but%20we%20went%20along%20with%20the%20recipe%20anyway%20(as%20we%20didn%E2%80%99t%20want%20another%20hairy%20flipping%20situation%20to%20take%20place%20by%20adding%20in%20too%20many%20extra%20ingredients).%20Besides,%20a%20good%20tortilla%20pan%20isn%E2%80%99t%20very%20large%20to%20begin%20with,%20so%20real%20estate%20is%20at%20a%20premium.%3C/p%3E%3Cp%3EVegetable%20Tortilla%3C/p%3E%3Cp%3EIn%20actuality,%20though,%20you%20can%20add%20in%20quite%20a%20large%20number%20of%20ingredients%20into%20a%20tortilla%20so%20long%20as%20you%20work%20in%20batches%20and%20let%20them%20cook%20down%20sufficiently.%20In%20this%20case%20the%20vegetables%20brown%20as%20they%20release%20their%20water,%20so%20you%20get%20the%20added%20bonus%20of%20caramelized%20goodness%20that%20makes%20the%20finished%20product%20both%20sweet%20and%20savory.%20We%20feasted%20on%20the%20soup%20while%20this%20took%20place,%20Michael%20getting%20up%20every%20few%20minutes%20to%20check%20on%20the%20pan%20and%20add%20in%20more%20vegetables%20to%20the%20pan.%20The%20eggs%20were%20added%20and%20then%20left%20to%20set,%20and%20then%20with%20the%20aid%20of%20a%20nice%20large%20plate%20the%20flip%20took%20place%20over%20the%20cutting%20board,%20the%20tortilla%20then%20slipped%20back%20into%20the%20pan%20to%20finish%20on%20the%20other%20side.%3C/p%3E%3Cp%3EThis%20is%20a%20fantastic%20way%20to%20increase%20your%20vegetable%20consumption%20and%20go%20meatless;%20believe%20me,%20no%20one%20will%20miss%20the%20meat%20that%20much.%3C/p%3E%3Cp%3E%C2%A1Buen%20provecho!%3C/p%3E%3Cp%3EVegetable%20Tortilla%3C/p%3E%3Cp%3Eadapted%20from%20The%20Book%20of%20Tapas%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20crack%20open%208%20eggs%20(I%E2%80%99d%20do%20each%20individually%20in%20a%20ramekin%20just%20in%20case%20one%20is%20bad%20before%20adding%20to%20the%20main%20bowl)%20and%20whisk%20until%20frothy,%20add%20a%20healthy%20pinch%20two%20of%20salt%20and%20whisk%20some%20more.%20Set%20aside.%3C/p%3E%3Cp%3ETake%20a%2010-11%E2%80%B3%20nonstick%20pan,%20add%20the%20olive%20oil,%20and%20on%20low%20heat%20add%20all%20of%20the%20chopped%20vegetables%20save%20for%20the%20tomatoes%20in%20batches,%20letting%20them%20cook%20down%20and%20then%20pushed%20out%20to%20the%20sides%20of%20the%20pan%20as%20each%20new%20batch%20comes%20in.%20This%20will%20take%20about%2010-15%20minutes%20in%20all%20to%20do,%20and%20to%20help%20the%20process%20along%20gradually%20increase%20the%20amount%20of%20heat%20to%20about%20medium.%20When%20all%20of%20the%20vegetables%20have%20cooked%20down,%20tip%20in%20the%20egg%20mixture%20and%20let%20set%20and%20get%20a%20little%20golden%20brown.%20Be%20patient%20here%E2%80%93run%20a%20spatula%20underneath%20it%20to%20check%20it%20after%20a%20few%20minutes%20have%20elapsed%20and%20when%20you%20can%20easily%20lift%20it%20to%20check%20for%20brownness,%20it%E2%80%99s%20ready%20to%20flip.%20Cover%20the%20pan%20with%20a%20large%20plate%20over%20a%20cutting%20board%20or%20countertop,%20carefully%20(and%20fluidly)%20flip%20the%20pan%20over,%20and%20then%20slide%20the%20tortilla%20back%20into%20the%20pan,%20uncooked%20side%20down.%20Give%20it%20a%20few%20more%20minutes%20to%20set,%20and%20then%20remove%20from%20the%20pan,%20let%20cool,%20slice%20into%20wedges%20and%20either%20serve%20immediately,%20at%20room%20temperature,%20or%20chilled.%20The%20latter%20is%20delicious%20when%20tortilla%20is%20placed%20between%20two%20pieces%20of%20whole-grain%20toast.%3C/p%3E){kind=link}
