%3C/p%3E%3Cp%3ERemember%20last%20year%20when%20I%20started%20rhapsodizing%20on%20ramps%20and%20specifically%20ramp%20salsa?%20Well,%20now%20I%E2%80%99m%20wise%20enough%20to%20know%20when%20the%20little%20buggers%20are%20actually%20in%20season,%20and%20I%20can%20say%20that%20my%20nose%20has%20turned%20into%20a%20ramp-seeking%20missile:%20three%20weeks%20ago%20I%20swore%20I%20could%20smell%20them,%20but%20could%20find%20them%20to%20no%20avail,%20and%20then%20two%20Saturdays%20ago%20we%20emerged%20from%20the%20Union%20Square%20subway%20at%20the%2016th%20Street%20exit%20and%20my%20nose%20literally%20led%20my%20hand%20to%20point%20us%20to%20the%20ramp%20stand,%20even%20before%20I%20could%20focus%20my%20eyes%20on%20that%20familiar,%20rudimentary%20sign.%20I%20think%20I%20was%20still%20looking%20for%20the%20blue%20tent%20that%20they%20had%20last%20year,%20but%20the%20weather%20has%20been%20so%20gloomy%20this%20spring%20that%20it%20really%20hasn%E2%80%99t%20been%20necessary,%20and%20the%20late%20spring%20has%20made%20every%20trip%20to%20the%20market%20more%20and%20more%20worthwhile%20as%20the%20ramps%20improve%20in%20appearance%20and%20in%20size.%20(The%20price,%20happily,%20remains%20the%20same.)%20Suffice%20it%20to%20say,%20I%20spent%20$12%20on%20four%20bunches%20of%20ramps%20two%20Saturdays%20ago,%20and%20then%20I%20spent%20another%20$12%20last%20Wednesday%20when%20I%20went%20there%20on%20my%20day%20off%20(the%20first%20weekday%20market%20visit%20they%20had%20made),%20and%20despite%20knowing%20we%E2%80%99d%20be%20away%20for%20Easter%20weekend,%20I%20figured%20they%E2%80%99d%20keep%20in%20the%20fridge%20for%20a%20few%20days%E2%80%A6and%20I%20was%20right.%20We%20were%20able%20to%20take%20a%20stab%20at%20two%20versions%20of%20ramp%20salsa,%20and%20while%20both%20were%20delicious,%20one%20was%20decidedly%20more%20of%20a%20crowd-pleaser%20than%20the%20other.The%20first%20attempt%20was%20by%20me,%20and%20honestly,%20I%20can%20tell%20you%20the%20exact%20point%20where%20I%20f-ed%20up%20the%20recipe:%20I%20was%20a%20little%20too%20generous%20with%20the%20crushed%20red%20pepper%20flakes%20and%20the%20final%20product%20was%20at%20times%20so%20damn%20hot%20that%20I%E2%80%99d%20have%20to%20guzzle%20the%20last%20of%20our%20orange%20juice%20to%20regain%20feeling%20in%20my%20mouth.%20(For%20the%20record,%20it%20really%20wasn%E2%80%99t%20that%20much,%20but%20when%20you%20figure%20in%20how%20much%20raw%20ramps,%20garlic%20and%20scallions%20you%20include%20in%20the%20recipe,%20and%20even%20a%20little%20bit%20can%20pack%20a%20punch.)%3C/p%3E%3Cp%3ERamp%20Salsa,%20take%202%20(with%20the%20husband's%20mad%20knife%20skills)%3C/p%3E%3Cp%3ESo%20yesterday,%20when%20I%20was%20guiding%20Michael%20in%20the%20finer%20points%20of%20making%20ramp%20salsa%20(the%20prep%20work%20in%20exchange%20for%20me%20dropping%20off%20the%20recycling%20and%20getting%20the%20chips%20and%20chipotle%20peppers%20in%20adobo)%20I%20was%20fine%20in%20giving%20him%20a%20fairly%20heavy%20hand%20in%20adding%20the%20white%20balsamic%20vinegar%20and%20some%20salt,%20but%20refrained%20from%20adding%20any%20heat%20whatsoever.%20And%20honestly?%20It%20worked%20really%20well%E2%80%93you%20have%20so%20much%20bite%20from%20the%20ramps,%20scallions%20and%20garlic%20that%20you%20don%E2%80%99t%20need%20extra%20heat,%20and%20the%20flavors%20you%20really%20want%20to%20complement%20all%20of%20that%20is%20the%20vinegar,%20some%20salt%20and%20a%20touch%20of%20olive%20oil%20to%20give%20it%20a%20bit%20more%20depth.%3C/p%3E%3Cp%3EThis%20is%20kind%20of%20the%20perfect%20salsa%20to%20serve%20with%20spicy%20chicken%20tacos%20because%20it%20adds%20all%20of%20the%20flavor%20when%20you%20combine%20the%20two%20into%20the%20tortilla%20(or%20beany%20blankies%20as%20Tom%20Haverford%20from%20Parks%20and%20Recreation%20would%20say)%20but%20doesn%E2%80%99t%20require%20cooking%20diced%20onion%20with%20the%20chicken.%20The%20salsa%20and%20the%20chicken%20just%20fall%20together%20beautifully%20within%20the%20folds%20of%20flour%20and%20lard.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20combine%20ramps,%20garlic%20and%20scallions%20and%20mix%20well.%20Add%20in%20two%20tablespoons%20of%20vinegar,%20a%20drizzle%20of%20oil%20and%20then%20a%20healthy%20pinch%20of%20salt%20(it%20will%20dissolve)%20and%20stir%20well%20to%20combine;%20taste%20and%20add%20more%20vinegar%20and/or%20salt/oil%20to%20taste.%20Serve%20immediately%20with%20tortilla%20chips%20or%20with%20tacos%20(it%20will%20keep%20for%20a%20few%20days%20in%20the%20fridge).%3C/p%3E){kind=link}
