%3C/p%3E%3Cp%3EPolpo%20con%20Piment%C3%B3n%20(Octopus%20with%20Paprika)%3C/p%3E%3Cp%3EE%20definitely%20outdid%20herself%20with%20these%20photos.%20I%20think%20they%20really%20capture%20the%20lively%20essence%20of%20these%20little%20yummy%20critters.%20They%20actually%20look%20like%20animals%20right%20out%20of%20the%20ocean.%20The%20prep%20on%20both%20was%20very%20simple%20highlighting%20the%20sweetness%20of%20the%20crayfish%20and%20the%20chewy%20richness%20of%20the%20octopus.%20This%20was%20part%20my%20half%20of%20the%20dinner%20on%20the%20inaugural%20night%20of%20The%20Book%20of%20Tapas%20cookery.%3C/p%3E%3Cp%3EI%20was%20excited%20about%20the%20octopus.%20My%20love%20of%20squid%20has%20been%20well-documented%20and%20I%20make%20no%20favorites%20among%20the%20mollusk%20brethren.%20The%20preparation%20was%20simple:%20first%20freeze,%20then%20boil%20the%20hapless%20cephalopod%20until%20it%E2%80%99s%20good%20an%20done.%20My%20guy%20was%20too%20large%20(3.5%20lb%20instead%20of%20the%20prescribed%202.2%20lb).%20So,%20I%20cut%20him%20in%20half%20(we%20ended%20up%20with%20four%20tentacles%20instead%20of%20eight),%20and%20froze%20both%20halves:%20one%20for%20later%20and%20one%20for%20that%20night.%20The%20book%20then%20dictates%20a%2035%20minute%20bath%20in%20boiling%20water,%20testing%20frequently%20until%20it%20reaches%20the%20consistency%20you%20want.%20Mine%20took%20over%2040%20minutes%20but%20it%20was%20worth%20the%20extra%20wait%20as%20E%20is%20not%20a%20fan%20of%20overly%20chewy%20food.%20The%20octopus%20should%20be%20snipped%20into%20bite%20size%20pieces%20with%20kitchen%20shears%20when%20finally%20ready%20and%20coated%20with%20paprika%20and%20olive%20oil.%20This%20is%20better%20the%20next%20day%20and%20in%20my%20next%20attempt%20I%E2%80%99m%20going%20to%20try%20some%20long-term%20marinating%20of%20the%20cooked%20bits.%3C/p%3E%3Cp%3EOnto%20the%20crayfish!%3C/p%3E%3Cp%3ECangrejos%20de%20Rio%20al%20Estilo%20Burdeos%20(Crayfish%20in%20Wine%20and%20Tomato%20Sauce)%3C/p%3E%3Cp%3EThe%20little%20mudbugs%20got%20saut%C3%A9ed%20in%20wine%20over%20high%20heat.%20The%20book%20instructs%20the%20user%20to%20remove%20one%20the%20rear%20dorsal%20armor%20plates%20to%20get%20at%20the%20digestive%20tract,%20but%20after%20a%20few%20digs%20beneath%20the%20exoskeleton,%20I%20realized%20that%20these%20guys%20must%20have%20been%20cleaned%20already%20as%20I%20found%20no%20tract%20to%20speak%20of.%20The%20book%20is%20straight%20from%20Spain,%20maybe%20things%20are%20different%20there.%20Oh%20well,%20I%20probably%20left%20the%20fishies%20in%20the%20pan%20for%20too%20long%20because%20they%20were%20not%20as%20succulent%20as%20I%E2%80%99d%20liked%20(not%20quite%20lobstery),%20but%20when%20I%20cook%20whole%20beast%20for%20the%20first%20time%20(and%20it%20was%20my%20first%20time),%20I%20always%20tend%20towards%20caution.%20Fortune%20favors%20the%20bold,%20I%E2%80%99ve%20said%20so%20before%20,%20and%20so%20next%20time%20I%20will%20be%20a%20bit%20more%20cavalier.%20A%20strained%20fresh%20tomato%20sauce%20was%20the%20topping-%20it%20was%20thin%20and%20intense%20instead%20of%20being%20thick%20and%20chunky.%3C/p%3E%3Cp%3ESo,%20be%20not%20afraid%20of%20whole%20and%20bizarre%20foodstuffs,%20friends.%20Thanks%20to%20the%20guys%20at%20Sea%20Breeze%20Fish%20Market%20at%2044th%20and%209th%20for%20these%20great%20aqua-eats.%20I%20will%20be%20writing%20a%20post%20on%20the%20market%20itself%20on%20some%20future%20date%20for%20you,%20noble%20readers.%20Until%20then,%20friends,%20cook%20on!%3C/p%3E){kind=link}
