,%20the%20kneading%20process%20although%20rather%20therapeutic,%20will%20make%20my%20arms%20and%20shoulders%20hurt%20for%20days.%20I%20have%20been%20looking%20around%20for%20a%20replacement,%20but%20have%20no%20luck%20as%20I%20wouldn't%20spend%20more%20than%20what%20I%20paid%20for%20my%20previous%20bead%20maker.%20It%20so%20happened%20that%20I%20manage%20to%20get%20a%20new%20machine%20at%20about%20the%20same%20price%20when%20we%20were%20in%20Beijing%20last%20year.%20The%20design%20and%20functions%20is%20just%20like%20my%20previous%20machine,%20a%20very%20basic%20and%20economical%20machine%20that%20is%20affordable%20and%20reliable...well,%20at%20least%20for%20a%20couple%20of%20years.%3C/p%3E%3Cp%3EHere's%20my%20first%20loaf%20of%20bread%20for%20the%20year.%20I%20followed%20the%20tang%20zhong%20method%20and%20bread%20rose%20high%20and%20mighty.%20It%20rose%20more%20than%20an%20inch%20over%20the%20top%20of%20the%20rim%20of%20my%20pullman%20pan%20that%20it%20couldn't%20fit%20into%20my%20standard%20bread%20loaf%20air%20tight%20container.%20I%20can't%20complaint%20much%20since%20it%20is%20really%20a%20happy%20problem%20for%20me%20=)%3C/p%3E%3Cp%3EDo%20pardon%20me%20from%20bragging,%20but%20the%20loaf%20was%20very%20nicely%20baked,%20the%20crust%20colour%20was%20just%20right!%20From%20the%20picture%20above,%20I%20hope%20you%20could%20imagine%20how%20pillowy-soft%20and%20fluffy%20the%20bread%20loaf%20turn%20out.%3C/p%3E%3Cp%3E'%E6%8B%89%E4%B8%9D'%20a%20commonly%20used%20term%20to%20describe%20a%20feathery%20soft%20loaf%20of%20bread...where%20the%20crumbs%20tears%20off%20like%20strands%20of%20silk...%3C/p%3E%3Cp%3EThe%20bread%20tastes%20delicious%20even%20on%20its%20own%20as%20it%20is%20a%20sweet%20bread.%20It%20remained%20soft%20and%20light%20for%20three%20days,%20in%20fact%20the%20loaf%20was%20so%20cottony%20that%20I%20had%20problem%20cutting%20it%20into%20slices.%20It%20is%20time%20I%20get%20a%20new%20bread%20knife%20since%20I%20don't%20know%20how,%20or%20whether%20it%20is%20possible%20to%20sharpen%20a%20serrated%20knife?%3C/p%3E%3Cp%3EWhat%20better%20way%20to%20eat%20scoops%20of%20ice%20cream%20than%20to%20sandwich%20them%20between%20a%20slice%20of%20homemade%20bread!%20I%20could%20almost%20hear%20the%20sounds%20of%20bells%20jingling%20from%20the%20ice%20cream%20cart...%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3Eto%20make%20tang%20zhong:%3C/p%3E%3Cp%3E*%20Place%2025g%20bread%20flour%20in%20a%20saucepan.%20Add%20125ml%20water,%20mix%20till%20smooth,%20making%20sure%20there%20are%20no%20lumps%20of%20flour.%20Cook%20over%20medium%20to%20low%20heat,%20stirring%20constantly%20with%20a%20hand%20whisk%20to%20prevent%20it%20from%20burning.%20Within%201%20to%202%20mins,%20the%20mixture%20will%20start%20to%20thicken,%20stop%20when%20you%20see%20traces%20in%20the%20mixture%20for%20every%20stir%20you%20make%20with%20the%20hand%20whisk.%20(Take%20a%20look%20at%20the%20video%20clip%20here.%20)%20The%2065degC%20tang%20zhong%20is%20ready.%20Immediately%20transfer%20the%20hot%20tang%20zhong%20into%20a%20bowl%20and%20cover%20it%20with%20a%20cling%20wrap,%20making%20sure%20the%20cling%20wrap%20sticks%20onto%20the%20surface%20of%20the%20mixture.%20This%20is%20to%20prevent%20a%20film%20from%20forming%20on%20the%20surface.%20Leave%20to%20cool%20completely%20before%20using%20it.%3C/p%3E%3Cp%3Eto%20knead%20dough%20by%20bread%20machine:%3C/p%3E%3Cp%3E*%20Place%20water,%20egg,%20tang%20zhong%20(use%2090g),%20sugar,%20salt,%20bread%20flour,%20milk%20powder%20in%20the%20pan%20of%20the%20bread%20machine%20(according%20to%20the%20sequence%20as%20stated%20in%20the%20instruction%20manual%20of%20your%20bread%20machine).%20Make%20an%20indentation%20on%20the%20flour%20and%20add%20in%20the%20instant%20yeast.%20Select%20the%20Dough%20function%20of%20the%20bread%20machine%20and%20press%20start.%20Leave%20the%20lid%20of%20the%20machine%20open%20(this%20is%20to%20prevent%20over%20heating).%20After%20about%2010mins%20of%20kneading,%20add%20in%20the%2030g%20of%20butter.%20Let%20the%20machine%20continue%20to%20knead%20the%20dough.%20After%20the%20kneading%20cycle%20has%20stopped%20(20mins),%20Stop%20and%20Restart%20the%20machine.%20Continue%20to%20let%20the%20machine%20knead%20for%20another%2020mins.%20Remove%20dough%20from%20the%20bread%20pan.%3C/p%3E%3Cp%3E*%20Place%20dough%20in%20a%20lightly%20greased%20(use%20vegetable%20oil%20or%20butter)%20mixing%20bowl,%20cover%20with%20cling%20wrap%20or%20a%20damp%20cloth%20and%20let%20proof%20in%20room%20temperature%20(around%2028%20to%2030%20degC)%20for%20about%20one%20hour,%20or%20until%20double%20in%20bulk.%3C/p%3E%3Cp%3E*%20Remove%20the%20dough%20from%20the%20bowl%20and%20give%20a%20few%20light%20kneading%20to%20press%20out%20the%20gas%20in%20the%20dough.%20Divide%20the%20dough%20into%202%20equal%20portions.%20Roll%20each%20dough%20into%20smooth%20rounds,%20cover%20with%20a%20damp%20cloth%20or%20cling%20wrap%20and%20let%20the%20doughs%20rest%20for%2010mins.%3C/p%3E%3Cp%3E*%20On%20a%20lightly%20floured%20work%20surf
