.%3C/p%3E%3Cp%3EBut%20I%20didn't%20click%20any,%20I%20tell%20him%3C/p%3E%3Cp%3EOh,%20aren't%20you%20going%20to%20blog%20about%20it,%20he%20queries.%3C/p%3E%3Cp%3EBlog?%20About%20aloo%20gobi?%20No,%20not%20really,%20I%20tell%20him.%3C/p%3E%3Cp%3EFor%20one,%20it%20is%20the%20most%20basic%20of%20veggies.%20Everyone%20knows%20how%20to%20make%20this.%3C/p%3E%3Cp%3EAhem,%20he%20smiles.%20Everyone%20knows%20how%20to%20make%20it,%20he%20repeats.%3C/p%3E%3Cp%3EFor,%20a%20long%20time%20ago,%20aloo%20gobi%20was%20my%20nemesis.%20I'd%20never%20get%20it%20right%20-%20either%20the%20potatoes%20would%20be%20burnt%20or%20the%20gobi%20(cauliflower)%20would%20be%20mushy%20and%20over-cooked.%20But%20then,%20one%20learns!%3C/p%3E%3Cp%3ESo%20well,%20yes,%20I%20know%20that%20aloo%20gobi%20is%20one%20of%20the%20easiest%20of%20all%20veggies%20that%20one%20can%20make.%20That%20almost%20everyone%20has%20their%20own%20perfect%20way%20of%20making%20it.%20Here's%20mine.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EChopped%20coriander%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPar-boil%20the%20potatoes%20with%20a%20pinch%20of%20salt%20and%20turmeric.%20Drain%20and%20set%20aside.%3C/p%3E%3Cp%3EHeat%20oil%20and%20fry%20the%20cumin%20seeds%20until%20they%20begin%20to%20splutter.%20Add%20the%20cauliflower%20florets%20and%20the%20ginger%20and%20stir%20on%20high%20heat%20for%20about%205%20minutes.%3C/p%3E%3Cp%3EAdd%20in%20the%20par-boiled%20potatoes,%20all%20the%20dry%20spices%20and%20salt%20and%20stir%20till%20all%20the%20vegetables%20are%20evenly%20coated%20by%20the%20spices.%20Cover%20and%20cook%20on%20a%20low%20flame%20for%20a%20further%2010%20mins%20or%20until%20the%20vegetables%20are%20cooked,%20stirring%20frequently.%3C/p%3E%3Cp%3EGarnish%20with%20coriander%20and%20serve%20hot%20with%20rotis.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3EAs%20far%20as%20possible,%20avoid%20adding%20any%20water%20when%20making%20aloo%20gobhi,%20else%20the%20cauliflowers%20will%20look%20quite%20wilted.%20If%20the%20veggies%20start%20sticking%20to%20the%20bottom%20of%20the%20pan,%20just%20sprinkle%20a%20few%20drops%20of%20water.%3C/p%3E%3Cp%3EYou%20could%20also%20add%20some%20green%20peas%20or%20carrots%20to%20make%20a%20more%20colourful%20dish.%3C/p%3E%3Cp%3EI%20sometimes%20substitute%20the%20cumin%20SEEDS%20with%20kalonji%20or%20panch%20phoran%20to%20change%20the%20taste%20a%20bit.%3C/p%3E%3Cp%3EThe%20stalks%20and%20leaves%20of%20the%20cauliflower%20are%20edible%20and%20nutritious.%20If%20you%20have%20the%20time,%20combine%20these%20with%20some%20mushrooms,%20tomatoes,%20salt,%20garlic,%20cloves,%20cinnamon%20and%20bay%20leaves%20to%20make%20vegetable%20stock.%20Freeze%20the%20stock%20in%20ice%20trays%20and%20use%20it%20to%20flavour%20your%20soups%20or%20to%20cook%20pasta.%3C/p%3E%3Cp%3EThis%20work%20is%20licenced%20under%20a%20Creative%20Commons%20Licence.%3C/p%3E){kind=link}
