  • 12 ounce angel hair pasta
  • 3 Tbsp. extra virgin olive oil
  • 2 x cloves garlic, chopped
  • 1 Tbsp. minced fresh parsley
  • 1 lrg pimento or possibly red bell pepper, minced
  • 1 x poblano chile, roast, peel, seeded & minced
  • 1 x serrano chile, seeded and minced
  • 1/4 c. sliced black olives
  • 1/2 tsp freshly grnd black pepper
  • 1/2 lb small to medium shrimp, peeled, deveined, and cooked Minced fresh basil leaves freshly grated Romano or possibly Parmesan cheese

Direcciones

  1. Cook the pasta according to package directions. While it is cooking, heat the extra virgin olive oil, stir in the garlic, parsley, and pimento, and saute/fry for 3 to 4 min. Stir in the poblano and serrano chiles, olives, black pepper, and shrimp, and cook till the shrimp are hot. Drain the pasta, spoon the shrimp sauce over it, toss, and serve with minced fresh basil or possibly freshly grated Romano or possibly Parmesan cheese, if you like.
  2. SERVING SUGGESTIONS: This pasta makes a wonderful first course or possibly a great main dish served with sliced, toasted bolillos.
